It's that they are lined with the outer casing. The buns are steamed and perfectly soft. Flavor and texture was so good! I had mustard, ketchup and grilled onions on mine. They have a lot of choices, and they will make it anyway you want. I took a bite of the onion chili cheese one. It was good too! There's a lady that makes fresh bakery items. They also had an option for a tamale with chili which kinda blew my mind - I had never seen that before, so of course I had to try that. It was decent enough - I found that the chili over powered the taste of the tamale but the chili was good so no complaints. The location was sparse. It's a big enough space but most of the seating was old school-type seats with an attached desk. Didn't make a ton of sense. There were only a couple tables available. I wouldn't avoid going there again but it would have to be a time when I'm really craving a coney.
