We ordered the oysters and Hiramasa (special) for the appetizers, both were good. The mains were the star of the show, however. The lamb chops are a must. The duck confit was also lovely and the pairing with the beets + cherries was an especially unique flavor combo, however I much preferred the duck breast to the leg (which was in a fried cake form) For dessert, we opted for the hazelnut mousse which was delectable. Excellent spot in Beaver Creek for a fancy, dimly lit dinner. The service was fantastic from even before you step into the restaurant. The valet service is prompt (they even make an effort to address you by your last name), organized coat check service is available if you're going in the winter, and the servers are well trained. Splendido's may be the prettiest restaurant in the Vail Valley. I always eat here each visit but not just for the ambience. Last night, I had whole lobster stuffed with lobster meat and mashed potatoes. Groan. My date had Dover Sole. They cook the entire fish then debone it in the kitchen served in a copper pot with a light sauce and fresh vegetables. We split a lemon and Rasberry soufflé which was light and packed with flavor. Mocktails were great; oysters were fresh and awesome; halibut (or chilean sea bass - can't reminder which white fish) was delicious; dover sole is their signature dish and while it was delicious, I didn't think it warranted the $85 pricetag; spanish octopus was very salty; the lemon souffle tasted very "eggy" and not very lemony so was disappointed. My boyfriend surprised me with a dinner reservation here and I was so impressed! He knows that I love a fine dining experience and Splendido did not disappoint. The restaurant is beautiful and has gorgeous views of the mountains. Everyone was friendly and our server, Auggie, was super patient with us! To start, we ordered a couple glasses of Pinot Noir and the foie gras and asparagus appetizers. Both were extremely delicious. The foie gras was really well rounded in acid-fat balance. The acidity and sweetness levels of the sauce really rounded out the whole dish. The asparagus was also delicious. The sauce was the winner for me. I think it was a Bernaise sauce and it was extremely tasty when paired with the asparagus and mushrooms. For dinner, I ordered the dover sole and my boyfriend ordered the tenderloin. My mind was blown. Everything was so perfect. My fish was cooked perfectly and the flavor was so unique. Buttery and mildly sweet! I loved it. The tenderloin was also cooked to perfection and seasoned so well. Both were melt in your mouth satisfaction. I love that in fine dining restaurants they never place salt and pepper shakers on the table. The chef is expected to prepare each dish to the level of wonderful that you should never need to alter any aspect of your plate. Obviously, the service was fantastic, and they even treated us to a little anniversary dessert! Got a chance to revisit Splendido this season. Again, ambience and service were stellar. I just wish my food was as memorable....it was good, but nothing was amazing. Buckle up folks because this is going to be extensive! Service: Our main server was Laurie and she was absolutely delightful! She was extremely attentive and witty. Laurie made sure to clarify any items on the menu that were slightly confusing and was quick to make superb suggestions for courses. Additionally, there were multiple other servers who ensured our cups were never empty and our empty plates were picked up quickly. Food: Oh. My. Gosh. The food was so so good. The party I was in had 4 people and we each made sure to order something different so that were would be able to try the most possible options on the menu. For appetizers, we ordered Steak Tar Tar, this apricot burrata dish, and the carrot. All were exceptionally flavorful. We were also served bread with tomato purée and this amazing honey butter which I could not recommend more. Our entrees were also very yummy. Our table ordered the Dover Sole, which was this incredible white fish all the way from Norway. We also ordered the Millers Chicken that included this delish mushroom and truffle flavoring. Next, the beef tenderloin with the onion tart was like butter. It was amazing. Finally, the pork chop had a unique flavor and was perfectly accented with a sort of lime sauce. We ended with the best desserts. The lemon soufflé and strawberry soufflé were light and sweet. The rhubarb dessert was so yummy and unique. I would definitely recommend this restaurant. This place was fantastic. Best lamb I have ever had in my life honestly. Also extra brownie points for the bread. It comes with a salted whipped butter and a butternut squash spread. I could've just eaten the bread and left happy. The wine selection was really good, the ambience was great, and the people at my table thought that the chocolate soufflé was the best one they've ever had. Overall great experience. Splendido is hands down my favorite restaurant in Beaver Creek and in the Vail area. It's been a long standard of my families and the one spot that we take any guests visiting Colorado to. With it's setting amongst the evergreens and aspens and the menu designed to showcase Colorado's finest, there's nothing to dislike about this restaurant. Their wine list is extensive and the general manager is a well versed sommelier and can help guide you in choosing the right wine based on your palate or preference. The menu has something for everyone but is focused on showing off what's great in Colorado. The elk, lamb rack, dover sole, and foie gras are the highlights. Finally, it's all about their soufflés. I highly recommend opting for one of their tasty soufflés for dessert. They are airy, fluffy, and delicious and my mouth is watering as I'm typing this. The flavors change seasonally so you'll have to see what suits your desires at the time, but after having tried a variety over the years, I haven't found one I haven't loved. The original owners had named the restaurant after their favorite place in Portofino, Italy. Brian grew up in a typical American family without an appreciation for fine cuisine, but while at business school took some restaurant jobs. One restaurant lead to another, after which he grew a passion for fine food. He eventually enrolled in the esteemed Culinary Institute of America and took some jobs on the East Coast, had an offer in San Francisco before eventually falling in love with Colorado. He worked for a while at Sweet Basil before landing at Splendido and now runs Splendido with a great team. Before I get to the food I want to give thanks to Brian and his team for cooking for the first responders during Covid and donating meals to the Community Market a local non profit. If you are trying to choose between Grouse Mountain Grill and Splendido, choose Splendido. The quality of the food and the elegant simplicity of the presentation is hands down better by far. Grouse has a beautiful setting but as I will write in a review later, the food is overly rich, poorly executed and stuck somewhere in the 1980s. The only other restaurants in the area in Splendido's class is Mirabelle and Sweet Basil for food and Matsuhisa for a different Japanese experience. We started with a dozen Kusshi oysters ($48). We then sampled the the Ahi Tuna appetizer with tomato, jalapeños, red onions, calamata olive and cilantro ($23). We were looking forward to trying the Colorado Lamb, ($59) and it did not disappoint, served with vadouvan-carrot, kale, quinoa, yogurt. As with all the dishes the accompaniments are subtle, not overpowering, allowing for the quality of the star of the show, in this case the great lamb, to shine through. Our server Kevin recommended the Dover Sole ($55) and it was a good choice as well. A bottle of Domaine Raymond Usseglio & Fils Chateauneuf du Pape 2018 ($120) was a fine accompaniment for the variety of food. To summarize, if you're on a short vacation in Beaver Creek/Vail be sure to stop at Splendido. Other worthwhile stops as mentioned are Mirabelle, Matsushia and Sweet Basil in Vail. Beano's Cabin is an interesting experience to do one time, the food is good, but not at the level of the others mentioned. read more

The best restaurant on the mountain! We had the oysters, steak tartar, dover sole, and the bone-in steak special. The steak was cooked perfectly (medium rare) and cut like butter! The dover sole was tender and light with a creamy butter sauce. The oysters tasted fresh as did the tartar. I had a glass of the malbec which was good. This was for sure the most I've ever spent on a meal, but it is definitely worth it for a special occasion. We had a fantastic experience in the yurt. Our group of 12 easily doubled the minimum amount required to book the yurt. Our waiter was wonderful - helpful and fun, we really enjoyed his recommendations. I wish I had taken a picture of the menu, I wanted to try absolutely everything. We tried the beet, salad, and seafood tower apps, all magical. I ordered the New Zealand venison which is what everyone should order; I tried a lot of friends' dishes and I thought it was the best. The margarita was my favorite cocktail. All the desserts were fantastic. The more adventurously you order, the bigger the payoff. The salmon and chicken plates were definitely good but not the thing to try here. We were treated to this fine dining experience courtesy of our generous friends who are definitely well-heeled and have expensive taste. What happened to wonderful Splendido? We were able to go twice this year, once in February and again in April. We always book it the towards end of our stay as the ultimate dining experience in Beaver Creek. My wife's favorite dish is the Dover Sole, which was once prepared with flair tableside. We noticed that the price has increased to $82, so we thought that the presentation might be more impressive. Sadly, it came in a smaller portion, already prepared, to the table. We were surprised by the change. I had the duck, which included a tasty duck breast with an unimpressive molded leg confit. The dessert souffles were smaller and dryer too, with only a tiny pot of sauce to eliminate the dryness. We asked whether the chef had changed, because the meal seemed so different from years past. We love the ambiance, and hope that Splendido will take these comments and make some changes. We hope the restaurant returns to its former glory. God bless, Marc read more

Went there with friends tonight. Food medicore at best and service was terrible. Waited over 1 hour for our first course appetizers to arrive. Asked to see the manager (Billy) who basically did nothing to explain how 3 tables around us who arrived after us were already on their main courses. He was useless and did not even have the courtesy to offer any accommodation. 30 mins later our mains finally came - brought to 1 of the 4 of us, the other 3 came 10 mins later. Food was cold - must have been sitting in the Kitchen. There are so many great restaurants in the Vail Valley. This is NOT one of them. Avoid it like the plague. read more

I give the food 4-5 stars if you order the lamb or sirloin but the service was about 2 stars since it took over an hour to get our entrees with no good explanation since it wasn't even that busy. The scallop and truffle appetizer special was tasty but over priced. The lamb entree was hearty and delicious. The sirloin I sampled was also excellent. The bread basket came with a honey butter that was unique and melted in your mouth. Unfortunately the service was really spotty and slow. We had reservations for five people at 8:30 on Friday night. After waiting an hour for our entrees we asked what was taking so long and the waiters response was, "they are clearing the board". This made absolutely no sense whatsoever. The ambiance and decor are fancy and nice but the live musician was singing out of tune along with kids and drunk people so that got kinda old really fast since we had to wait so long for our food. I want to give this place a higher rating but based on our overall experience I cannot. Come for the food but be prepared to wait for a very LONG time. If you want to kill time by having alcohol then be prepared to spend at least $20 on average for a drink. read more
