The premium beef is between the lean and normal beef in terms of fat to meat ratio. It's well marbled. They ran out of normal beef tongue so we had to get the premium. Pricey but delicious and definitely our favorite. Although I've never had bad beef tongue before. Overall, everything was fresh, containers were labeled, and service was quick. The only issue I've had over the years was one of the older guys behind the counter charging us for something much more expensive than what we actually asked for, and we had to drive all the way back to get a refund. Not sure what the deal was since we ran into him when getting the refund and he seemed annoyed rather than apologetic lol. But! Aside from that, everyone's great.
