I ordered the pho gai, which is lighter and cleaner than the typical Vietnamese beef pho. The broth has a slightly fermented, deeply umami flavor, probably from fish sauce, along with lemongrass, chicken broth, chicken breast, and ginger. Perfect when you're stuck with a cold. It was packaged really well with chili oil, jalapeños, celery, lime, and the noodles on the side. There isn't a ton of chicken if you're looking for high protein, but I didn't care. It was so good and soothing. Nothing like sweating over a bowl of herbal soup while sick. I also ordered the Lao sausage, which has a great blend of aromatics, especially lemongrass. It comes with a sauce I'm not totally familiar with, but it's bright and limey, likely fish-sauce based, with something like charred pepper or tomato that almost reminds me of a Mexican salsa.
