I remember trying the chicken-style seitan and several other things from the menu and being genuinely surprised by how good everything was. Not "good for vegan food." Just good food. What I remember most is that Watercourse challenged an assumption I walked in with. I didn't leave there suddenly becoming vegan, but I did leave thinking, "Okay, there's something to this." And all these years later, I still remember that meal and find myself wanting to go back and see what they're doing now.
