From the moment you walk in, the space feels clean, modern, and inviting--perfect for a relaxed but elevated dining experience. We started with the seaweed salad, which was light, fresh, and full of bright flavor. It set the tone for the rest of the meal. For rolls, we tried the spicy tuna, shrimp tempura, and yellowtail. Each one was exceptionally well-balanced and fresh. The spicy tuna roll stood out with a great crunch from the cucumber, while the others were equally delicious and thoughtfully prepared. The real highlights, though, were the nigiri. The toro, salmon, and hamachi were outstanding--clean, rich, and incredibly fresh. Revising my review to 1 star - 2/3/26 We really wanted to love Sushi Mori and had been regulars shortly after they opened, but communication issues ultimately pushed us away. For months, we had discussed with Chef Young wanting to do an omakase on my birthday, which is also Valentine's Day. He had told us that omakase service would be available by February, so we organized our plans around that assurance. Then, just 11 days before Valentine's Day, while my husband went to pick up a chirashi bowl that I had ordered, he was told he could not serve omakase that day because it would be "too busy" and other customers might leave if food took too long. A busy Valentine's Day is hardly a surprise - if this had been a concern, it should have been communicated far earlier. We don't think either Young or Liyan understands the gravity of their actions. Valentine's is one thing, but this is my birthday too. It is incredibly hard to secure a spot on Valentine's Day at many restaurants, and for options outside of Colorado Springs (like Denver), I would have to try to snag a reservation a month or more in advance. By waiting until the last minute to cancel omakase after months of planning, Sushi Mori really dropped the ball and ruined my birthday. When we called to cancel our reservation that same day, the response we received from Liyan was a dismissive, "yaaa sooorry, we're going to be busy that day," which made it clear that prioritizing high turnover mattered more than honoring the experience we were promised. I know we've mentioned omakase at least once to Liyan, but she acted as if we'd never brought it up. I am incredibly sad to even have to write this, especially because Liyan had been so warm and kind to me in person during our past visits. I truly thought we were building a positive relationship with the owners, but this situation really hurt. Knowing that this year will be another one where my birthday isn't celebrated on Valentine's Day... because, as always, "stuff comes up" - made the whole experience even sadder. To add to the disappointment, our most recent takeout order felt noticeably stingy. The fish portions in the chirashi, which are already modest compared to other spots that serve substantially more, were even smaller than usual, and we were given Kikkoman packets instead of the house made soy sauce. It made us feel like we were being treated as lesser customers simply for not dining in. It is also disheartening to see that while Liyan or Young respond promptly to positive reviews on Google, they ignore nearly every review rated three stars and below, instead relying on what appear to be impersonal, AI generated responses to express gratitude to others. This makes the choice to use polished, impersonal phrases like "warms our hearts" and "grow and shine brighter" feel hollow - especially when a regular's detailed concerns are left unaddressed. A simple, human note would have meant far more than these automated sounding platitudes. It's truly a shame because I believe they serve the best sushi in Colorado Springs - I haven't felt the need to travel to Denver for Japanese food since they opened. However, even the best food can't make up for a complete lack of care. Unfortunately, we no longer feel valued as customers and will not be returning. Update - 2/9/26 A warning for others: If you visit and find yourself being called "cute," their "favorite customer," or being offered personal gestures like a cup of tea from her personal tea stash when they run out of what's on the menu, please take it with a grain of salt. Looking back, what I thought was a genuine connection now feels like calculated hospitality. They are warm when it's convenient, but that warmth disappears the second you have a genuine concern or need them to honor their word. Was going to the Asian market & found this restaurant right next-door. Very good food. It is the best Japanese food I have had here so far. Tea was very good as well as the service. It was an early lunch and the place was quiet. Chicken Katsu was quite dry & tough. Other issue was I did not get correct change and then was asked if I wanted any change back from a $50 when the bill was less than $40. It's unfortunate that this place is trying to be an authentic Japanese experience, yet with a western financial mentality. There is no tipping in Japan because they pay their employees enough they do not need to rely on tips. For this reason alone, I may not return. You should be able to give the customers exact change back. I was shortchanged by .05. It may not seem like a lot, however, multiply that by all customers and it is a substantial amount. Hands down some of the freshest fish I've had in town. The quality of the bluefin tuna was outstanding, especially the otoro, which literally melted in my mouth. Every piece of nigiri was clean, buttery, and perfectly cut. The way they present their temaki hand rolls is very unique for the area and tasted incredible. I had the spicy scallop, spicy tuna, and spicy salmon, and all three were superb. Honestly, I didn't even get a photo because they looked (and tasted) too good to wait. Presentation was beautiful (the gold boat alone is a flex), the restaurant itself was spotless, and the service was attentive without being overbearing. Wowwwwww. This place is a 6/5 stars! The service was a bit slow, which I can't fault them for since they literally opened 2 weeks ago. However, the food was incredibly delicious, and I will 100% be coming back with my partner to try more of their rolls and the boat! I don't see a lot of people do sushi boats in general, so I'm excited to see how it tastes (but from peeking at other people's tables, it looks great). - Takoyaki: It was a good combination and balance of crispy on the outside and moist on the inside. There was a pretty good ratio of octopus to dough, which is pretty rare for anywhere. My partner said it was the best takoyaki he's had. I personally wish there were more bonito flakes and a little less prevalent ginger taste, but those are personal tastes more than anything lol. - Dragon roll: I feel like I very infrequently find truly "unique" rolls that have new combos. Maybe this is partially on me for only recently getting into eel lol. However! Everything really balanced out in this roll and was delicious. The eel was very light, and the sauce complemented it well. I feel like some people overdo it, and they did not. - Mixed tempura: I'm not the biggest tempura fan, but I've been craving real tempura, not the weird flakey shit that other places have in Colorado Springs. I was incredibly happy to have real tempura for once, and it truly hits the spot. The partner kept raving about how fluffy it was. - Free tuna sample: Chef(?) Young was incredibly kind and asked if we liked tuna, to which we happily said yes. He offered us a sample while he was prepping fish, with a side of premium salt. I thiiink it was fatty tuna, and boy howdy. That thing was creamy and instantly melted in your mouth. He was right about the salt and wasabi complementing each other, cuz that was arguably the best bite of sashimi I've ever had. As someone who's been thoroughly disappointed by the food scene in Colorado, this place is a breath of fresh air, and I wish them all the success in the future. I did a takeout order during my lunch since I work close by. I wanted to give it a quick try before sitting down for a full dinner. The owner greeted me at the front and was very attentive to all the people, asking what they liked and if they needed anything else, making sure they were happy. She offered me a seat and water while I looked over the menu. I ended up going with a tuna temaki, the Colorado roll, a Hawaiian roll, and a spicy cucumber salad. She had told me to make sure I eat the temaki first. It's like French fries where if you wait till you get home, they aren't as good. I am very picky, and only have 1 other place I would recommend, but this has definitely earned a spot as a absolute recommendation. The food is amazing, rice is not dry, loved the freshness of the cucumber salad as it's not absolutely soggy. The cucumbers have a nice crunch! The rolls are not small either, I wish I had a bigger stomach to finish them. The atmosphere is gorgeous, with gentle music playing and beautiful seating and decor. I feel this would make for a lovely dinner date. The owner told me they just received their liquor license so from what I saw, they had sake, soju, and several beer choices. My wife had the Teriyaki Chicken and my son and I had the Spicy Tuna Tempura rolls. The tuna is super fresh and once in your mouth it melts and then the explosion of flavors hit you. I was in my happy place! The Teriyaki Chicken is amazing with the rice and the veggies. We also had a tray of Tempura veggies, amazing as well. Leann was our server and she was amazing. She had a huge smile in her face the whole time. Once she took care of her customers she came back to our table and interacted with us. Once she found out it was our son's first time trying Japanese food she had a great conversation with him. The place is very chill with soothing music in the background. I've been wanting to try this place out and decided to stop by for a quick lunch and I'm so glad I did! Wonderful experience from walking in to leaving! We came in and were seated immediately and were told sushi would be 45 minutes because of a full house so we put our orders in right away. The sodas were all "less than", lightly watered down and filled with ice. Miso soup was $4 and the already small bowl came one-quarter full, maybe 3 small pieces of tofu. Solid garlic edamame, not too powerful, really good garlic butter. The chicken and rice bowl was so bad that we had a couple bites and left it all there. After 90 minutes of waiting and our sushi being nowhere near ready we had to leave. The manager (owner?) apologized and told us never to come on any weekends because it's too busy for them, said this happens every weekend, and charged us full price for the bad food and drinks, which was pretty expensive. The ENTIRE time, they kept seating more people, and telling them the wait time will be 45 minutes to an hour for sushi. Notes to management: Tell guests the wait time BEFORE seating, and don't say 45 minutes if it's really over an hour and a half. Instead of telling people to never come in on weekends, either staff appropriately or turn people away if you can't handle their business. read more
