    Salmon Skin Rolls

    Was going to the Asian market & found this restaurant right next-door. Very good food. It is the best Japanese food I have had here so far. Tea was very good as well as the service. It was an early lunch and the place was quiet. Chicken Katsu was quite dry & tough. Other issue was I did not get correct change and then was asked if I wanted any change back from a $50 when the bill was less than $40. It's unfortunate that this place is trying to be an authentic Japanese experience, yet with a western financial mentality. There is no tipping in Japan because they pay their employees enough they do not need to rely on tips. For this reason alone, I may not return. You should be able to give the customers exact change back. I was shortchanged by .05. It may not seem like a lot, however, multiply that by all customers and it is a substantial amount. Shame on corporate America.

    Hands down some of the freshest fish I've had in town. The quality of the bluefin tuna was outstanding, especially the otoro, which literally melted in my mouth. Every piece of nigiri was clean, buttery, and perfectly cut. The way they present their temaki hand rolls is very unique for the area and tasted incredible. I had the spicy scallop, spicy tuna, and spicy salmon, and all three were superb. Honestly, I didn't even get a photo because they looked (and tasted) too good to wait. Presentation was beautiful (the gold boat alone is a flex), the restaurant itself was spotless, and the service was attentive without being overbearing. If you care about top-tier fish and proper sushi, this place is a must.

    I ordered takeout and enjoyed the sushi & miso soup. I do wish they included some more soy sauce in the takeout order so if you enjoy your sushi with soy sauce make sure to ask for extra! I also ordered a "house salad" expecting it to be a ginger salad, so again, make sure to specify.

    Wowwwwww. This place is a 6/5 stars! The service was a bit slow, which I can't fault them for since they literally opened 2 weeks ago. However, the food was incredibly delicious, and I will 100% be coming back with my partner to try more of their rolls and the boat! I don't see a lot of people do sushi boats in general, so I'm excited to see how it tastes (but from peeking at other people's tables, it looks great). - Takoyaki: It was a good combination and balance of crispy on the outside and moist on the inside. There was a pretty good ratio of octopus to dough, which is pretty rare for anywhere. My partner said it was the best takoyaki he's had. I personally wish there were more bonito flakes and a little less prevalent ginger taste, but those are personal tastes more than anything lol. - Dragon roll: I feel like I very infrequently find truly "unique" rolls that have new combos. Maybe this is partially on me for only recently getting into eel lol. However! Everything really balanced out in this roll and was delicious. The eel was very light, and the sauce complemented it well. I feel like some people overdo it, and they did not. - Mixed tempura: I'm not the biggest tempura fan, but I've been craving real tempura, not the weird flakey shit that other places have in Colorado Springs. I was incredibly happy to have real tempura for once, and it truly hits the spot. The partner kept raving about how fluffy it was. - Free tuna sample: Chef(?) Young was incredibly kind and asked if we liked tuna, to which we happily said yes. He offered us a sample while he was prepping fish, with a side of premium salt. I thiiink it was fatty tuna, and boy howdy. That thing was creamy and instantly melted in your mouth. He was right about the salt and wasabi complementing each other, cuz that was arguably the best bite of sashimi I've ever had. As someone who's been thoroughly disappointed by the food scene in Colorado, this place is a breath of fresh air, and I wish them all the success in the future. My partner and I hope to bring many friends here soon.

    Soft opening, most menu items were available Hamachi nigiri - fresh and portions correct. Sushi rice was better than other places Sunomono - more on the citrusy side. Add a little shoyu and good to go Tonkatsu - pork katsu a little dry. Will try the chicken next time Miso soup- normal Shrimp tempura app - good portion and hit the spot Bento Box teri chicken with cali roll - I like a little char and was good. Overall will be back

    I am Japanese and was pleasantly surprised with fish quality. I had not found a decent Japanese restaurant in Colorado Springs, but I think I finally have a place to go when I am craving for some good sashimi.

    First off AMAZING service while sitting down by the owner herself. Our friends from Colorado Springs were bragging about how good this place is, we're from Vegas so a lot of good food can be hard to beat! The cleanliness and ambiance of the place is GORGEOUS. For the menu for the quality you are paying for it is not fishy amazing tasting fish. We tried a few different rolls, the edamame, miso soup & salad, nigiri and sashimi. If you want to try anything on this menu I know it is great! Overall amazing experience! I could drive another 12 hours to try this place again!

    We wanted to try a newly opened restaurant for our sushi date. Just happened to look over and see Sushi Mori while driving past headed to a different sushi restaurant. What a great choice we made to turn around and come here. Great service. Great food. Plenty of room to spread out and enjoy with family and friends. Only change I will make is to have the seaweed salad served alone-not on a bed of greens.

    I did a takeout order during my lunch since I work close by. I wanted to give it a quick try before sitting down for a full dinner. The owner greeted me at the front and was very attentive to all the people, asking what they liked and if they needed anything else, making sure they were happy. She offered me a seat and water while I looked over the menu. I ended up going with a tuna temaki, the Colorado roll, a Hawaiian roll, and a spicy cucumber salad. She had told me to make sure I eat the temaki first. It's like French fries where if you wait till you get home, they aren't as good. I am very picky, and only have 1 other place I would recommend, but this has definitely earned a spot as a absolute recommendation. The food is amazing, rice is not dry, loved the freshness of the cucumber salad as it's not absolutely soggy. The cucumbers have a nice crunch! The rolls are not small either, I wish I had a bigger stomach to finish them. The atmosphere is gorgeous, with gentle music playing and beautiful seating and decor. I feel this would make for a lovely dinner date. The owner told me they just received their liquor license so from what I saw, they had sake, soju, and several beer choices. I cannot wait to come back for dinner!

Dozo has mastered consistency. I ordered the Kill Bill roll, spicy hamachi roll, and tuna tataki nigiri. The hamachi roll had just the right amount of kick. Every bite reminded me why this place stays in my rotation. If you're debating where to go for sushi in the Springs, don't. Dozo is it.

Fine but I wouldn't get it again. The highlight sushi wise was the sushi and sashimi combo. It came with a salad and 8 pieces of nigiri (tuna, salmon, escolar, and shrimp) and 9 pieces of sashimi (tuna, salmon, escolar) as well as a tuna roll. The sashimi slices were large and all delicious and the order was only $37. Of the basic rolls we had the unagi roll and the spicy hamachi roll. I could barely tell what kind of fish was in either as there was so little meat. Of the special rolls we had the kill bill and the Russian roulette. Both rolls were great and the Russian roulette was a super fun one as one of the pieces is very spicy. Great sushi for a great price that I would definitely come back to.

The ambiance is rad. You definitely feel like you're no longer in The Springs, which is great in a town where chain restaurants win "best of" awards. Service was a mixed bag. The friendliest people were the host and the runners. While our server/bartender just seemed aloof and too cool. Timing of courses and all that was good, aside from the temaki taco which came out much later. I almost thought they forgot. A strange service thing... bringing a new check every time you order something new. I've not experienced this before. Subconsciously I didn't love it. I was thinking about how the bill was stacking up vs just enjoying the time. The food... Happy hour all day Monday and 3:30-5:30 all the other days. Ordered two sushi rolls. A spicy tuna one and a tempura shrimp one. When they came out in my mind I was like "What?!" Very amateur hour looking. They weren't rolled tightly and were small in diameter. The spicy tuna, wasn't. You wouldn't have known there was shrimp in the shrimp roll other than a little, teeny tiny crispy shrimp tail sticking out. The pork belly bao buns were exceptionally boring. Kind of a played out app. These weren't executed well. Where the pork was crisp that was enjoyable but otherwise just a fatty-gummy mouth feel with no spice, heat or anything else to give the bun life. The temaki taco, specifically the recommended hot crab. The ingredients are wrapped in a sesame seed soy paper. It looked like a mini uncooked flauta. Just tasted like a unique tortilla filled with warm rice. My wife enjoyed her cocktail. I have no desire to go back. I don't feel like spending $25-45 for another sushi roll to see if their bougie rolls are any better.
