Hunger and anticipation was building. Went full out and got the Texas Trinity Platter. Pound of brisket, pound of ribs, 2 sausages, 2 sides, 2 hungry stomaches. A beautiful red sheen of a slight glaze on the ribs with flecks of black pepper that I could look at all day honestly. A sweet glaze that I was definitely the best rib I've had this trip. Not overpowering and chew of smoke with each bite. Such a wonderful brisket too. Spots like these always make me double take if I'm not in Texas. A wonderful pitch black bark absorbs all the smoke.
