The pork is still a little dry, and they're both available in various combinations of sandwiches or on top of nachos with brightly-colored cheese. And then there's the barbecue sundae. A layer of potato salad, a layer of pork or chicken, another layer of potato salad, topped with bacon pits, barbecue sauce, and a couple of jalapenos. Not for the picky eaters who don't like their food to touch, there is enough separation to discern the flavors of the meat from the flavors of the potato salad, though there's a little concern with pairing the hot meats with cold potato salad. Whatever - it looks bonkers (multiple people asked me about it), and the convenience of being able to eat it while walking around beats having to deal with a styrofoam container. It's really creative, and my only wish is that they would go further - maybe swap out the bottom layer of potato salad for something like baked beans, for example. Either way, this is the type of creativity that you expect to find in a proper food truck.
