Wings were cold and rubbery. Not what I would expect from a chicken place. This place continues to disappoint.

I was excited when Sybergs moved into the old Joe's Crab Shack space, because it's always nice to have another restaurant choice here in O'Fallon. My family has eaten here a few times and, while I can't say they've ever knocked my socks off, the food is good enough, I guess. I was here one night recently with a large group after a play rehearsal. I had a craving for potato skins, but when I ordered them I was told they were out. I was disappointed, but I found something else to order. I didn't think anything of it, because we were there rather late and potato skins are a popular appetizer. Restaurants do run out of things. The next night, my husband and I decided to go out for dinner, and we selected Syberg's. I was still craving skins and not every restaurant has them on their menu. This time we were there for an early dinner, so I assumed I'd have a better chance at getting them this time. Nope. Still out. I mentioned to the waiter that they had been out of them the previous night as well, and he told me that they've actually been out for months. Maybe they should lead with that. I prefer when waiters disclose before I even order if there is anything on the menu that they don't actually serve. He explained that the problem was their supplier, presumably because of Covid. The potato boats come to them frozen, and I guess they just cook them and add the toppings. Since potato skins are cheap and easy to make, it really surprised me that they're frozen. It also really annoyed me that I hadn't been told the previous night that they weren't serving them. How hard is it to simply tell customers the truth? We wouldn't have chosen Sybergs for a second night if they had been more forthcoming the first night. I guess I just answered my own question. Even though I was extremely disappointed and more than a little annoyed, we didn't leave. Both nights I simply ordered something else. I likely won't ever go back, but they did get my money two nights in a row, which they wouldn't have had they been honest the first night. Of course, if they HAD been honest, I might not have come back the second night, but I would still be a customer, which as of now, I never will be again, so they are definitely being short-sighted by being deceptive. After months of having to constantly tell guests you're "out" of skins, why not start making them in-house or take them off the menu altogether? They're really not that difficult or expensive to make. For that matter, you can buy Friday's skins frozen at the grocery store. Even that would be better than telling people you're "out" anytime anyone orders them. Or how about this? Either put a piece of non-translucent tape over the item on the menus, or tell people before they order what items you aren't actually serving, and be honest about the fact that it is an ongoing issue, not that you "ran out." You know darn well that you don't serve them at all anymore, at least for the foreseeable future, so be honest. Honesty could have kept you from permanently losing our entire family as customers. read more

The "shark chunks" were the best. I wouldn't care if they were $100 for for that little dish of shark meat chunks, I would still buy them. Now that they don't have them, I will never eat there again. read more

Hadn't been in a while so felt like an update was due, since we did go back today for lunch. We had just seen the Joker (excellent!) so accept that I may be writing this in the midst of an existential mental crisis. Today was the third visit, seems we average one a year? Maybe that actually says something. Because I strive to be accurate and informative, I have to take back a star now with some more exposure (and no Christie sightings...LOL). I also think the ATT&T "It's okay" commercial series has affected my appreciation of things. So I had a Philly Beef and wife had Turkey Club. There is no specific one thing to actually "complain" about, the service is fine, the place is clean, the food is okay. I guess that is what I have to conclude about Sybergs, the food has no "edge", the presentation lacks polish...it's just Okay. I have not yet had a meal that was remarkable in any way. What might I do differently? Maybe ditch the cafeteria crinkle cuts and go to a hand cut style fry (feels/looks more mature), my sandwich could have used some fresh grilled onion and peppers, not little chunks that got lost both in visual and flavor. read more

Ambiance: lively and loud; casual, sports bar. Food: Shark bites (cajun style) 4 stars, really good but a bit salty. Firm bite size pieces of shark served with a side of fruit salad. Toasted ravioli - 5 stars- Soooooo good! Nicely toasted, not burnt or hard and accompanied by a tomato bolognese ragu. Shark tacos - 4 stars- really fresh and tasty. Seafood gumbo - 2 stars - basically a Manhattan (clam) chowder. Drinks: Bourbon punch -4 stars, on the sweet side but could easily be remedied by adding extra bourbon. read more

burnt chicken tenders, tasteless onion rings and chicken so dry you would think it was grilled for hours.

We were always driving by this place and finally stopped to give it a try. I heard that it has the same owners as the Twisted Tree. I'm not sure that's right, but I was anxious to try the onion rings! I was happily surprised that they were indeed very similar to the Twisted Trees onion rings, so maybe they do have the same owners. They were delicious. Our server was very friendly and we got our food pretty quickly. Everything was cooked well and I enjoyed the hamburger. This place kind of has a sports bar feel to it. A great place to kick back and have some good food in a nice atmosphere. We will for sure go back some time. I'm glad we finally tried this place. read more

Not bad. We tried the shark and couldn't acquire the charcoal taste; it was more of a burnt taste. They allowed us to exchange the shark for pizza (thank you)! It was our first time having fried ravioli. Not bad but would suggest seasoning the meat so they are not dry tasting. read more

It's been a while since I have been here and I should probably not tried new things but this was definitely disappointing. I wanted soup and all they had was gumbo. It was not really gumbo. Our food was good but nothing I would order again I had the special- Pasta Con Broccoli- it was good but the cream sauce didn't have alot of flavor. I had to remind the waiter about my salad & I got it after my main meal. My husband had the Helen Rubin said it was ok. Our waiter had hair that covered his eyes so we couldn't see him. I'm not a huge fan of Syberg's at all. I was excited to try it out, but I was super disappointed in the food and drinks. The meal I ordered was remarkably average. The Cajun Shrimp Pasta was over salted. When I looked at the drink menu, I was surprised to see a Manhattan listed. I was skeptical to try it, but I figured that if they had it on the menu they must know how to make it correctly. Unfortunately, I was handed a glass of Whiskey with a cherry. I couldn't taste the sweet vermouth at all. Overall, I really wouldn't go back unless I was invited to a family dinner. Here's a riddle for you. Two black guys walk into this particular restaurant in O'Fallon, IL and get seated at a table. There are not a lot of other people sitting in there, but I will say, most of the patrons are white And they all seem to be eating and being served by the young white staffers. How long does it take for a server to acknowledge us sitting at our table and ask if we want something to drink? Answer: After 15 mins of sitting there, we get up and walk out. if your black and you go there and get waited on, then you're lucky. I'm from Virginia and I will never again go into that place again. Coming to Sybergs is a (guilty) pleasure! I had a hankering for their wings with the famous Syberg's mustard based sauce. We got seated right away and one server took drink orders before Kennedy was able to assist us. We arrived before 4pm and took advantage of the $10.99 lunch special. Six wings and salad. Salad is a generous size and not the typical saucer sized plate. Hubby also got a bowl of gumbo. Was really good but he added loads of pepper to spice it up. Glad we got there before four when the place started to fill up pretty quickly. read more

First a little background. We visited on a Thursday evening about 7:00p and the place was packed. Greeted at the door we were quickly seated in the dining room and our server was right there. Throughout the meal our server was back and forth with other tables and never missed a beat with us. Empty glass refilled questions answered excellent service. I had the seafood salad as good as ever on a warm summer evening and my wife had a chicken wrap which she said was good but large enough to feed a family of four. All in all our visit was enjoyable the price was right and we will be back. read more

We went for a birthday dinner on Saturday late afternoon. Everything was busy and we understood we needed to wait. They said our wait time was 25 mins. We were fine with that. But as we watched people come in and get seated immediately my 6 yr old grandson even said "Why are they getting seated and not us?" As we reached an hour of wait time my 2-year-old granddaughter was getting very antsy. BUT we thought it'd be soon. A guy who came in AFTER us complained that they also had been there an hour. The host looked and told him they had a table clearing in the back, it was half high chairs and the other part lower. BUT when they went to seat them FIRST and BEFORE us who had been waiting long... they sat them at a table right by the door that we all thought we were getting. The reason we thought that was because the 2 hosts were talking and we heard them but for whatever reason they changed their minds. I am disabled and can't sit in the high chairs which is why we thought that's where they were going to sit us. As soon as that happened my daughter saw that and was PISSED, to say the least, and was like "We're leaving, we'll go somewhere else". So, we did and had our birthday WAY later than we wanted. Sadly, this experience left a bad taste in my mouth, and my family won't be returning to this establishment. read more

I was meeting a friend before the movie premier. Very quick service as I seated myself. I order the Blue Moon on tap, half price appetizers from 4 to 6. I got the spicy Bourbon chicken tenders, tasty and spicy, made me have a second beer. When my friend arrived he ordered the Shark bites, I was told it is what Syberg's is famous for. They were tasty. Visited Syberg's on Sunday. Definitely not the best visit I've had in the three times I've been there. I took my children this time and we were able to play Yahtzee while waiting for our meals. That was the only real good part of the visit. We started with the shark bites. These were not good at all. We ordered the soup of the day, which was apparently no good, so we waited for the gumbo, which also was apparently no good. After waiting for a new batch we got somewhat crunchy carrots in gumbo = no thanks... I ordered the daily special: Fried chicken. This was absolutely the worst fried chicken I've ever had. It was bland, overcooked and dry... I ate one piece, took home the rest, and threw it away the next day. My youngest kid got the personal pizza with my other child's tartar sauce dumped on it. They offered to make another pizza but I couldn't stand waiting for another and eating in front of my kid. The service was ok... had to ask twice for a refill though, and the manager did offer to comp us a desert. I won't be back. Not only does this place have a so-so beer selection, the menu is kind of gross. read more

Walked in Sunday afternoon to find a slightly less than quarter full dining room and watched the staff wonder around for nearly 15 minutes before I was approached by one employee who was wondering aimlessly to be told that another waitress would be over shortly, while she went back to wondering around aimlessly. Luckily our waitress showed up less than two minutes later, as I was about to just head for the door. Luckily her friendly attitude saved me from leaving, she took our order and promptly returned with our drinks and the complimentary bread. For my entrée, I went with the Open-faced beef sandwich with white cheddar mac & cheese. The beer sandwich was good and served with a side of au jus, however it was the white cheddar Mac & Cheese that was the real star, yes it was a slight upcharge but it was well worth it. I highly recommend ordering this if given the chance, it was creamy and just downright delicious. Portion size was fair and my meal ended up being very filling. Overall prices were fair and the menu selection was very diverse, which did make my decision slightly difficult. I would likely return however if they are as disorganized on my next visit I can cross Syberg's off my list! read more

Why is it that restaurants feel no need to cut lettuce up for their salads? You're not supposed to have to use a KNIFE on your salad, but at most places, you do. Raw veggies and cold under cooked fries made for a SUCK ASS meal. I ordered my veggies COOKED and my fries well done. The kitchen couldn't manage either plus they coated them in some hideous over salted seasoning that was horrible. The Ranch dressing was sickeningly sweet as was the mayo which I am fairly certain was Miracle Whip which is sweet salad dressing that I HATE. We won't be back. It sucked. The waitress never checked on us so it seemed a waste to send back the raw veggies and cold undercooked fries when she deigned to bring the check. Second time I've been here and I have to say I'm not seeing this as a stand out place. I had the pretzel bites with beer cheese. The cheese was bland and the pretzels mediocre. The fish and chips were okay but the smell of paint over powered the smell of my food. I think the wall next to our table had just been painted and by the time I figured out what the cause was I was ready to go. And one final note. I think they had our waitress waiting too many tables or something because she was bussing tables and everything else to the point when she brought our food to our table our glasses were empty and when she went to walk away we then had to ask for refills. So disappointed for the $50 we spent (before tip). We won't be back. read more

Probably won't be back. This resturant has never really stood out as anything amazing to me and a friend and I went there for a 3rd time last week hoping them had a nice patio. The patio was cute and the waitress was nice but the food took longer then it should have for a chicken sandwich and a club. They forgot our mayo, my chicken was burnt with no flavor, my friends club came on a ciabatta roll which she had to take off because the bottom was soaked and falling apart.
