Walked in here because we had a coupon that we received from another winery. Unfortunately it was no longer valid but we decided to do it anyway. $15 for...I think it was like 6 or 7 tastings or something?? I forgot since it was a couple weeks ago. They were smaller pours than typical but it was nice to try a lot of wines and def worth the money! Glena, the owner, gave us all the attention since there was no one else in there, but it was like we were having our own private wine experience! She was so sweet and nice and explained every wine. She told us all about the photos on the wall and how the creation of her wine labels were done in an environmentally conscious manner. So happy we stumbled in! read more

I popped into the Symbiosis tasting room & asked if there was availability for a tasting for me & 3 friends. The winemaker, Glenna, said yes but she did have a reservation an hour later. She wanted to be sure she could provide good service to her reservation & we acknowledged that we would not deter from her guests with a reservation. She set us up with an intimate & lovely tasting experience. Not only is she a gracious host & knowledgeable vintner, she makes AMAZING wine! We tasted her entire collection & we loved each & every one! She really knows her stuff. Her tasting room is warm & inviting and tastefully designed. We all agreed that it was our favorite tasting room, favorite tasting experience, and favorite wine!! Her reservation came in early but it was totally fine! She provided GREAT service to both of our parties & was incredibly attentive. Another fun fact is that Glenna (the winemaker) is a microbiologist (hence the name Symbiosis) and she has artwork in her tasting room that is not only beautiful but an homage to her field. My boyfriend and I had dinner reservations at Il Cortile 15 minutes before Sybiosis closed. We took a chance by popping our heads in to see if we could catch a glass of wine or a tasting before our reservation. Glenna, the owner, was extremely welcoming, knowledgeable and the wine was fantastic! She took us through a little speed tasting, which I wish we had had more time to do because it was so eye opening and enjoyable. Our reservation ended up running behind and we got to have a wonderful, full experience. We took home two bottles of wine - one which we paired with dinner and both of the wine jams. The tasting room and winery are located in downtown Paso Robles. The owner/winemaker Glenna is warm and hospitable, and eager to share both her wines and wealth of information with you. She sources grapes from carefully selected vineyard sites, and seeks out vineyards that she feels have unique characteristics to produce a range of wine styles. All the wines are tasty, but there are two stand-out wines on Glenna's menu -- a very pretty Tempranillo that gives aromas and flavors of berries, tobacco, leather and herbs. Her Torrontes is a rarity in our area -- and is a must-try! Unique and singular, this dry white wine is highly aromatic with sweet white stone fruit and floral tones, and a prolonged crisp finish. My wife and I ended up here while on a random life adventure. This small winery is run by one totally awesome woman who does everything herself. Glenna is great to talk to and has so much passion for what she does. I'm not a wine expert, but I think her Syrah is definitely worth a stop by. The owner/winemaker/host Glenna dubbed "the smartest person in PR" by another wine steward from a Tasting Room in the area, will not only pour you many wines but will expand your horizons. While we were unable to go into the tasting room, i was so impressed by the owner and the service she provided. My friend and I were visiting Paso Robles for the first time to sample the area wines. She said if we were willing to take a chance without trying the wine first, she would deliver to our hotel when we arrived. We decided to try a Torrontés and a Nebbiolo. Your tone was astounding, and that's coming from someone who was in an incredibly good mood at the time after a ribeye, and a glass of cab so good I had to call around and find more of it for that night. The person I was with even looked surprised at how you sounded. I'm glad you can at least own up to the fact that it was you? But that question can't possibly be a rarity when you're in a tourist destination, around the corner from a hotel. My boyfriend and i visited Paso Robles on a wine excursion. I was a bit hesitant to visit at first, due to the pictures I saw online. I thought it would be drab and uninteresting. I was incredibly wrong. It's actually quite a zen, very welcoming atmosphere, what with the calming blue and green tones. There's a sense of personality to the place; decorations on the tree, interesting photographs in the wall, etc. The owner, Glena, was so kind and knowledgeable. She makes her own wines in house and has something even the most modest of wine tasters can enjoy. The icing on the cake: we got to taste so many of delicious wines for a very reasonable price! We stopped by this tasting room for the sold out Autumn Wine Stroll (it was our check in tasting room). The food pairing and wine was great and they were very accommodating even though they were busy. Blink on 101 and you might miss Paso Robles. California's "oldest watering place," a reference to its hot springs and mud baths, has become quite upscale in the last 10 years, but Paso hasn't cut loose from its easygoing wine and cattle country charm. Lucky for me, one fine afternoon last summer a friend and I walked into Symbiosis' elegant yet relaxed tasting room near 12th & Spring. Glenna Thompson, owner/winemaker, sat us down at the bar and took the wheel of our 2-hour wine tasting initiation. Educated wine lovers we are not. My Argentine boyfriend is no newbie to good wine, but my own appreciation was significantly lacking. Glenna introduced us to a marvelous selection of astonishing wines, all born and raised on the dazzling spring green and golden summer hills of San Luis Obispo county; each one harvested, pressed, fermented and aged with care and discipline in her lab and cellar. Every bottle of wine has it own story: what type of soil it comes from, how it grew in the sun, how it was loved and cared for, with just the right amount of water and hopefully no rain just before harvest. Each bottle is a story about care, patience, nurturing, and our Creator's grace. Each and every one can be an epiphany or a betrayal. We marveled at the oak barrels where distinctive wine was incubating. Symbiosis uses only French and Hungarian oak barrels. I had no idea of the complexity of the process whereby the tannins in the oak cask bring about certain chemical changes which add to the complexity of the wine. Glenna lends her years of experience and technical knowledge to every stage of the process. A wine-tasting flunky, I was completely untutored in the many facets of its creation, not to mention the sizes and shapes of wine glasses. I was happy to finally get a clue! The quality and totality of the wines we tasted was astonishing. Rarely have I tasted such delicate whites and rich, full-bodied reds. Trained noses call it "structure" -- a somewhat ambiguous term that implies a harmony of fruit, alcohol, acidity, and tannins. I can't spill out a mouthful of sophisticated terms invoking earthy to sweet, or dry to complex aromas, but the word brilliant works for me. From crisp and fruity to smoky, intense flavors, especially the reds with their lovely velvety finish... absolutely brilliant wines. Glenna took us from 0 - 60 in a couple of well-spent hours tasting, savouring, really learning about wine. Perhaps my lack of knowledge was a positive factor; I had no expectations. Definitely a hidden gem in the heart of downtown Paso. My girlfriend and I found this awesome little winery tasting room because we were heading home from BottleRock in Napa back home to San Diego and didn't want the trip to end and wanted more exceptional wines so we stopped in Paso. We didn't arrive until 6 pm and most of the tasting rooms were closed or about to close but Symbiosis was open until 8 pm so we immediately jumped in an Uber and got dropped off here and what a treat! Glenna the winemaker does everything herself from start to finish which is really cool and impressive and you can taste her hard work and passion in each pour. She is very informative and fun to talk to as well and more people ended up coming in as the night went on and she was more than happy let people in even as 8 pm approached. We loved the Syrah, the Rose, the Tempranillo and especially the Torrontes which is very rare to get in the States I was told. We left with a couple bottles as well and you can't beat the price for tasting like 7-8 wines for $5!! Love this place can't wait to go back! read more
