We ended up at La Posada Mexican Grill in Madras, Oregon... and this is one of those spots that doesn't try to impress you from the outside... but the food absolutely does. I ordered a carne asada taco and their three crispy bean tacos that they're known for. The carne asada had that real flavor to it, not over-seasoned... just simple and done right and the tortillas... perfect. And those crispy bean tacos... I get why they're known for them. Crispy, flavorful, and just the right ratio of filling to topping. And the salsa bar... this is where you can tell if a place is serious. While it looks simple in the photo, it honestly deserves a review all on its own. Multiple salsas, all different, all fresh... pickled carrots (one of my favorites), and of course, radishes. But the kicker... what really put it over the top for me and sold me on coming back someday were the roasted chiles and grilled onions on the side. That alone tells you everything you need to know about how good this place really is. And I'll say this, because it proves itself over and over again... do not judge a Mexican restaurant by the outside of the building. Ever.
