I'm vegan but my wife isn't, so she was excited to have a food truck with a good birria that I could also eat at. They have a vegan burrito option, it's super tasty and very filling. Its so huge, and I usually saved a little for later and it was good even cold. Refried beans and rice with veggies, avocado and some wonderful salsas! You HAVE to try the orange hot sauce, muy calienté! My wife was overjoyed with the queso birria tacos. She tends to be disappointed when she tries this out because she always says she makes better at home, but she said she didn't hold a candle to Pelayos' birria. She loved it so much that she would save the cosume to add to a Ramen bowl for lunch the next day. Her only suggestion is to make the tacos crisper.
