What I do know is that the only other place I've tasted it this good was Mexico. It's incredibly rich, savory, fatty, toothsome, and browned, with a deep flavor I can only describe as the equivalent of "wok hei", or, "breath of the wok" - the Cantonese way to describe the taste of the skillful, perfect cooking method itself.
