We were hungry when we got there, and they were already kind of busy so we forgot to take pictures. Sorry about that. By the familiar camaraderie the patrons had with the order taker, it was easy to tell that they have a large and loyal following. The atmosphere, of course being a food truck / bus, was tight and hurried. Yes, the bus was converted into long bench seating on two sides along the windows, with the order window and kitchen at the front of the bus. Everybody takes turns in a single file up to the order window--turning sideways to allow the patron before you to move past, so that you can move forward. When It was finally our turn at the menu board and ordering window, the first thing I noticed is that the drink selection is very limited. I tried to ask a couple of questions; the order taker was friendly but impatient, and treated me like I should already know the answer--so I just took my chances. I ordered a breakfast burrito with extra eggs and no potatoes, as most of these types of places serve a breakfast burrito that is more like a potato burrito. The guy asked me how many extra eggs; honestly, I never answered that question, whoops. I also ordered the ranchero steak and some churros. We then took the nearest seat on the bench, and I can say that the dine-in situation is not comfortable at all, but we were hungry enough to endure. When we got the food, I was relieved to see that there was adequate egg in my burrito--but disappointed by the unremarkable sausage, and the heavily diluted eggs. The steak ranchero was tough, but the meat tasted okay. The sauce that smothered it seemed to be watered down tomato paste. The only redeeming part of the dish was the warm and tasty tortillas. I expected some above average churros; remembering the delicious authentic vendor churros I have gotten in Baja California, Just south of the customs border. I think the ones at Jack in the box are better than the ones I got from this truck. So, the food was just okay. In my opinion, it wasn't horrible, but it wasn't worth the money. Tried this establishment for lunch during a week day and ordered a torta with carne asada. Very good and had the flavor I expected without even adding extra sauce. Meat was good. There is a salsa bar to fill up containers if you get it to go. Friendly and fast. I will come back. read more

This seems to be the go-to destination for Mexican food in all of Rigby, which makes me sad for that city because....yikes. They've got the divey thing going, which I often take as a sign of a hidden treasure restaurant, but unfortunately that is not the case here. It's just kind of dirty. As far as food goes, it is a poor approximation of one of my favorite cuisines. They do offer a large menu, but this means that our group of about 15 ordered many different things, all of which were mediocre to straight up bad. My husband and I arrived a little late, and while everyone else said they received their orders quickly, after 45 minutes we started to think we'd been forgotten. Our molcajete did eventually arrive, nearing an hour's wait. We had the choice of flour or corn tortillas and went with corn (very dry). The sauce was like runny, flavorless tomato salsa, where it is usually a tangy tomatillo base. The chicken was breast meat, and not particularly tender, but the steak was truly awful: super overcooked and tough. The refried beans and rice were both cold and bland. Not impressed. It was empty which should have been a warning. We spent $34 (including a$6 tip). I got a chicken chimichanga but it must have been all dark/thigh meat . I didn't see any white meat. Horchata was room temp, had to add lots of ice and it got watered down. Hubby ordered pork carnitas and it was ok. Onions and peppers were not sautéed enough (they were too crunchy). I didn't finish my drink so asked for a cup to go. They wanted to charge me 50 cents. I know, it's not much money, and they do have a sign posted, but really?!? I just spent $34. And if I had said it was to go you would have given me a paper cup. Also not impressed that the little girl who took our order/waited on us was playing with a fake nail which fell on the floor and then she picked it up and pushed it in her finger and THEN served us our food. My fiancé and I weren't expecting much from the outside, but when we walked in it felt like I was right back at an authentic Mexican Restaurant in my home town of San Diego. The young girl that took our order was really nice and super cute! My fiancé and I were served super quickly and both the cook and the cashier kept asking if everything was good and if we needed anything else. We both got different pork dishes and they were both delicious! We ate it all in one sitting. We also got the churros and they were super yummy!! We were also the only ones in the restaurant and we kept commenting that it almost felt like we were in a hallmark movie because of the Christmas Decor, lack of people, and how cozy the place felt. read more

This food is authentic Mexican and delicious. It is also inexpensive for what you get. You walk up and place your order and pay and they bring it out to you. The staff was super cheerful and friendly. I would give 5 stars but the bathroom was not clean at all. And not just from people using it that day. Nothing authentic about the food here. I hope there are better options for Mexican food nearby!! Ordered carneasada fries and have never been so disappointed. The menu is overwhelming. Saw the crinkle cut fries and the disappointment started to set in. I kept taking bites hoping it would get better... but it didnt. I'm not sure if the recipes have been altered to please the taste buds of Idahoans?? But it was no bueno. Would not return. This is their third location that I know of. They have two others in Rexburg, a taco bus and a small restaurant like this one. GOOD authentic tasting Mexican food. So far I've only ate at their locations twice, but both times have been great. I had pork fajitas - very good. Talking with friends, this location has been fairly well packed since it opened about two weeks ago. We went on a Thursday night and it wasn't packed. Our order was taken quickly and I'll bet we had our food served to us in under 7 minutes. Very glad that something good was put in this location. We'll be eating here regularly. read more

I am gluten free, and when I asked if something was gluten free she would roll her eyes at me and be in a huff to give an answer. Great food! Portions are definitely small for the price. (A comment I rarely make at restaurants since we aren't big eaters) Service was good but slow, like a fast food scene but with sit down nice restaurant times. But that means everything was hot and fresh! The red and green hot sauces are great. The chips and salsa you pay extra for, the chips were off.. half seemed stale and half seemed fresh, pretty sure we got a mix of old and new but the new were great. Oddly, the salsa was not spicy at all and I'm pretty sure they forgot the peppers on accident or they don't add any kind of peppers to their salsa, which is odd. It was just onions, tomatoes, cilantro, and tomatoes sauce and juice.. no peppers.. We will go again! Definitely beats driving into Rexburg or Idaho Falls so it's great that Rigby has a decent little Mexican food place. read more

Pretty good for small Rigby. When we went it it was packed no where to sit. By the time we ordered our food though few seats opened up. Service was nice friendly and easy. They were on top of getting those tables wiped down. Food time! Chips and salsa.. meh!! I'd say skip on these. The salsa is not my thing. Super chunky then the rest really runny. And pretty hot. I got 2 cheese enchiladas and they were pretty good. Came with beans and rice. My enchilada sauce was a little different then what I was use to but still good. Beans and rice great! Even came with little sour cream! Overall pretty good place! And if I came back in this area I'd go again. Mostly because the food was good but the prices!!! Wow!!! $5.00 for my plate of food. What happened to this place. I know the same family is still running it, I believe it is the brother. But he has sure cheapened the quality of everything. Including customer service. I would come here at least twice a week. Usually for the breakfast burritos and the street tacos and chip an salsa. Everything was on point. Pretty darn good Mexican food. We love the al Pastor chimichangas and tacos in particular. The only negative is that it takes forever to get your food. We called in our order at 5:45pm this last Thursday night, was told it would be 25 minutes before it was ready for pickup. My husband got there at 6:15pm and then sat for another 25 minutes before they finally had it done. But the place is always packed, so I guess that is the issue. Highly recommended though. read more

I had being a customer for over 5 years. i went yesterday for dinner and the cashier got my order wrong, then to fix it she told me i had to pay the difference on the food and i say why? is not my fault and she said yes i agree 100%, but you still need to pay the difference, and i asked foe the owner and i got a mexican lady all pissed off and talking crap about me, because apparently as a paying customer i mean nothing to her ans she claim to be the owner , i said where the owner?, she said the her aunt sold her the place, once again she was worse than the cashier. with a attitude and NOT a customer service. This is the best Mexican food in the area. First found this nice place in Rexburg where the atmosphere is better than Rigby, but food is the same. Rigby is great for take-out orders if you like great food. A screaming kid in a large family is usually the case inside and that is why this place is great. Families love it and expect just that. I love to see big families able to come and afford great food. Quality is very good. My favorite is bacon wrapped shrimp or shrimp Monterey. You'll end up very pleased with the food and efficient staff who I imagine works over 60 hours a week. So tip them well. They really appreciate it! read more
