Overall, great authentic homey taste and friendly customer service. Located in a corner dirt road parking lot with three food trucks parked there. Has a tented area with tables right outside provided for us to dine at but was infested with large mosquitoes so we quickly ate and left. All the items tastes great and not overly salty and the tacos are not overly greasy. We ordered tacos with many different meat and they all tastes great. Asada, langua, tripa, etc. I especially find the texture of the tripa (beef fried intestines) interesting. I've had tripa from many taco trucks but none of them made it fried like they do here. Interesting texture and savory flavor. Definitely would do a stop by here again if in route for a lunch stop. The only thing is, the complimentary stir fry onion and green pepper was very spicy and too oily for me to handle, but I'm sure others wouldn't mind.

All I can say is WOW. My husband and I were traveling from Reno to San Diego and we stopped in Bishop for a pit stop. I'm sooooo glad we stopped here because this is one of the best taco spots I've ever been too. It's was really cold outside so when we did ordered, the guy taking orders gave us a warm drink that I'm assuming is Atole. It was so delicious and that coconut flavor was *chef's kiss*. So I ordered the Quesabirria Combo #5 and 2 extra suadero tacos. Absolutely delicious. I loved the crispy the quesabirria was. It was packed with so much flavorful meat and cheese! I wished I had consommé with it. Definitely gotta ask for it next time. Also, I thought the combo plate came with rice and beans, but I got double beans instead. Not sure if maybe they had ran out of rice for the night. The suadero tacos are my absolute favorite taco meat to order so I was excited to see it on the menu. And of course, adding avocado salsa and lime juice is a must. The avocado salsa had a great kick of heat to it. Not too spicy, just right and the provide a half lime. My husband ordered an Al pastor burrito. That was good also! The only thing was that it was wrapped so loosely that I had to rewrap it. And again, there wasn't rice in the burrito and I definitely felt that it would've made the burrito better with it. This place also provides a seating area with a tent overhead and a fire pit for cold nights. I'm definitely coming back here every time we pass through Bishop. Great place for Mexican food!

The avocado salsa was phenomenal - excellent taste and texture with a perfect kick of spicy. I had the pastor and the flavors were also amazing. According to the owners son, the recipes been in the family for many decades. On yelp, you'll see many comments on how good the food is, it's very important you listen to them and try this place out!

Tremendous, authentic food. We had the taco combos. Fish for me and al pastor, barbacoa, carnitas, and carne asada for my spouse. We wanted to sit by the river, and the cook gave us two of his own chairs so we could hang out there. We will be back for sure!

Haven't had Mexican food out in the past couple months but this spot just brought me back. The authentic flavors of Guadalajara brought back good memories! The food truck shares parking in a large unpaved lot with a couple other trucks. My girlfriend and I spotted it easily from the street and were thrilled to see there was not a line formed when we pulled in. We ordered quick as other travelers were quickly pulling-in also eager to order. The food is ready fast!!! Its beautifully plates, nice portions and features a savory-dense line up of ingredients. The sprinkled cilantro y cebolla, the queso over the beans, and in the aqua Fresca. i had some simple shavings (all details i admired) I loved the salsas rojo/verdes to top our plates immensely. It had a lingering spicy zest that made me savor every bite of my tacos. All meat across our birria pollo and asada were tender, juicy, and each being gorgeously seasoned. To finish, we shared a slice of homemade flan. It was a Creamy masterpiece with soft glazing and gentle texture. After long days in the sun at Tahoe the past few days- this meal was a replenishing treat. I'd highly recommend if you're fine eating outside or grabbing your bites to go. The chefs/staffs are phenomenal, diligent and friendly!

This spot has been a long time staple for me as I often travel through Bishop. Such a staple that me and the lady decided to have them cater our wedding and they absolutely hit the target. 170 guests, in a camp ground, and the whole squad showed up ready to rock. Every single person I spoke with said that the food and tacos were some of the best they've ever had. Coming from a big group of SoCal people that often get very good Mexican food, I'd say that's top tier. Thanks for making our special day even more special! Don't forget to try the Flan!

They are so nice here. And that's just the start of your experience at the "yellow truck" -- THEN you dig into the tacos you've just been handed and are immediately transported to a higher plane of existence, all while remaining firmly seated on planet earth (in Bishop, right next to some kind of casino and also a motel and gas station, i guess). Our favorite of the tacos we ordered was the brisket and the pastor, but the carnitas was also worthy of ordering if that's your thing. DON'T FORGET TO PUT SOME OF THE AVOCADO SALSA ON YOUR TACO! Strawberry aquas frescas was perfect. I WILL BE BACK! 5/5 for service and food.

Such an amazing place!! If you ever go to Bishop, you have to stop by and eat here. Highly recommend the Cabeza and Tripa! They also have a place where you can wash your hands!

I've seen this place in reviews looking for food before in bishop after a backpacking trip to Mt Russell when the typical pizza shop had a 2hr wait. Decided to stop by actually looking for the Vietnamese place and discovered this at of the food trucks in a shared lot. The tacos was the only one setup when I arrived so it got my business. Owners are super friendly. Ended up picking up my typical innards: Lengua, Cabeza, Tripas, Bucher. Lengua and Cabeza were absolutely amazing. Stewed so long it was so full of collagen it was so soft so tasty so good! Tripas were a bit over fried but held is crunch even after being the 3rd one to try. Cut at my preferred size too which is larger. Buche was a good texture but could've had more flavor. Happy with the amount of meat they give you. Priced at $3/taco higher than LA street tacos but acceptable. They automatically give you grilled onions, lime slices, chilis on the side. Very solid spot with about 3 long tables setup for seating. Would definitely be an option if stopping in Bishop for food

best tacos in bishop! the truck is located in a parking lot and we were welcomed with really friendly service and a free sample of their champurrado which was delicious. i tried the al pastor, carne asada, carnitas, and buche tacos and thought all of them were tasty. every plate comes with some grilled onions and jalapeños. and their salsa has a good kick to it. they offer two long tables of outdoor seating under a tent. we loved it and came back two nights into a row after a day of climbing.

I'm guilty of only eating at McD's or Schat's Bakkery when passing through Bishop, but don't be like me and miss out on the local food like this taco truck! My street taco standard is set to LA and this place is up to par! Food: cant go wrong with any of the options once you choose the meat you like. I recommend Cabeza and Al Pastor! Service: the truck was only manned by one guy (the owner) on Sunday when we went. He was so sweet and hardworking. He went out of his way to bring us our food instead of just calling it from the pickup window. And he gave us free flan for dessert. Such a kind and generous soul. If you're just eating in Bishop for a quick road-trip convenient bite, stop by this place. It might not be as fast as McD's, but it's still convenient and you're supporting local!

They did have a dinner rush but still wasn't overwhelmingly busy feeling. The food did take a bit on the longer side but I promise it is worth the wait. We had the ribeye aguachile and quesabirria tacos. The only suggestion I have is the quesabirrias to be made with a different brand of tortillas if it's not their own. They're a bit thicker and once crisped they can have a tug bite on them. Wish the aguachile ribeye had a side of something to justify the price as it doesn't come with rice, beans or anything else. Besides that definitely recommend and will come back.

Very good and the right amount of food! The chips were good except for the salsa it needed a little bit more zip for me, but that is okay! This place has character and would be a great place to have a lot of friends and family to hang out with for dinner! Plus, it was nice and enjoyable for a Wednesday night and the waitress was kind and had my food out to me as soon as I ordered! So all is good so next time I'm driving through Bishop I'll stop for some really good street tacos!! Thank you! Julie
