The Bison Restaurant offers a cozy, inviting atmosphere and a menu focused on hearty, well-executed meats. My recent visit left me with mixed feelings--while the food was generally good, there were a few disappointments, particularly in service.
I ordered the bison short rib, which was the highlight of my meal: rich, flavorful, and perfectly cooked. However, the pasta that came with it was not up to par. Although I usually enjoy al dente pasta, this was undercooked, bland, and overly chewy.
My friend's Angus beef burger was excellent--juicy, soft, and flavorful, with fries that were crispy and delicious.

Service was friendly, but a bit slow and less attentive than I would expect at this price point. What stood out most was when my server asked how I liked my dish. I told them I didn't love the pasta, but there was no acknowledgment or offer to address my feedback. While I wasn't expecting a full replacement, a gesture or even a simple apology would have shown more care for the guest experience. This lack of response was disappointing and did not meet the standard I'd expect from a restaurant of this reputation.
Bottom line:
The Bison Restaurant excels at quality meats and solid sides, but both the service and some menu items--like the pasta--could be improved. I would consider returning, but hope to see a more proactive approach to guest feedback and a bit more consistency in the experience. read more
