Far from amazing...I am sure there are amazing places in the surrounding areas but within fantasy springs along with other restaurants the bistro hits the spot for all fine dining and cuisine along with drinks. Talk about class and superb service! The attire can range from casual to business in many ways like the types of options on the menu from seafood to meat! Highly impressed and would go there again to try and venture off to other delicious meals. I'm honestly shocked it took me this long to discover this place. How a restaurant this good has been here for 15 years without me knowing about it is beyond me. I ordered the 8 oz filet mignon with a baked potato and asparagus, and it was excellent. Perfectly cooked, flavorful, and exactly what you want from a proper steakhouse experience. My friend had the lamb chops and oysters Rockefeller and couldn't stop talking about how good both were. That alone says a lot. The ambiance is polished but comfortable, and the service was attentive without being overbearing. Even the small details stood out. They filter their water, and you can actually taste the difference, which is rare and says something about how much they care about the overall experience. As a frequent yelper, I try to give my honest opinion. This will not be an exception. I have been wanting to try this place for quite some time. This is a definite One and DONE. It is best to make a reservation. I did go the week prior and it was a 2 hour wait. This time I had a reservation.. no wait.. the hostess was very nice and friendly. Ambience: dark, nice table settings. I would not get overly dressed up but there is a dress code they made my father-in-law take off his hat. It is overlooking the rock yard, which was very loud because there was a concert going on. There was a table across from us that were obviously highly intoxicated and I believe should've been cut off. Loud and obnoxious. Service: Hostess 5/5 The rest 3/5 We waited more than a few minutes for even water. People walking around not paying us any attention...For a restaurant that was not at all packed I would expect more. I guess they noticed me looking around because then I was asked if I wanted water and bread was brought out hot and in a paper bag. Not bad very soft. The drinks: I got an Apreol Spritz. It tasted like watered down Apreol no Prosecco. My husband's old-fashioned look at the picture. It was red and he said it was not good. My server... nice at first but inattentive, and I believe maybe was a little overwhelmed? She didn't check on us often didn't bring out the sauce My husband asked for. When it was time to take the food away, he asked her for a box, he ordered the filet mignon. She said there wasn't a box small enough and couldn't give him a container, so it was wrapped in foil paper and brought it out in a paper bag. Unbelievable. I asked another gentleman to pack up my mother-in-law's dinner, brought it out in a container and gave her bistro bag a thumbs up to him When the check came, my mother-in-law left cash to cover the drinks and tip and her card for the meal. I don't think Maria understood her put all the cash on the check and used the rest for the card then came and said she needed to pay for the alcohol. I explained to her very nicely that's not what she meant and she said I already did it too bad I can't undo it, and I looked at her and I said that tip was for you. That changed her tune she went back and fixed everything! For a $320 dinner tipping her over 25% was more than generous, especially when service was not the greatest. Food: hands-down, some of the best sushi I've tasted. Shout out to the sushi chefs! I got the shrimp tempura salmon roll 10/10!! My salmon, flavorful, but a small portion and I did not like the sides. 5/10 Filet mignon, served medium rare Very tender, good portion 8/10 My mother & father in law like their steaks well done. On a recent trip to California to visit family, my Aunt & I decided to explore Fantasy Springs Resort Hotel on a Sunday. We were in the mood for a lite bite to eat. We saw The Bistro advertised in the Hotel & decided to try it. We were greeted by a smiling hostess and were seated promptly. Given it was a Sunday evening, the place was relatively quiet. The dining area is elegant. Soft lighting and white tablecloth. There is a view of the kitchen. Our server was attentive but apparently her shift ended before we finished eating because Javier, took care of our table. My Aunt & I shared the Cheese & Charcuterie Appetizer along with a California Sushi Roll. I also enjoyed two glasses of Merlot. I was disappointed that Apple Pay is not accepted, however; our choice to eat at The Bistro proved to be the right one. It was a relaxing evening and the food was very tasty. Food service was not good,waiting for 20 minutes for someone to take our order even then he had to come back to check what kind of steak and how he wanted the steak medium rare ,chared and when he got it was well done and tough, when we called the manager she was no help his drink came half an hour we very disappointed it was our anniversary and we always had a good experience and good service we were late to the lit club no tables my plan was a beautiful night and instead it was a horrible experience and it was not that busy that night there were so many tables available then the manager offered him another drink you would think she would have comp him because of the service being so bad but we got charged for that extra drink and we've been there about a dozen times but I'll have to think if I want to go on my special occasions read more

The Bistro is probably one of the places you should eat at while visiting the Fantasy Springs Casino. It opens at 5:00 p.m. and is occasionally very busy, therefore reservations are recommended. Since today is Thanksgiving, all of the tables have been reserved, but we were able to sit outside on the patio. Went to this place for the first time and also for a family birthday celebration! And man was it and awesome place and they do have a dress code so you have to dress up nice and no hats in the restaurant! Our table was next to the wall of windows and it was very nice and relaxing and enjoyable! Our waiter was awesome and I think his name was Miguel and he's was very attentive to our party and always checked on our party and the service he provided was excellent and top notch! I ordered a fantasy springs margarita and man was it tasty highly recommend! For dinner I ordered a 24oz porterhouse steak with asparagus and four cheese agratin and all of it was amazing tasty and flavorful! I didn't think I would eat the whole thing as it was a lot of food but it was so delicious and tasty I ate everything! We got the poke tower and a roll (don't recall the name, but it was the biggest offering - 10 pieces). Good amount of food for two adults. Delicious! That plus 2 beers, tax, and tip was around $70. We came here for dinner for the first time yesterday and I am still full! We had a wonderful meal. We were greeted warmly and quickly seated. Hannah , our server introduced herself . She told us about the specials and explained some of the dishes we had questions about. We had drinks and bread while perusing the menu. I enjoyed my lemon drop and my husband his bourbon. We ultimately decided to split a few things. Hannah asked the kitchen to divide the soup and salads so we weren't eating off the same plate. Everything was presented beautifully at the perfect temperature. We loved the crab Louie salad and my husband thought the onion soup was the best he's had. I have been following Chef Freddy on Facebook and his TV Recipe of the Week on KESQ-TV (Coachella News). I was looking forward to dining at the Bistro for nearly a year! APPETIZERS: classic Cesar Salad and I could not resist Chef Poke Tower, served with rice on the bottom layer topped with sliced avocado and diced seafood. ENTREES: we ordered the Boneless Beef Short Rib Bourguignon, it was so tender cooked in red wine, pearl onions, mushrooms, and carrots. Second entree was the Pan-seared Chilean Seabass, which was buttery, flakey and moist. We ate every morsel! If you like steak. seafood, or pasta, you will enjoy fine dining at this restaurant. The service was superb, our server was Fabian who checked on us during the evening, as well as the Manager. First moment we walked in we were greeted by a very nice hostess. She sat us quickly and was very quick to welcome us as she placed napkins on our laps. Saturday night on Labor Day weekend we showed up without a reservation at 5 and they gave us a table for two, so nice. Our server, Layla , was so sweet and accommodating. We had the best crab cake appetizer along with the t bone dinner. Both were so good. The tbone dinner was huge, I think 32 oz, and it came with two sides for $ 56 which is a great price considering places like Ruth Chris charge more than that just for the steak and no sides. This restaurant is located inside the fantasy springs casino. It's a "hoppin'" place as my grandma likes to say. The meal starts with fresh warm French baguette and olive/balsamic. The bread is presented in a brown paper bag, as if you were picking up a baguette from the market. The table has lobster bisque, salmon, and lobster tail. I had the Kobe beef meatloaf. The Bistro is a nice place to dine. The ambiance is wonderful; very intimate and unhurried feeling. Not at all like a restaurant in a busy casino. The food is good (not OMG!), the prices are okay (not low, but not as high as some places), the waitstaff is ok (why did Hanna put my napkin in my lap but not in my mother's or daughter's?). We got a sushi sampler to nosh on before ordering dinner. It was all ok. Definitely not Nobu, but ok. I think Okura is better. I think it was $20 for the sampler: 6 pieces of California roll and 6 pieces of sushi. For dinner, I had the lobster tail w Angel hair pasta. The lobster tail was cut in half and lightly breaded. I got a really big piece of lobster for $58, which made me happy but it was served without drawn butter. I think I was supposed to cut it up and mix it with the pasta. The pasta sauce was light, olive oil and tomatoes. Not much to it. It was ok, but not fabulous. My daughter ordered the wagu Parmesan stuffed meatloaf. She liked it, particularly the gravy, but the mashed potatoes were grainy. Husband had the salmon and risotto. Again, he said it was ok, no complaints, but not wowed. Mom had the highly recommended lobster bisque soup which she said was good but very light on lobster chunks. Overall, ok place but not my new favorite. I am giving it a 5 star rating because collectively with all the visits (5+) they have provide great customer service, and the food is amazing! The ambiance is perfect to go with your significant other to celebrate a special date or to have an intimate peaceful dinner. There is nothing that I've ordered from here that I do not recommend. It is on the pricey side but the food and portion is well worth it. This time around I ordered the sea bass and added a lobster tail. And gave the charcuterie board a try and again was not a disappointment. We were celebrating my moms birthday and the restaurant gave her a complementary chocolate cake to celebrate her. This was super special from them to do. If you live in the area, passing by or staying at this resort give this a chance, you won't be disappointed. While in the Palm Springs area we dropped by our go to casino Fantasy Springs and visited The Bistro. Girlfriend had the Icelandic Salmon cooked to perfection with just the right seasoning. Our absolute favorite place to eat for a nice night out! Since moving to this end of the valley we have gone out for a night at the bistro about 5-6 times and have never been disappointed. Every dish is incredible and definitely make sure to ask about what's new and/or special because we've noticed that some dishes get swapped out occasionally. It's not a proper night at the bistro without a charcuterie board -- so definitely give theirs a try. Some reminders: They get packed on nights where there are concerts so make sure to schedule that reservation ahead of time. On nights when they have live music outside you can sit on the patio and enjoy the show! It's loud, but fun! And if you go frequently, then you will definitely want to request your favorite server so you can sit in their section. read more

So this was a gem of a find in Indio California at the fantasy Springs Casino. We were there for my birthday week at a gorgeous resort style Airbnb in the Terra Lago Community right on the lake and didn't really have plans to leave the house much except for my birthday dinner. It's slim pickings there unless you drive into La Quinta or Palm Springs which we didn't wanna do. Bistro was highly recommended by an acquaintance of ours and after looking at their reviews online we decided to give it a shot. Super glad we did! While the ambience was a little bit antiquated which is to be expected of a casino restaurant in the middle of the desert, the service was on point and the food was absolutely fabulous!! I cannot stress how truly impressed we were. I have worked in fine dining for 30 years and I am super picky about service and food. Every single thing we ordered was to die... from the baked oysters with the fresh crab meat, to the raw oysters, to the escargot over gnocchi(omg!!), to the delicious lemony Caesar salad and of course a perfectly cooked charred filet mignon with asparagus and baked potato. And as it was my birthday they brought a full slice of chocolate cake which was very impressive as most places just give you a scoop of ice cream with a candle and it was not some cheap dry chocolate cake but really freaking delicious! We also were impressed at their kitchen layout where the chef was clearly Watching over every plate that went out and not only for quality but giving tips and training in the process which I think is really cool. The server and manager were super, friendly helpful and quick efficient service! We would definitely come back if we were staying in the area again ! Only feedback... update the decor a little. My wife, Cheryl, and I are weekly diners on Mondays at The Bistro Restaurant @ Fantasy Springs. The Monday crew of chefs (and their assistants and trainees) are top-notch. They provide delicious specials and a variety of savory menu items--all of which are better than any restaurants of this type in the Coachella Valley. Special mentions for Santiago and Claudia, along with other chefs who do an extraordinary job in the kitchen! Their 'specials' are always outstanding, and creatively presented in a truly elegant fashion. Among the servers, Maria, Justin, Hanna and Javier always pay attention to each customer, providing excellent suggestions, along with their perfect and tremendous service! The bussers, Matthew, and David, are also excellent at doing their job of keeping everyone happy as they pay attention to every need of the diners. They never miss a thing! Rosie at the front/reception is friendly, always mindful of all customers... and she definitely has our backs when it comes to the weekly reservations we never fail to make before leaving the restaurant.
