Saturday evening with no reservations we were directly to the bar where there was adequate room but the buck stops there. [[HIGHLIGHT]]We couldn't see inside the restaurant.[[ENDHIGHLIGHT]] We had specialty margaritas and appetizers which were delicious. The bacon was a hit. [[HIGHLIGHT]]The service was satisfactory as was the ambience.[[ENDHIGHLIGHT]] Wish the manager would have said hello .

Mac and cheese side

We went to the Butcher's Cellar for date night and it was such a great experience! [[HIGHLIGHT]]The ambiance was a perfect blend of modern rustic with a cozy feel.[[ENDHIGHLIGHT]] Our waitress Jenn was fantastic! She was very attentive and made us feel well taken care of all night. For food we started with the 1000 layered potatoes which was an interesting dish but we wished there was a bit of more seasoning on it. The Brussel sprouts were the star side dish-the sauce was the perfect balance of sweet and spicy and they were cooked nice and crispy. We opted to share the vodka pasta for our entree and it was the right choice because the portion sizes were huge. The sauce tastes just how a vodka sauce should: creamy, rich and flavorful. Sadly we were too full for dessert but will definitely be back to try them. Overall, this place is a wonderful hidden gem for fine dining in Waco and we are already excited to come back!

We were so excited to try this restaurant because we had gollowed thecareer of the chef. I was so hugely disappointed with the hospitality and the food I won't go back and I would not suggest to anyone I know to visit. I made reservations from their website for 2 people at 7 on a Saturday evening. Not being from the area we had some trouble finding the restaurant and arrived 5 minutes before our reservation. I advised the hostess who we were and they took us to our table, and I noticed we passed besutiful booths and lavish tables only to be sat at a wooden two top at the furthest point of the restaurant. As soon as we sat down it was apparent the table was not level. I went to get the manager and my husband starting moving our stuff to a similar table nearby. As I trailed the manager after explaining our plight and unlevel table she starts addressing my husband so loud from halfway across the dining room saying sir, sir. I was shocked she would do this so loudly. She came up chastised us for moving and left. My husband and I both looked at each other trying to determine if we should leave. Our waiter arrived and took our drink order and advised us the building is settling and that may have caused the table to move. We ordered drinks and the pork chop, scallops and brussel sprouts. Our food took about 25 minutes to arrive and I immediately noticed my scallops were cold and had been garnished with scallions (one had an odd undercooked feel) and dried onions. It was terrible. The menu made no mention of this and if it had I would have chosen something different because I'm not a fan of onions. The bone-in pork chop was three different temperatures as my husband tried to eat it. He said it was too large of a serving. The brussel sprouts were forgettable. We did watch a manager come over and push on the table then explain the tables are all self leveling. When he left I reached back to the table and showed husband it was still off by shaking it. Our waiter was great but not great enough to make up for our terrible experience. The drinks were not good. Heavy pours made them hard to drink as we like our beverages to be balanced.

This is the best food in Waco, period. We've been for dinner which was incredible. The Asian food is crazy good. Today we went for brunch and my goodness it was amazing. Wife and I split French toast, huevos rancheros, and the burger. French toast was some of the best I've had. Didn't even need syrup. Crispy on the outside and soft and warm on the inside. Huevos rancheros was also delicious. Loved the stacked crispy corn tortillas and heavy lime juice which we liked alot. Beans are excellent. The burger though, OMG! We'll be going back for dinner to get the dinner burger for sure. This burger was so damn juicy. Loved how they diced the onions and pickles. It was the first thing I ate and I wish we ordered 2.

[[HIGHLIGHT]]Great food, great atmosphere, and amazing service.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]This was such a beautiful restaurant.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]I went with my family and we each enjoyed our meals.[[ENDHIGHLIGHT]] I had the redfish, my hubby had the pork, my daughter had the salmon, and my daughter had the steak frittas. Everything was A+!=

These were both supposed to be medium rare. (They're not.)

Pretty disappointing 10th anniversary dinner tonight being served raw steak. Sent two steaks back, they re-fired the same steaks, ended up not eating one, gaslit into believing that both of these steaks were cooked to medium rare by the assistant general manager. I get it, it's a Monday night and maybe they had a tough weekend by the grumblings from the employees, but don't be open on a Monday night if you can't show up the same way you do on a Friday or Saturday.

Only picture I got! Thick bacon slices and pancake.

Love it here! Been a few times for dinner and recently for brunch. Food is always good and service is even better. [[HIGHLIGHT]]Lighting is not too dark like a lot of higher class restaurants so the ambiance is perfect.[[ENDHIGHLIGHT]] We first got the BC bacon, and it was not like their normal bacon they've had before, but that's our fault for not noticing. It was still very good, but just different. We also got the cinnamon crusted French toast and it was phenomenal. It was super sweet - but who wouldn't expect it to be. We definitely have sweet tooth's so it was perfect. We got the pancake and it was good, but not completely what we were expecting, which we didn't really know what to expect. Overall, another amazing experience. Now waiting to see what's opening next door!

[[HIGHLIGHT]]Wonderful service and ambiance.[[ENDHIGHLIGHT]] Mac, corn ribs, steak, Texas red fish. Great selection of specialty cocktails.

Delish appetizer, and yummy bottle of wine!

Our first time dining here and we were delighted with our experience! Our waiter was wonderful! The food was delicious! We will be coming back for sure.

The best restaurant in Texas. After moving from Arizona, we haven't found good food in years. [[HIGHLIGHT]]This place makes us feel like we are in high class Scottsdale.[[ENDHIGHLIGHT]] The severs are the best I've experienced as well. The service is great. Everyone makes you feel like you're in the top 1% of society.

I had the Maple Old Fashioned, like I usually do, the cubes were small so it tasted watered down. No pick for the cherry, no straw, wasn't smoked. What a waste of Whiskey. My wife's agave drink also sad. I had another whiskey cocktail and felt like a waste. I usually get the Rack of Lamb which has always been unbelievably great. Not on the menu anymore. Got the chef's pick which came with several courses. Salad was plain, soup was incredible, fish was ok, I don't remember what the other thing was. Service was great as always but when you spend $175 plus $36 for a tip I expect top level. Next year I would have a hard time going back there for my 42nd anniversary. What a shame.

That is what we did, the problem was addressed to our satisfaction, and here I present the outstanding experience we had at this restaurant. Service was excellent. Our waiter was attentive and knowledgeable about the menu and food preparation. The ambience was very pleasant, from drinks on the outside patio to our meal inside. Our party of four ordered a lot, including two steaks, Chilean a la Prime, the Chef's weekly special, asparagus, and more. All of the food was exceptional well-prepared and I'm still thinking about how much we all enjoyed coming here.

The menu is simple, thoughtfully curated, and everything we ordered was executed beautifully. I had the steak, served over a bed of perfectly cooked bell peppers and onions. It was flavorful and cooked exactly right. My mom ordered the whole fish and cleaned her plate, which says it all. My son chose the handmade pasta, and it was outstanding. The meat to sauce ratio was spot on, and he finished every bite. We started with the Caesar salad, and it was honestly one of the best I've had. The unique nut mix added an unexpected crunch and took it to another level. We wrapped up the meal with the mousse dessert, and I highly recommend saving room for it. it was the perfect ending. Every plate at our table came back empty. Great food, excellent execution, and a wonderful atmosphere and service. We'll definitely be back.

We had a 6:45 reservation and we arrived an hour early to have a drink in the bar and the hostess told us that she would let us know if a table in the bar became available before our reservation time. I checked with her once because we noticed a few tables had been empty the entire hour we were there and she said that she still did not have anything available because they were reserved for reservations. No one ever showed up and she ended up seating us at one of the tables that had been empty the entire time and she seated us 10 minutes after our reservation time! The food was OK but the portion size for the price was not good. They were out of iced tea and potatoes by 7 o'clock. I ended up sending my gnocchi back because it was absolutely terrible. My husband ordered a martini and was charged 50 cents for an extra olive and, ironically, he only received one olive on the toothpick. The service was terrible and the bartender was very unfriendly, and we would never go back!

My wife and I decided on a bit of whim to have dinner at Diamondback's this past Monday evening…read more Overall, a pleasant experience. My wife had the ribeye and I had the prime rib. As has become almost standard in any steakhouse these days, her ribeye was not medium well as she asked, closer to a Pleistocene dining experience than in a very upscale restaurant in a technologically advanced civilization. Seems like they could have got that right. The prime rib was excellent, perfectly cooked and served with a particularly superb version of horse radish sauce. The vegetable sides were asparagus with Hollandaise and baked spinach. These are "family" servings that we shared between us. The spinach was excellent; the asparagus was a touch on the al dente side and the Hollandaise thin and flat, could have used a discernable bit of flavor. Meal - we'll go with a solid B plus, and a properly prepared ribeye would have elevated that. Service -the young lady that greeted us was clearly evaluating our somewhat casual attire (no shorts, no T-shirts, crocs or flip-flops, just nothing fancy) and had all of the warmth and welcoming charm of a Minnesota winter. The waiter was efficient and pleasant, but again as is a modern affectation, a bit overly familiar. We enjoy good service, but we're not going to become pen pals.

We kept it simple with apps and drinks, and even that was a letdown. The calamari came out lukewarm with zero flavor. Crab cakes were also barely warm (they tasted okay, but still shouldn't be served like that). The worst part was the lobster bisque--bland, lukewarm, and honestly tasted like canned soup with a few pieces of "lobster" thrown in. No flavor at all. We didn't complain, but the manager came over after noticing it wasn't touched and said the chef was "trying something different"... it didn't work. Even a guest next to us overheard and said the quality has gone downhill--she had sent hers back too. The only good thing was the drinks--dirty vodka martinis were solid. Overall, not worth the price. We won't be back.
