This pizza is good. Has a light feeling to it but at the same time hearty and shall I say healthy...okay when it comes to pizza. Not greasy, can taste all the ingredients, nicely priced. I thoroughly enjoyed my experience here! First off... expect to wait. These individual pizzas are each hand crafted and cooked in a small but mighty badass over. It is not mass produced or underprepared and it is guaranteed to taste better than any other pizza you've ever had. Bring your patience be respectful to the staff. They prepare a limited number of dough dependent on the day of the week and the season. There is a strong likelihood that if you show up at 6:00p on a Saturday in summer... they will have no pizza dough. We arrived at 4:30p and they only had 15 left. The wife and I ordered and waited for a table open up. We knew the wait would be over an hour so we shared a salad while we waited and we chatted with friends. Inside the restaurant offers limited seating so most folks seem to get their pizza to-go. All 4 of us loved this pizza, it was epic. What an experience! Wait times are super long for the pizza. They sell out of dough pretty quick, so get there early but also be ready to wait in line. After placing your order, be prepared to wait for an hour to hour 30 for your pizza(s) to be ready. The dough is amazing! I got the pesto and mushroom. The pizza overall was really good, but not worth the wait. There are also limited seating options so you have to wait or take your pizza to-go and eat outside. We heard this was one of the best pizzas in the state so had to come check it out. Arrived 5 minutes before they opened at 3pm on a Saturday. There was already a line forming at the door, but not that long. Once the doors opened everyone went in to claim a table. You order at the bar. We got a caesar salad, the margherita pizza, and the mixed mushroom pizza. The salad came out first and, not to be dramatic, but this was the best caesar salad I've had. The croutons were so crispy and the dressing mixed in was the perfect amount! Then the pizzas came out. I have to say that the sourdough base was so good - light, chewy, and also crispy at the same time. There wasn't that much sauce or cheese on either pies. The mixed mushroom was good, but it felt like the pizza and the mushrooms were separate - there wasn't enough sauce or cheese to really meld everything together. I preferred the margherita even though I love mushrooms. The basil on the margherita was cooked and I enjoyed that a lot. Our total was about $55 dollars. That was the catalyst that sent me and my husband on a road trip to a small quaint town called Wilkeson to try their wood fired pizza. Let me just say that the Carlson Block was on point. They had great service with a cool local vibe serving artisan food! The pizza was so good and the staff were very nice! Great pizza, nice employees. The dough was the difference, excellent. My small bit of advice is to build your own pizza just the ingredients you want and don't sweat the cost. Also we arrived just 8 minutes before opening. There were eight people waiting ahead of us. So, it took an hour wait for our pizzas. I think to avoid that show up an hour and a half after opening. We drove to this pizza place from Enumclaw last Saturday arriving at 6:30, only to find that they were out of dough! Apparently this happens frequently. We tried calling on our way but they do not answer their phone - wouldn't that be a good business practice if only to let potential customers that they were out of dough! Quaint restaurant in the middle of nowhere really. The pizza is 5/5, wood-fired, with a thin sour dough crust and could feed 2 people. The prices are really reasonable. You need to line up prior to opening time to get a seat (hopefully you are not alone so someone can hold a seat for you or you do take out). You line up to order at the counter. The staff brings the order to your table and provides condiments on request (e.g. red pepper, parmesan cheese, red sauce). The toppings are varied but sparse. That lets the pizza crust shine. There was great flavor in the 3 different pizzas we tried--margherita, brussel sprouts & bacon, and sausage & shishito. The salads were nothing special. They provide a water container with plastic cups. They also offer canned beverages. I was excited to try the homemade ice cream. It was like chalk! When we pointed out the problem to a server, she said that happened once before but did not offer to refund us or give us another portion to try. We asked that she at least tell the maker but she didn't seem to be concerned about it. How did I not know about this place before and it's only about 30min away from where I live. I guess I've never been to Wilkeson before. Small quaint town. If you blink you'll miss it. Not your average pizza joint, so I was a bit overwhelmed with what to choose from the menu. The staff and local patrons helped me. I ended up ordering 1/2 roasted veggies add pepperoni, and the other half fennel & sausage. Wow it was really good! Mind you this is not something I'd normally order at a pizza place. I thought the fennel was going to be fennel seeds. Nope fresh fennel which was a 1st for me. Sauce and crust equally delicious. Also ordered the block wedge salad. It too was really good with that candied bacon and blue cheese crumbles. Kinda a pain to eat in a to go box, but I guess that's how everything is served there. I have mixed feelings about this place. We ordered our Pizza at 5 pm. We saw that there were a few orders before us so we asked how long it would take. The lady that took our order said - "30 minutes". We thought that 30 minutes was acceptable considering that we have been wanting to try this Pizza for some time, that reviews were good, that we had a long day of travel and didn't want to search for another place to go to. Our pizza arrived an hour later. In that hour nobody approached us to let us know that there was a delay which would have been a very considerate customer service. When pizza arrived there was no explanation why it took so long or at least "thank you for your patience". When the guy who brought us our pizza came back with extra cheese and chili flakes I asked him if it always takes this long to make their pizza and why such a delay because it was our first time there and I honestly wanted to know. Only then he explained that there were many orders and said "sorry about that" which of course was meaningless. If they truly cared about people waiting for that long they would communicate effectively. Pizza was good, but not worth the 1 hr wait and dealing with ineffective customer service. Dear owners of The Carlson Block please consider communicating to your customers when the food takes longer time to come out or when there is a potential that some customers might be turned away after a long wait because you are out of the dough. The hype is real. Amazing pizza. But what blew us away by far was the sausage and kale dip. The owners mom recommended it and of course, she knows what she is talking about. She is so nice and welcoming and obviously proud of her son. We had known about The Carlson Block ever since we moved to Bonney Lake over a year ago. And in fact drove there randomly one day not knowing the limited hours. So we missed our chance. This time, we made sure to get there on a Saturday and 30 min before they open there were already people in line. But we were committed. We NEED to try this pizza. I don't know if the flavors will blow everyone away but the quality, the love, the combinations and my god, the dough. It's so on point. It tastes so fresh. And there is something to say about their business model of scarcity. They are not open every day and are only open a few hours a day and as far as I know, once they sell 75 pizzas, that's it. Sold out. This method generates demand IMO. It's special. You can only get it for a limited time so while we may have been the 3rd family in line that day, by the time we left, the line went from the register to the door. It's working. Best pizza around! Worth the drive if you are out of the area. We had the cheese dip with crusty cheese bread, and the fennel and sausage pizza. Recommend the ranch to dip in, they make it in house and it's so good! We also got the roasted strawberry ice cream to take home. This place is fantastic and without a doubt a destination spot and some of the best pizza I've ever had. We went on our way back from Mt. Rainier. It is an old timey building with a small staff that knows what they are doing. We ordered two pizzas and I ordered one of their vintage sodas even though I'm not really much of a soda person because it just seemed cool to do. We got the soppressata and the fennel and sausage. The soppressata was very good but even though I'm a fan of spicy I did think it was a little too focused on the spicy profile and could have been a little more balanced than only heat. The star of the show was easily the fennel and sausage. Absolutely fantastic and I'd say a top 5 pizza I've ever consumed. Instead of it being a fennel sausage it was homemade sausage with fennel on top of the pizza as well and it worked wonderfully. It had a garlic base instead of a traditional marinara and the crust here, on all their pies, is as good as they come. Perfectly crispy, airy and flavorful! It is kind of out of the way which is unfortunate as if it were closer I would be a regular so I could try all their pies. This spot was recommended to us by my husband's colleague. It's our first time visiting Wikelson, WA, and The Carlson Block. Our service dog was able to join us for lunch too . We took a little tour of their town and waited patiently till they opened. Upon entry, it's a nice little spot with tables, booths, and bar seating. We chose our table and hubby ordered our food. Customer service was great, the lady who helped us was really nice. It got busy pretty fast and waited for our food. We didn't wait long at all for our pizza and Casaer salad. Overall, customer service was great, the ambience was chill, and the food was amazing! Fun little pizza spot. We ventured out to the middle of nowhere (Wilkeson, WA) to try this spot listed as one of the best in Washington. Definitely good fire roasted pizza. Delicious pizza. The Roasted Vegetable Pizza consisted of thins slices of zucchini, sweet onion and garlic cloves. Just a touch of cheese and light layer of red sauce (marinara). The Margarita Pizza was adequate. ($29 including tax). They opened right on time. We were 5th order in line/18 pizza in line. Ordered at 3:17 and picked up at 3:45. We arrived at 2:40 pm and there was already a line outside the restaurant for a 3:00 opening! We decided to order 3 pizzas (they do have half/half options!) - one full brussel sprout and bacon pizza, half fennel and sausage with half pesto, and half sopressata and half mushroom. The pizzas overall seemed pretty average but they tasted good. My favorite was probably the pesto or the sopressata. Their most popular were the brussel sprout and bacon and the fennel and sausage. Overall, this is a place that I would not detour to get food from here but I thought this pizza was good/okay! Not the best pizza I have had but also not bad pizza. Thin crust and 6 slices. Small place. Had to wait in line to order and then waited nearly 90 mins for pizza. Great place but they have been slammed and can only sell so much every night and only open Thursday to Sunday. They had a hand written additional items such as dipping sauce. We were in Buckley so we've decided to drive the few miles down to Wilkeson to try this spot. They came highly recommended by a friend so off we went. We knew the wait was going to be long so we were prepared. It did not take too long to order our pizza but it took a while to get THE pizza- 2.5 hours from time of order to time of possession. No joke! You can wait inside but you can't eat your pizza there yet. So, bring magazines, charge your phone or maybe go there, order, then run your errands and then come back to pick up your pizza. Don't tell me I didn't warn you. They also only have a certain amount of dough per day so don't get mad if you drive all the way there and find out they are out of dough. You want pizza, go early. Now the ultimate question- was is worth it. Yes! The pizza was absolutely delish! Is there a possibility that we were just starving for waiting this long? Possibly but either way we enjoyed it! What we ordered: Fennel and Sausage Pizza- a must! The sausage is so flavorful. You can taste every ingredient. Brussel sprouts and bacon- my second favorite. The pizza isn't soggy either, they put just the right amount of veggies and meat. Salty but a little sweetness comes through bec of the Brussel sprouts. Roasted veggies- we added sausage with this one. Probably my least favorite out of the order as the veggies made the pizza a little soggy. It had zucchini, roasted garlic and caramelized onions. I may have forgotten something else though. Build your own- we basically made a meat lovers pizza. Super good as well but be prepared to pay extra for all the meat you add into it. If you don't eat it right away, be prepared for the dough to be a little chewy instead of crispy. The service was great, small mom and pop style. Very well known in the community so locals are very protective of them. Yes there was a little squabble (not the restaurants fault) between a local and a customer bec the customer complained and got a refund - they waited too long for their pizza. But, we all knew the wait was going to be long. If you want great pizza, come here but come with no plans for the day. Enjoy the small town vibe away from the hustle and bustle of the city. There are zero gluten free products. The one thing I could have, they did not have which was a salad. My family still ordered pizza and I went next door to get a sandwich. My husband and kids waited an hour and a half for their pizza. My family did say it was good but they could have gone to Cascadia and gotten their pizza in 20 min or less which is also wood fired pizza. Also we were there at 5:30 pm. When I walked back in with my sandwich at 5:45 pm. They had run out of dough. Yikes. It was open for just under 3 hours on a Saturday. If you go, don't go hungry and go for a late lunch not dinner. My oh my. What a wonderful experience! This is a family run business and they make sure to treat you right and get your order tasting it's best. The owner is the head chef. The sourdough crust is unforgettable but doesn't taste overly sourdough after it's cooked. (Which is a good thing in my opinion because that flavor can be strong!) We got the Brussels sprout bacon pizza and sausage fennel pizza. Both were divine. Just enough oil to lubricate the crust and the flavors of the toppings definitely stand out. It's easy to eat the whole pie if you're hungry but it wasn't a small pizza. Honestly, it was just the right size for one person. Service was superb and everyone was extremely friendly. We went on a warm Thursday evening when no one was there. Ok....a couple families were there but nothing like the other reviews of hour long waits. We were helped right away and got ourselves some IPAs. Pizza came out fast, within 10-15min and we enjoyed it outside on the park bench. Figured I'd give them a second chance since I was hiking in Mount Rainer - drove all the way over there and entered at 5:45pm on 8/11/2023. Checked their page and everything - nothing. Open for business. Walked in and stood in line behind a lady and her kids who just finished ordering. The woman walks out from behind the register and says, "I'm out of dough. She bought the last one." Absolutely amazing. What a total farce. 5:45pm, they close at 8pm and they're out of dough? What a disgrace. Thankfully I will never, ever go back and will make it a point to spread the word. Time wasters and posers. I do commend them in one way, however - they've created a demand for their mediocre product by pretending the supply exceeds that demand, which is easy to do when you make ten pizzas on a Friday and announce you're "sold out" before 6pm. Checked their Instagram when I got home and saw their joke of a documentary video of them explaining how great they are, yet they have no pizza at 5:45pm. Amazing.
