Found this pop-up place at an international food festival in my city. I was walking by trying to decide what to eat and the owner happened to be handing out samples. So glad I decided to try the sample - I was hooked. It was so good I went back the second day and tried another dish. Day 2 I got the brisket combo (think it was no. 3). The brisket was a little peppery (which i like) and very moist. This was probably some of the best brisket I've had in California. They put just a little line of bbq sauce on some of the meat, but not too much, which gave nice variation. Any normal place this brisket would be a definite go to (they also did brisket nachos that someone else ordered and looked great). But the game changer was the lemon grass beef skewers combination (no. 1) I got day 1. These were delicious and flavorful, the tenderness of which we down in how easily the meat came off the skewers. The meat combined with the pickled veggies and rice made for an epic combination. I don't write a lot of reviews but felt this place was deserving. We ordered the Belly Buster which came with all three proteins and it was incredible! The meat was tender and flavorful. The spices they used for their dry rubs and the tanginess of their BBQ sauce awakened every tastebud in my entire palate without being overpowering. The Cambodian fried rice was also perfectly done and their homemade coleslaw was to die for. Being someone who smokes meat myself I can tell you that a brisket is the most difficult cut of meat to get right. The fact that Chan Smokers was able to get it as tender as they did without drying it out speaks to their level of experience.
