    My wife and I live locally, and decided to give The Foxhole a try. It's a nice setup adjacent to the lobby of the hotel. Our waiter/bartender/server Janet was awesome. She was personable and knowledgeable of the wines and menu. The two chardonnays were excellent, the big pretzel appetizer and salads were delicious. But our main course meats were very bland. And my steak, and my wife's salmon looked like they were cooked over a very low temperature grill. I recommend turning up the grill heat, and adding some seasoning! Oh, the mashed potatoes and green beans were good. We'll come back someday to try the lunch.

    Thank you Janet, our bartender, for a wonderful first experience at The Foxhouse. The service, drinks and food were delish. It was crazy to me as a local to go to a hotel bar, but my husband insisted because of all the great reviews, they did not disappoint. I had the chicken bbq flatbread and hubby had the chicken club, they were very good. We will definitely be back with our neighbors next time.

It can get quite busy and loud, so it's not the best place for an intimate conversation, and reservations can sometimes be difficult to get. That said, it's absolutely worth it. The menu changes regularly, so I try to visit whenever they announce a new one. Yesterday, we shared several small plates. The bacon-wrapped dates were phenomenal. I almost ordered a second serving before realizing we still had four other dishes coming! The chicken and waffles definitely satisfied my craving--crispy, savory, and full of flavor. The mushroom ravioli was also outstanding. We finished with the stuffed calamari, which reminded me of something my mom used to make when I was younger. It wasn't Asian-inspired like hers, but the concept brought back some wonderful memories. To top it all off, I enjoyed a delicious dessert while feeling pleasantly tipsy from the evening. I'd call that a win!

Our server was incredibly pleasant, attentive, and full of great suggestions. The beer selection was another highlight, with an extensive set of choices. The only small downside was my wife's wings. On one of our visits, the kitchen team apparently used the tuna that was meant for my wife's Seared Ahi Tuna Salad for another meal which resulted in an additional 15-minute wait time for our food. Though disappointing, a member of the kitchen staff came to our table to explain that situation which was a professional courtesy move that was professional and respectable.

I visited Paco's as an ex-Houstonian looking for a nearby restaurant to satisfy my craving for "true" beef fajitas. (Did you know that fajitas were invented in Houston? Look it up.). Sorry, but the local versions of the dish we've tried just haven't worked. Small pieces of meat mixed with cooked vegetables, and sometimes even in a sauce?!? No, true fajitas are simple - marinated, grilled, sliced skirt steak (or chicken, or shrimp) served sizzling, steaming hot with homemade flour tortillas and all the fix-ins. They may be more expensive, sure, but SO darn well worth it. And Paco's - nearly - met our standards. After a couple drinks we ordered the "Outlaw Steak" fajitas as takeout. The fajitas themselves were delicious and truly looked and tasted authentic. My only knock is that they were served on the same, poor hash of cooked onions and peppers that afflict other Mexican restaurants here. There's no need for these! At most, a few lightly-grilled onions will add flavor. Aside from the fajitas, my food and drinks here were a mixed bag. The queso and guacamole were both very good ( the guac is made tableside). However. the chips were too thick and overly seasoned and my margarita was much too tart, not to mention weak. Attractively designed interior, I love the "Western comic" motif by the restrooms. All in all, not bad for a Tex-Mex restaurant that is actually headquartered in Charlotte.
