But Asa might have the second best pork chop she's ever had. And so, since Cetrella has closed, this has become the new de-facto best porkchop! For that reason, this place gets 5 stars. I had a bit of it. It was cooked so well, white flesh all around, no pink at all. I think it was grilled and not sous-vide because she's had it done SV style and it still wass pink in the middle, even though it was all "thoroughly cooked". But despite the well-done, it was still juicy and soft! Pork is SOOO Easy to get dry. And especially since this is a thick chop. It was great! And no sauce... just an herb rub. I ordered the steak... it was cooked well. I've had better, and I generally prefer rib-eye over New York. But it wasn't bad at all. Just a little chewier than I would have liked.
