Obsessed with this place. Best meal I've had in a long time. We came to Maine from NYC and was staying here in Stockton Springs for my boyfriend's birthday. Our cabin was a few minutes from here, so I had randomly found this restaurant online and was super happy I did! The food was amazing and portions were ample. Charlie and Kirk create a beautiful experience that is unique every week in their lovingly attended house. We had our own private room, which will soon become the bar. Plantation rum, grapefruit, luxatdo, lime, simple. Light and delicious. $12. CHICKEN LIVER PATÉ Pickles, whole grain mustard, large pieces of toast, fig jam. Just so flavorful and perfect. $16 HALIBUT With sweet corn, basil, tomatoes, string beans, potatoes, N'Duja Aioli. This dish was superb to look at, and I wanted a little more flavor. The halibut was slightly overdone, sadly. $32 TAGLIATELLE with Summer Ratatouille, Basil Pesto, and Goat Cheese. This dish was very tasty, with a lovely sauce. $26 COCONUT CREAM PIE The absolute best and biggest piece, with loads of toasted coconut adorning the pie and plate. $10 BLUEBERRY AND GOAT CHEESE TART I adored this with Maine's tiny wild blueberries. $10 TAWNY PORT Such a lovely ending at $8 I will devise ways to come here at least once a quarter. This is excellent fine dining in the form of a multi-course meal. Expensive, but well worth it, since this as much an experience as it is a meal. The menu is prie fixe (with the option of wine pairings with each course), using mostly locally-sourced meat, seafood, and produce. There are often a couple little surprises from the chef that don't appear on the menu in the form of amuse bouches or gremolatas. The offerings vary depending on what's in season. The house is beautifully maintained, and each dining space has a wonderfully intimate ambiance. The wait staff is familiarized with each menu and can answer questions about each course confidently. The Hichborn can accommodate specific dietary needs provided they are given notice. Expect to spend a couple hours. This is NOT a drop-in restaurant. As my wife and I prepared for our move from Maine to our next adventure in life we thought about where we would like to go for our last restaurant experience. That process was fairly quick as we knew the only place for us to go was The HICHBORN. So we made a reservation (highly recommended) and went to enjoy our last great meal in Maine. Without getting into a lot of details suffice it to say our dinner was extraordinarily good as has been the case on our other visits. The food is simply outstanding. What I would like to comment mostly on though is the restaurant itself and the owners, Kirk and Charlie. They welcome you into the restaurant and make you feel as if you are the only diners there. The attention to detail and the overall ambiance of the restaurant truly stands above all the others. I want to thank them both for providing a meal and true hospitality that we will remember long after we have moved from Maine. Not sure where to begin with this place. My boyfriend and I have never experienced a place like this before. We were vacationing nearby and heard about this place. We decided to try it out. First, love the place, so cozy and warm inside, felt like someone's home. The staff were phenomenal, can't say enough nice things about everyone we spoke to. The food was something neither my bf and I were expecting, it was beyond expectations. The courses came out at a good pace, staff explained what was on the plate, served hot and beautifully plated. Absolutely astounding, from start to finish. The chefs and owners are clearly keen on choosing their farms carefully, and Stockton Springs is blessed to have a restaurant of this caliber in its sleepy village. Carefully selected wine list, classic cocktails with nice changes, and a near-perfect prix fixe chef's menu, including ample "bonus" items. The waitstaff is fun and polite, as are the hosts and chefs. It's an upscale establishment situated in a beautiful old farmhouse, but does not break the bank - well-worth the price. Another well deserved 5-star review. Our last meal during our vacation to Maine. Why 5-stars? -gracious and genuine hospitality. -incredible decor. It's like I walked into a magazine spread. I wanted everything including the colors on the walls! -A bathtub in the bathroom with flowers-whimsical and it made me smile -a Duncan Phyfe couch in our dining room. And yes I took a little lay-down before dessert. -generous portions and flavors to remember. Even with a limited menu you can find something to eat here. I'm a vegetarian and I enjoyed the pasta with goat cheese. -owners came out to greet us. My fiancé and my best friend's fiancé are restaurant owners and chefs and it was really cool to see them all talking and interacting. Such incredible owners. -they're going to convert one of the rooms into a bar in the near future. Yay! -the signature margarita with pickled blueberries. No need to go to Mexico. The 4 course prix fixe menu changes week or even twice a week depending on the whims of what is fresh locally or what the chef has decided. Some weeks the food is more aesthetically decadent but every week the food is imaginative, delicious, and outright balanced. This is fine dining, so things are deconstructed, infused, or using the multitude of other culinary skills and arts that now define fine dining. Bear in mind that though the food is consistently delicious, it may not always be Instagramable. Not only is the setting romantic and intimate, dinner is often dimly lit in the modern and refurbished and refinished historic home...but as I was saying, the dishes are all artistic but may not necessarily be Instagram-worthy. Not a slight, as they use the dishes that they have. For instance, there is only so much one can do with beets in a deep trough of dark colored bowl. With that, the service is up to the standards of fine dining. Personable and charming from the moment the doors open for dinner service, and is consistent and above expectations throughout. I felt it was wasteful to have new silverware after each course as the utensils didn't always necessarily change, but it added to the "moment" experience. Be prepared to be treated by the chef throughout the night for whimsical surprises and treats. With that, also be prepared for a long dinner evening. While worth every penny and more, also note the mandatory 22% gratuities and having to place a deposit at the time of reservation. read more

This restaurant is overpriced and poorly run by management who come across as pompous and patronizing. I made a reservation over the phone without looking at their website. I was not told that there was a cancellation fee. Unfortunately we did cancel and they charged my credit card $130 without telling me or ever mentioning a cancellation fee when I spoke to them and canceled over the phone. When I called to enquire about the charge, their response was rude and typically condescending. read more

We visit Maine annually, renting homes in various mid coast towns. The home we found this year happened to be in Stockton Springs, which we felt was a great location because even though it's a quiet town, it is central to many other towns and destinations. An internet search brought The Hichborn to our attention and its story had us intrigued. We booked reservations right away based on all the glowing reviews. The mid 19th century house offered a cozy and convivial atmosphere. The owner and our server were very welcoming. But let's cut to the good stuff. The reviews were spot on. The craft cocktails were creative and delicious. The wine list was well curated. Our meals, from starter, to main, to dessert were artfully plated, obviously freshly and locally sourced, and simply absolutely YUMMY! Such depths of flavors! I think my companions grew tired of me going on and on about the corn pudding that my perfectly prepared halibut was served on. Well done Charlie and Kirk. Locally sourced cuisine in a charming setting: You know a restaurant's food is locally sourced when your server points out the window to the oyster flats where your first course was harvested that morning. I've never had better oysters. Every course of the Hichborn's tasting menu delighted the tastebuds. Whether it was an unexpected scallop ceviche amuse bouche, whipped ricotta and heirloom tomatoes, or perfectly grilled pork chops, we enjoyed every one of the varied plates. Uninspired dishes and the overall experience left us feeling ripped off and tired of the bloated, pretentious food scene in Maine. THE HICHBORN is a really beautiful old home in an unexpected location - a wonderful choice for a high-end dinner in the midcoast region. A friend and I were looking for someplace to meet after a weekend in Bucksport, and we thought we'd give it a try. The parking lot is quite small, but I believe parking is available on the street. We were seated on the porch, which was just lovely. The "feel" of the place is classy, old-fashioned but not stodgy or out-dated. The furnishings and decor is simple and understated, and very comfortable. There were lots of interesting items on the menu, and though my skirt steak was chewy, the flavor was really delicious. Our server was very friendly, sweet, attentive and helpful, and worked with the chef to accommodate my allergies. My friend had a pasta dish that was fresh and homemade. She said it was delicious. And the Creme Brulee I had for dessert was absolutely wonderful and left me in a state of blissful "mmmmm." My only criticism is that the Maitre d', who was unusually cold and unfriendly to us, to the point of looming over us at the end of the meal, making it obvious that he expected us to move along. It was quite uncomfortable, and felt unwelcoming. Expect to spend a lot of money - but if you like classy dining in a beautiful atmosphere, you will feel that it's worth it. read more

While visiting Maine during Labor weekend, we decided to try the farm to table cuisine at the Hirchborn. First, the ambience was spectacular, they turned a farmhouse style home into a stylish restaurant setup. Second, the prefix dinner menu was phenomenal! Everything on menu was absolutely delicious. Once in awhile you stumble upon a rare find by pure chance--this restaurant is a real treasure. First, the atmosphere is an eclectic mix of traditional and modern, with just the right balance of intimacy and personal attention. The restaurant is in an old restored home surrounded by beautiful wild flower gardens. There is a lovely outdoor patio and Inside is immaculate with tables in small rooms surrounded by a mix of traditional and modern art, tastefully juxtaposed. The real measure of a great restaurant though is its food, of course. Well this place delivers with a creative mix of unusual cocktails, and a farm-to-table menu with exceptionally prepared appetizers, and beautifully presented entrees. Flower garnishes tastefully adorn most plates. My appetizer of Kohlrabi fritters was amazing. I wanted to lick the plate! For my main I had tagliatelle with mixed vegetables and goat cheese--awesome dish! At every turn you can plainly see exceptional attention to detail. And just when we thought we experienced all the best this place had to offer, with big smiles on our faces, dessert was served. And wow...clearly fresh, creative and delectable. My olive oil lemon cake disappeared in two seconds lol. From the warm welcome by the host when we arrived even though we were late for our reservation, to the attentive service throughout our meal by the server, to the nice conversation about the history of the restaurant with the host as we departed, this dining experience was a real treat. The food has excellent ingredients and everything is very fresh, however, the food is sweet and bland and overall quite boring. It fits many Maine palettes of quests who simply do not know any better. If you've eaten all over the world, you might want to save your money. We made reservations on Open Table and when we arrived we were created outside and warmly welcomed in. We started with the margarita which was mind altering! The menu changes frequently and is very small. Started with fresh cold salty oysters and a salad with just the perfect amount of vinaigrette. Our dinners were halibut perfectly cooked and accompanied by fresh local vegetables and the vegetable ratatouille with soft goat cheese on Top of homemade noodles. Both were exceptional. The restaurant is in an old house and while there are rooms with multiple tables, we were given our own room with a table overlooking the front border in bloom. The room itself was painted an exquisite blue, and filled with art celebrating the beauty of Maine but avoiding kitsch. That was saved for the restroom, which surprised and delighted with a bathtub filled with peonies, a disco ball and a 3-d unicorn. Calling the Hichborn "an American seafood " restaurant seems to be cutting the place rather short. We have eaten there four times now and each time have enjoyed thoughtful, flavorful vegetarian dishes while others in our party ate hake and muscles. The overwhelming feeling we had after each meal was wondering when we would return and who we could introduce this delightful place to. The cocktails are really good, I had a spiced blueberry margarita that was transportive! It is often hard to manage one of their amazing homemade desserts but I always seem to do it with help from others at the table. Coconut cream pie.....bliss! The atmosphere is elegant and homey at the same time with eclectic artwork, intimate dinning rooms, and quietly attentive staff. My husband and I had a remarkable dinner at The Hichborn. We've lived in Maine for over 20 years and this was the best single meal we've ever had in the state. Every single dish -- the bluefin tuna crudo, shaved brussel sprout Caeser salad, swordfish, crab ravioli, and chocolate cake with chile and cinnamon -- was excellent. Flavors were subtle and delicious, textures were perfect and the whole experience was relaxing and pleasant. We had dinner on Saturday night and the food was amazing. Limited menu with a number of appetizers and 4 main entrees and several desserts..this may sound a bit confining but it's not. We started with kohlrabi fritters which were simply scrumptious. I was also brave and had a blueberry margarita without the chili, not that brave. Of the 4 entrees i choose the cod over cabbage with fingerling potatoes and roasted radishes..totally amazing ..the food is incredibly fresh and the sauces creative and delicious. The setting is an old house and we sat on the enclosed porch..dessert was shared..could not pass up the mountain high coconut custard pie or the strawberry and goat cheese tart..both were worth the calories.. Of the main dishes there was one fish dish, one meat dish; one vegetarian dish and one pasta dish. I assume that the menu is based on the availability of the produce since all the food is locally sourced. This was an amazing meal and about 20 minutes from Belfast..definitely worth the trip. read more

Stopped in here with friends a couple of weeks ago...a very pleasant place! It's easy to go past this little town on US-1 but the Hichborn is reason enough to stop...and it's really not that far off US-1. The menu appears to be ever-changing and limited to only 4 (or so?) main courses on any given evening. On our night, we chose a mushroom ravioli and a cod dish and split them. Good stuff, nicely seasoned, well-prepared...what's not to like? Nice room, very good service, and an amicable owner. Low-key elegance. On par with the dining experience of The Lost Kitchen, Primo, Central Provisions and other Maine favorites. A must visit culinary experience and dining destination in an effort to become a regular.
