The soup was equally impressive: rich, cheesy, and savory with just the right amount of jalapeño kick without being overpowering. There was a fairly large group of older / retired folks who had just ordered when I arrived. Whether they were waiting on a charter flight or this is a regular Wednesday gathering, the place had a fun atmosphere. Despite the crowd and several pending orders, my food came out faster than expected. As an added bonus, the Vegas Golden Knights' jet was parked on the tarmac, which was very cool to see. This place reinforces my theory that FBOs and semi-private airports often have some of the best hidden gem diners and bistros, places usually known only to flight crews and private pilots. From ordering to eating was about ten minutes. If you find yourself in Rocky Mountain Airport, give this little place a try. I think you'll enjoy it as much as my wife and I did.
