I was lucky enough to find this truck in Food Truck Heaven Alley outside Spectrum. The owner puts a lot of love and care into this dish. Its warm, spicy, but not too spicy where it dps (damage per second) my mouth and throat. Its a chicken gumbo but it also had some sausage in there that I really appreciate! Really great po'boys in Hawai'i! Finally! At the 1st Friday food trucks at Mililani High School. Whats not to love. We ordered a fried shrimp and a catfish po'boys along with a cup of chicken gumbo. The gumbo had a beautiful dark color-obviously the roux was worked on for on a long time. It was spicy, warm and comforting. The rice was mushy but not enough to ruin it. The shrimp po'boy was seasoned so nicely with a wonderful pickled dressing which brightened the sandwich. The remoulade was an extra treat. The catfish! Oh the catfish! Ive had many a catfish po'boy in New Orleans and escuse moi! This was the best Ive ever had. Crispy and juicy fish with cajun breading. I didnt scarf it down- I snarfed it down! Found him in Wahiawa tonight in the Dots parking lot. Had the chicken gumbo and the catfish po boy. The gumbo was delicious, dark, not to thick and the right amount of heat. I've had food from the Kajun Connection several times. They are probably on their A game the most when presenting and cooking down in Kapilina and the Ewa beach area. I've ordered catered food from the Kajun Connection as well. The owner and operator is as laid back and easy going as can be. They have po'boys on the regular. I've tried other dishes from them as well. My favorite is the fried catfish. Its the best and most authentic on the Island. I can not knock their offerings. I wish the business did a little better when posting their locations and times. Their website is down and that makes it a little difficult to support. This is one food truck that is consistent for Cajun and Creole food on the island. Most likely it's the only one. Cajun and Creole folks: Please support this truck. It's authentic. Everyone Else: This is what our food tastes like..... not at all like the other places where they put too much garlic on the food, too much salt, or too much sauce. I really wanted to like the food I ordered today. I hate writing not great reviews, but I felt it was needed. We ordered the fresh oyster special plate that came with Mac and cheese and chicken jambalaya. We also ordered the grilled shrimp Po'boy that came with a side of jambalaya. Fresh oyster special plate: The oysters were fried in quite a lot of batter, but overall with the sauce was good. Mac and cheese: There was not enough cheese or flavoring. It tasted like cooked macaroni with a slight hint of cheese for flavoring. Jambalaya: The rice was flavorless. It seemed to have been cooked without the sauce vs stewed with the sauce. There were very, very small shreds of chicken. The best part was the 1 grilled shrimp, which was flavored very well. Grilled shrimp po'boy: The grilled shrimp was the best part! It was the same as the one included in my jambalaya. There was more cold slaw than I expected. Overall, I would only order the grilled shrimp from here again unless there's a significant change in flavor for all of the above dishes. read more

This was my first visit. I passed by their wagon & saw it open, so I looked them up here on yelp. I wanted to try the grilled shrimp po'boy sandwich but I got the fried shrimp po'boy sandwich instead. It came with a side, so my husband got me the pasta salad. I haven't had Cajun food in almost 10 years, so it was like a new experience to me all over again. I enjoyed my sandwich very much. Very spicy. It goes perfectly with the pasta salad. Sherod is the chef at the Kajun Connection ... and he is legit. I asked them to be a part of our event because another vendor had to bail at the last minute. I was worried about late additions, but they pulled through on all levels with flying colors. The only issue was that because we got them so late he didn't have the time to make his famous gumbo for our event which I know everyone was bummed about and wanted to try. Well, we just have to bring him again next time then :) We tried his grilled shrimp po' boy ... and asked him to hold the bread (we aren't doing bread right now) he tossed in a couple extra shrimp and the side slaw was outta this world. He knows how to cook, and I know, I have a chef in my house too. The flavors were layered with the acidity, the savory, the sauce for the shrimp all so delicious. I found this truck while trying to figure out amongst a line of food trucks what to have for lunch. As I took a second look at the menu, the chef asked if I'd figured out what I was gonna get, and I asked how the shrimp po boy was--so glad I did! I was three bites in before I remembered to get a pic, but the flavor was amazing! Freshly fried shrimp that were plump and juicy, and I was happily surprised by the kick of spice from the slaw! If I could give 0 stars I would. I tried the gumbo at foodiecon & it didn't even look like the picture. It was light colored (like chicken soup) instead of a dark color (as displayed in their picture), it looks like they forgot to add the roux + veggies weren't cooked. I regret not taking a picture for this review prior to me tossing it in the trash. I was so shocked about the difference from the picture vs. what I received that I asked the cashier if this was the correct order to which she confirmed it was. They ran out of rice and had to buy rice from another booth (WTH). The rice was mushy and partially uncooked. The flavor was spicy but extremely bland. I'm not sure if ordering from the food truck has a different experience, however if you're going to be at a food convention I'd think you'd want to bring your best batch of food and be prepared. I not from the south but I have tried gumbo from the south & let me say... my gumbo is WAYYYYYY better than this. I just didn't have the energy to cook some at 37 weeks pregnant + I like to try different gumbos. After I gave birth I had to cook some just so my stomach/tastebuds could be satisfied. Cheesecake Factory & Disneyland gumbo is better than the one I tried that day. Maybe I'll go to the food truck location one day but this place left a bad taste in my mouth. LITERALLY! read more

Yummmmmm!!!! Five stars as far as food trucks go. This guy is EXTREMELY friendly. Great service! He can get busy at times, so there can be a wait. Maybe 5 -10 minutes. My favorite is fried shrimp po boy sub gumbo for chips. Shrimp is cooked with a perfect crunch. The bread is toasted with butter. Oh yum. The sauce - oh the sauce!!! Can't get a po boy without the side sauce. Makes sure you don't forget it. It forgot it once, and I was a little sad that my po boy sandwich was missing that flavor, but I was still happy. The gumbo is loaded up and comes with a scoop of jasmine rice at the bottom. Sooooo much flavor!!! Filled with veggies and meat. Super spicy! Flavor spicy and temperature spicy! We also got a side of pasta salad, which I could do without. It wasn't bad but compared to the flavors of everything else, you don't need to get the pasta salad. My wife and i were sitting on our porch looking at the food trucks across the street, contemplating on going over. Kajun Connection rolls in: me "we're going". I ordered the fried shrimp po boy, and was given a complimentary cup of gumbo because i was the first customer at his truck. Po Boy was on point, and the gumbo had just the right amount of kick to it to make it taste like i was in the south again. Veteran run small business with delicious food! Ordered my sandwich about 1pm. They confirmed it. Got my cc and told me what time it was going to be delivered. From 45 minutes to an hour which was fine. I live a couple minutes away. The next text I get is that they weren't gonna deliver my sandwich. No explanation! I don't know where they're located actually because I just moved to ewa beach. Tried their offerings at the Foodiecon this past weekend in which the event itself as a whole, was a giant disappointment, but somehow the food from these guys was even worse. The chicken gumbo had a nice spice to it but overall was incredibly watered down. They served a plain white rice with their gumbo and brisket plate that was so wet and mushy that it had the taste and texture of porridge, and not in an artful way. The portions were comical but if the flavors and execution were decent i wouldnt care less, id just buy more. 1 star for a brisket that had decent flavor and texture, but out of 3 paper thin slices, 80% of it was pure fat. I do hope for their sake that the food they put out regularly at their food truck is much better because this was terrible. Out of the 3 or 4 cajun food restaurants ive tried here in this state, i have to say they were all horrendous and i cant decide which is worse than the other read more

This is the second time my husband and i have seen them at the mililani HS for first Friday and it did not disappoint! They're super friendly and the food is so great. We got the catfish po boy, and I'm not a big fan of catfish but this was perfect! I'm not a big fan of cole slaw either and idk what they put in it but whatever it is is super good with the bread & catfish!
