This place, their cheeses and their cheesemaking class is nothing short of amazing. My spouse and I attended their cheesemaking class, having tried several types of their cheese while living in Ft. Worth. The class is lead by the owner. It starts with a tour of their facilities including their traditions and history. You get to hear about how they developed several styles of cheese and see how the process unfolds. Then you make ricotta. This was a super fun start because ricotta is an easy cheese to make at home. (Yes, I've done it. I'm not lying.) You move on to make mozzarella balls, filled mozzarella, and queso Oaxaca. Each is similar to the next but each has a different step or variation in process. You get to take all of these cheeses home, along with your hair net ;-) and a really nice apron! THEN you have a wine and cheese tasting. They let you try a out 9 different styles of cheese, mingle with your fellow classmates, and ask questions. It is worth EVERY PENNY. I really don't understand this. When I visited the Mozzarella Company, they told me that a pound of fresh mozzarella was almost $17 a pound! I'm from NYC, and the most I EVER paid for a pound of mozzarella at an Italian pork store was about $7.00, and the quality was IMMENSELY better. Cost of living in Dallas is supposed to be way lower than NYC. Why is this acceptable? As you can see below, the company has decided to weigh in on my review without actually tackling my comments. I don't really care what awards you guys have won. It's Dallas. I could open a pizzeria on the moon and get an award for best pizza on the moon. In New York City salumerias, the cheese is also made in small batches, (just like Italy), and the quality is (like I said above), immensely better than theirs. $17 is ROBBERY for a pound of fresh mozzarella, and I'm USED to buying my cheese from MAFIA RUN stores, so don't even try it. read more

They also offer samples of several different offerings, so you can get a decent idea of what you might like/dislike. Gotta love cheese. And boy do they have a ton. I sampled quite a few, but didn't buy any today with more errands to run and didn't want it sitting in the car. I was full when I went in but have been wanting to stop by and it's right next to Rudolph's meat market on Elm. If you go and sample you might want to take some water with you. I didn't have any and they don't sell it. Therefore the flavors started to run together and I was extremely thirsty and halted prematurely. Everything I tried was good though. Several of the Caciotta's with ancho chile from mild to medium, one with texas basil and more. I really want the Mascarpone Torta that's layered and looks like a dessert. One is a Basil Pesto, another is Sun Dried Tomato and Basil Pesto, and the list goes on and on. I bought a variety of cheese from them. I went in for the fresh mozzarella which is excellent. However, I bought a sun dried tomato and mozzarella cheese roll which was TERRIBLE. I suspect it was very old. I also got some goat milk's cheese which was good, Cabiotta or something like that in a yellow wax. I would go again to get fresh mozzarella but DO NOT buy mozzarella that's been fancy rolled with anything. Also make sure you read the dates that each cheese was packaged because I realized some of the goat cheese I bought was almost a year old. it tasted fine but for stopping in to a factory, I would expect to be sold fresher products. read more

Ordering from this company has been the worst experience of my life! After being told that I had to pay a 4% surcharge because I was using a credit card they called to tell me that they could not ship my order by ground and that I had to pay them an additional $77 for 2 day air and it was against there shipping policy to send cheese via 3 day ground. This made the shipping over $100. Then they charged my credit card before we worked out all the details and now 4 days later I am still waiting for my money back. I will never order from them again. The salesman never stated the shipping policy, but was fast enough in charging my credit card for the $500. The shipping policy is not on their web site and I was not given the option to change my order before they charged the card. read more

Dallas is really luck to have this place near by. I will admit, before visiting I really didn't have a real appreciation for cheese. I didn't understand the details and complexities of different varieties. It all changed when I took one of their classes. Last I checked, they offered 3 different classes: wine and cheese, beer and cheese and cheese making. my wife and I took the wine and cheese pairing class. That class opened my eyes to the world of artisan made cheese. We went into detail on all of the cheeses and the wines - it was really helpful and we had a really great time. They are a fun group of people and very knowledgeable and more than anything, it gave me an excuse to try all of the different cheeses. I still have to stop in around the holidays and pick up some of their christmas cheese. I also really love the Smoked Scamorza, likely my favorite cheese in the world. read more

I've eaten this cheese just about everywhere except Dallas, namely Austin, Southlake, and Fort Worth. I finally made my way over to pick up a bit of this local cheese, and they had way more than just Mozzarella. (the name fails to do the place justice) The inside is just a 10X10 room with a small fridge and a desk. The big room is the production room in which the workers are just cranking balls after balls. Of cheese. The selections were a bunch of types I've never heard of, but I decided to stick with plain ol' Mozz to see what the fresh stuff was all about. Sadly, it wasn't mind-blowing. It was just plain and stringy, but I even bought the salty kind. Also, it was about a week old. I would prefer produced-the-same-day cheese if I went to the origin. Whenever you have specialty shops, you expect whatever their specialty is to be close to perfect. The Mozzarella Company sure lives up to the specialty shop expectations! My girlfriend had heard a lot about this shop, so the other day after a quick lunch at Pepe and Mitos, we wandered over to the Mozzarella Co. It's a small space, but that's all they need. Once you walk in, there is a check out counter immediately in front of you. You can actually see the cheese making being done in the adjacent room. This is really what it means when they say "fresh" and "local"...this is about as fresh as it gets! The glass door refrigerators contain a wide variety of their cheeses...mozzarella, cow and goat. I wasn't feeling as adventurous, so I opted with the plain mozzarella. When I say plain, this by no means describes the flavors or the quality of this cheese. Top of the line! My girlfriend got a praline ricotta, and a sun dried tomato mozzarella. She loved them both! Right before we left, we opened the freezers that were lined up along the wall. They were packed with frozen lasagna and other pasta dishes! I can't believe that we almost overlooked those! Will most definitely be coming back to this spot.....many times! read more

Stopped in here on a whim last Saturday because I was in the market for Rennet. I was attempting to make my own mozzarella, and I couldn't find Rennet anywhere in Dallas. I thought maybe this place would have it/sell it/recommend where to get it. I walked in a saw they had little make your own cheese kits that included rennet. The lady at the counter was excited I wanted to try and make my own (that surprised me since it meant I wasn't in the market to purchase their goods). She told me I didn't need to buy the kit because they sold rennet seperately. Hooray!! I bought what I needed and then she brought out a try of samples for me to try. They were delicious. We did the cheese making class a few weeks ago. We had SO much fun!!! It is not a big space but still fun to have a tour and be educated about cheese making. We made ricotta (well, for cheese experts, we technically made paneer), mozzarella, a mozzarella olive roll and Oaxaca string cheese. We also got to sample, I think, all of their cheeses! What a great artisan cheese factory! Paula Lamberts own mozzarella cheese is here and once you enter the store you can see where all the cheese is freshly made. I tried their half goat/cow cheese and it was amazing. They had spicy cheese as well, but it wasn't super spicy, but it was tasty. They had a creamier cheese, which we ate plain, but I think it would be better off as a spread. For fun, our guide has us put both the creamy cheese and white chocolate in our mouth and eat it together--it tasted just like cheesecake because everything is so fresh. The cheese making class at the Mozzarella Company is awesome! Mauricio was informative and has a great sense of humor. He gave a brief overview of the history of the company - a great story, Dallas should be proud! - and the process. Then we had the hands on part and created various cheeses. The guys in the group (perhaps dragged there by their female partners!) really were engaged also - my husband took over and I had to fight to get my turn! Also, there was a team from the Mozzarella Company making this class possible, and their involvement shows their commitment to what they do: Create each artisan award winning cheese by hand for our enjoyment! This place is phenomenal! You can tell they put their heart and soul into making these gourmet cheeses. It is a Dallas staple and if you see it on a menu, you know you're at a great place. You are not going into Kroger here for some cheese, so do not expect the prices. You are getting a delicacy that they personally work their hands through (in Dallas) to make it the unique experience you're paying for. Unfortunately, the worst tasting mozzarella I've ever had. I really don't understand how they can make a product that is the quality of a Polly-o or other factory cheese and charge so much. They really need to take a quick trip to NY, taste real fresh mozzarella and they will better understand why the negative reviews. I'm sure the classes are fun, but I'm talking about the taste of the cheese. It is really bad, almost tasting like spoiled milk. Shame. If an A&S Pork Store from Long Island, NY opened up near this place, the Mozzarella Co would be gone in a NY minute. I guess it's just a matter of time. We got a tour of the facility along with a detailed explanation of the cheese making process, made several different cheeses, and finished the day off by sampling a bunch of Mozzarella Company products (with wine included). Mozzarella Company is snuggled in a storefront corner. Inside you will find two large freezers refrigerators with fresh pre-packaged cheeses, packed in 1/2 lb portions. The cheeses offered are varied, from oaxaca mexican cheese to smoked mozzarella to goat ricotta cheese. There are a LOT. The large windows behind the counter give you a glimpse into the factory area where the cheese is made. You can tell there's a little history here, what with the pictures and mementos on the walls. The cheese is very high quality, albeit pricey but of course, you get what you pay for. Excellent place to purchase specialty cheeses. read more

HOLY HELL IN A FRUITBASKET!!!!! THIS PLACE ROCKS!!!! If you are a cheese lover like I am (I think I am part rat or some kind of cheese-devouring rodent) then you need to make youself known there. So many cheeses to choose from and so little time. This outing I chose the Texas Goat cheese with herbs and the Pesto Mozzarella roll. The goat cheese was great-tangy, soft, and the herbs added the just amount of kick that one needs. The pesto mozzarella roll was ok-too much pesto in my opinion. WOW! This place is truly a Dallas Landmark and I am thrilled to have stumbled upon it. A friend was looking for some goat cheese - she found a great one in Austin at a farmer's market but we don't live in Austin - We were women on a mission! We tried the Dallas Farmer's Market - lots of fresh fruits and veggies, some farm eggs and local meats, but very few cheeses. We asked one of the meat vendors about goat cheese and he pointed us to Mozzarella Company. If you don't look closely you'll miss this place - it is non-descript and right on the corner of Walton and Elm. you walk in a see the huge tanks for cheese making, it is VERY CLEAN inside. They have coolers filled with cheeses - Goat cheese, fresh Ricotta, Marscapone Trifles, Mozzarella balls (my favorite is the one with Prosciutto). Then they opened up the freezer - they make fresh Sweet cream butter and I wanted some - it was filled with fresh pizzas and lasagnas. We came home to hungry husbands who tore into the cheeses with happy grunts escaping their mouths periodically. The pizza was easy to make (I put it on my Pampered chef Pizza Stone and BAM it was done) and it tasted fabulous. They have Cheesemaking classes for 75$ per person - if you have a group of 10 people you can get a private tour. read more

For being handmade and from scratch, these cheeses are pretty fantastico! I'm in love with the sweet cream cheese with pralines, I can eat that by the truckload. They don't give tours, but you can stop by their shop anytime and see all the cheeses being made. Pretty neat. And they give samples! Just hafta ask :D read more

That's right- down in the Ellum-- Paula Lamberts own mozzarella cheese co has been producing pounds and pounds of glorious goat and cow productions for 30-- yes you heard me- THIRTY years this year! I stumbled upon this place with a crew of fabulous females in my book and foodie group. We signed up for their wine and cheese class. It started at 630- a little early? No worries- drop in next door for a little pre class wine or cocktail concoction at local bar. Class started with an Aussie white wine and sampling of breads and a few cheeses. Of course all the cheeses are made there. Next was the class- full plate offering with over 10 cheeses! Over 6 different wines- including a port. All for the very reasonable cost of $50. I've done alot of wine tastings and their wine connoisseur does a fabulous job- did not disappoint! Great for a small group, girls night out, couples, etc read more

This place is amazing! My husband and I went to a cheese making class because we have tried several mozzarella company cheeses and are big fans. They make a great assortment of cheeses and we love supporting the best local shops. The class was also informative and so much fun!
