Came in midway through a long bikeride. The pasties themselves were pretty good, but priced at $7.50 I could only afford one. If they were just a bit cheaper I think I would have sampled more of them. Wasn't a lot of food for that price as I burned off the tasty pasty pretty quickly after a bit more riding and was soon hungry again. Perfect for walking and snacking on Tennyson! If you haven't been to this place, make time to do it. I live in the area and have walked by numerous times, pondering what a pasty could be. Well it's a flaky croissant-like exterior with pure deliciousness inside. I had the Southwest (chorizo, eggs, potatoes and cheese). The chorizo was excellent and although I worried that the pasty would be dry, it was not at all. All of the flavors were present in each note. As someone who had never indulged and, honestly, didn't even know what a pasty was, I was excited to try the Pasty Republic after passing it several times while walking down Tennyson. The food was good, but I'm not entirely sold. To begin, how would I describe a pasty? I would say it is a mix between a calzone and a pot pie, but lighter - basically just remove the sauce, and make it one-handed eating. The pasties were solidly made with enough structure to eat while walking the dog yet still flaky and delicious. I asked the woman at the counter to just give me something good and I ended up with the caretaker (chicken) and the harvester (apple & rhubarb). Both were quite good. The flavors spoke for themselves and this is definitely a good meal for 'on the go'. That leads me into why this is not a 5-star review. Price and setting. Setting: I wonder if the Pasty Republic might be better as a food truck or at least located in an area with a high proportion of working individuals looking for a quick bite to eat. I think it would be somewhat awkward and disappointing to have just one pasty while sitting at the restaurant. Price: When I came by (just before close), I was offered a happy hour special and enjoyed both the Harvester and the Caretaker for ~$11, which is reasonable but definitely not a good deal. As other reviewers have said, I think everything was about $1-$1.50 higher in price than they should be. I hope that this place does well and pasties are available for a quick bite to eat while I'm walking through Tennyson. read more

Why get fast food when you can get a pasty? This is going to be my new "I don't feel like cooking dinner" restaurant. I've only ever had a pasty once before, so I really don't know how these compare to the "real thing" but I loved these. We shared the Rock and the Foreman, and split one with Nutella for dessert. I love this place. They make the best pasties I've ever eaten, even better than the few I had in Cornwall. The crust is flaky and delicious, the fillings cut into big hearty cubes, and even their vegetarian selections are tasty and satisfying. Their luscious dessert pasties are of equal quality, though the pumpkin pie is a bit plain and doesn't seem to be stuffed as full as the apple-rhubarb one. They apparently also sell ice cream, but I've never tried it- who cares about ice cream when you could eat pasties instead? My only complaints are that their selection of drinks is lacking (just the same soda and vitamin water you'd find in any gas station convenience store) and that they're too far out of my way to visit on a weekly basis. Apparently they now have a food truck too, though! I hope it visits Boulder now and then. read more

Stopped by this place on my lunch hour and I ordered "the drover". It's a lamb pasty. I loved it! Wow, really good. I'm not sure what herbs were in this but it had lots of flavor. It was just the right size for lunch too, not too big and not too small. Also, this place is accross from a nice park so you can get your pasty to go and eat outdoors in the park. My obsession with this place started with the Shepherd's Pie at Civic Center Eats downtown on Thursdays. Since then I probably have tried all of their pies and have yet to be disappointed. Interesting place. I had never heard of a pasty. Very cool history lesson. They started in England in the 1800s - the coal miners ate them for lunch, and even had special metal containers to carry them and keep them warm along with hot tea. Apparently locations with a history of mining still serve them today. We had the breakfast varieties, which were good, but the others looked much better. read more

We grew up with family in the Michigan/Wisconsin region and have a great love of pasties. So we were extremely happy to find this place. These are, by far, the best pasties I've ever had in my life. We dropped ~ $100 to pick up a good amount of pasties (they have a buy 8, get on free deal, btw). I've had or sampled the Miner, the Shepherd, the Stout, the Joey, and the Caretaker. Each was absolutely perfect. The seasoning is done just right (not too much, not too little), they are absolutely filled with good stuff, and the crust is perfectly crispy. I was expecting some of the to miss or be off, but we haven't had a weak one yet. I, personally, thought the Joey sounded disgusting. My son decided to get it, but couldn't finish the whole thing. I helped finish it off and it. Was. Amazing. Not really my style, but I'd totally eat it again. I also talked to one of the guys working there and it sounds like they are happy to do custom pasties as well (just give time for them to pick up ingredients and build it). I'm big into Indian food and asked if they'd ever thought about doing Samosas. They mentioned have made chicken vindaloo pasties in the past! Truly awesome place! Went to check out the newly opened place and stood at counter for a couple min with gf with the staff just staring at us and talking to each other. It's not a super intuive set up and I'm never dying for a pasty so we took off. I came back and was helped and had a Rock and it was meh. Being a true Cornishman myself I really appreciated finding this place a couple of years ago and been several times since. The Miner is as authentic as they come and really does take you back to Cornwall. I haven't tried the others - I'm a Cornishman remember - the Miner is THE proper job!!!!! This place is awesome ! I became addicted to pasties when I lived in Wisconsin and when I heard about this place I came up from Colorado Springs to check it out. It's cute little bitty shop and they have several different varieties beyond what was available back in Wisconsin. The Miner Is pretty much the same as the classic version that I fell in love with , with chopped steak , potatoes, rutabaga, and onions. They have an Italian variation and a stout variation similar to a British steak pie, plus several other varieties. The crust is the perfect balance between light and flaky yet sturdy enough . Just the right amount of crust, not too much and not too little. The seasoning is just perfect and I actuallylike these a little betterthanthe ones I had back there. Well worth the drive, partly because I bought a couple dozen frozen ones to bring back and put in my freezer. And they're a dollar cheaper if you buy frozen ones and bake them yourself. I'm thrilled to find this place and will be back soon ! read more
