    I wish I lived closer to the Placid Baker, so I could go there for my bread every week. Everything I've had from here has been delicious, their bread loaves, chicken salad sandwich, fresh flavorful pizza, and, of course, their star item the almond croissant. There is often a line, but it moves quickly as the staff is very efficient. The seating area is tiny, but I've never not gotten a spot when I wanted one. Definitely a must if you are a bread/pastry lover!

    If I would own a bakery, I would die for the baker who makes that almond croissant. It was so not so sweet and crispy; I might dream about it tonight. This place isn't that big and I think they focus mainly on baking. I can tell they make pastry in the morning and bread later in the day. Ambiance is like a bakery factory and a decent place to sit. The biggest and probably the only thing that matters is the bakery part. We had the chocolate croissant and almond one. I might just come back to Troy for those. Short line and great service are a plus.

    My one sadness about Albany is that the pastry scene is virtually non-existent. WHERE AM I SUPPOSED TO GET MY CROISSANTS?! Luckily, The Placid Baker is here to save the day! I really like french pastries such as croissants and pan au raisin, and the ones here are buttery, light, and flaky. Pictured below is the morning bun, with the perfect amount of caramelized sugar to make the flaky exterior even more crispy. Thanks for helping me to get my pastry fix, you can't imagine how much of a better person I am once I get my carbs LOL.

It's cute inside and the service was friendly and informative. They let me know that EVERYTHING, even the puff pastry is made in house!!! Very impressive! I bought a couple glazed donuts to make up for the horrible pastry and donuts that I had this week from elsewhere. I'm so glad I did because they were fresh made and moist and the glaze was still wet! If nothing else they made was good, I would go back just for the glazed donuts! But everything is great so let's keep chatting! I originally decided to drive there to get the cinnamon bread that I remember as a kid. Unfortunately they were sold out. But they did have what they called Easter bread, which is s rich egg loaf, similar to Challah with red and golden raisins in it and the dough is lemon flavored. I bought a loaf of that and brought it home and made epic French toast with it! I highly suggest you do the same! I also tried their spinach pastry and "pizza" pastry, delicious! All the dough here just melts in your mouth without leaving a leathery film on your tongue which means it's real pastry made with butter! I have thus resigned myself to the fact that I will be gaining weight soon due to the frequency in which I plan to keep visiting this place haha!

Everything pretty much tasted bland with not much flavor. The oatmeal raisin cookie, cinnamon bread, and cinnamon sugar donut were just not worth the calories. The cinnamon sugar donuts were the worst as they were incredibly dense and tasted stale. There's street parking and the employees were judgey, but friendly enough.

I don't remember when I had a more perfect chocolate cupcake, each time I've come here, the quality and service are perfect! Consistency and good service is what I look for. The attention to detail, hospitality, and kindness from Christian, the young man who works there, is exceptional. As I wrote before, the bakery shares the parking lot with the Yemeni coffee shop Shibam next door. The Yemeni coffee is just perfect with Sweet Elevation's treats, so don't miss this spot if you visit next door. I hope they can work out on doing something together. I've gotten hooked on Sweet Elevation's chocolate cupcakes. I'm having one as I write this review (these really are the freshest and best chocolate cupcakes) with some Yemeni coffee from next door - who knew how perfectly they go together. I'm very picky when it comes to cupcakes, and these are so soft, fresh, moist, fluffy, with perfect frosting with the sprinkles! Each time! It's really cute inside the cafe. What I'm most picky about is service, and I'm impressed with Christian, he's a respectful gentleman, knowledgeable, and really helpful with recommendations. Responsible, helpful, paying attention, intelligent. People my age often complain about the younger generation, they should meet Christian, our world's future is bright with young people like this. The beautifully decorated cookies were delicious unlike others we have had that look great BUT taste awful. Hard and flavorless, after one bite, they are tossed aside. These freshly made shortbread cookies "melted" in your mouth. The butter flavor was subtle yet easy to pick out. The texture was firm yet crumbly, and they were moist! Many people wanted to know where they were purchased. I attended a Yelp Elite Event at Sweet Elevation Bakery in Latham recently, so I knew it was an outstanding bakery. I knew that they employ FT decorators/bakers for the cakes and cookies. I also learned that their Custom Cookies are a big seller. Businesses and families order them for special occasions.
