The food is hit or miss, and it often seems like they try to use presentation to make up for low quality. The Bloody Mary is one of those meal-in-a-glass things, which is fun, except for the cold bacon, which is gross. But in any case, I will never go back: The owner drove the local farmers' market away from downtown because for a few hours once a week in the summer it blocked a handful of parking spots in front of the restaurant (there is plenty of parking in downtown Waterville, even with the new college dorm looming at one end). That's just bad citizenship. Local business supporting each other is so basic, and if the Proper Pig isn't going to support small business owners (very, very small business owners, in the cases of these hardworking Maine farmers), then they don't deserve anyone's business. read more

This place was awesome and I'm not even a pork eater. Located downtown in an old brick building. I think it may have been a bank since there was a vault in the dining room. Enjoyed a delicious flight of their own beer. Ordered an a Veggie burger (haha) and my friend had The Propper Popper. Everything was delicious and plated beautifully. Ate here with my husband, father-in-law, and two small children. We all left happy with full bellies! Split the fried cheese curds and pork belly lollipops for apps. Talk about flavor!! The adults all got one of their deliciously creative burgers. Mine was the Razor Back (I think?) with two types of cheeses, pickled onions, peppercorn aioli, roasted tomatoes, and lettuce. Wow! We sat at the bar and had great service. Bar drinks were good, great bartender. Very attentive. We first had the wings, honey sriracha. The wings were super crispy. The blue cheese was thick and delicious. We then had bacon dusted fries and fried pickles. Pickles were good (ordinary), fries not soo much. Too much "dust" and not enough bacon. However, the last time I visit, I watched two women slowly get more and more intoxicated. They began to hit on and heckle the staff. When they left, they could barely stand and were stumbling and slurring their words. My friends and I were shocked as we watched them fumble and drop their car keys! One even fell over. We debated among ourselves whether to call the police, but there were multiple Proper Pig workers at the outdoor dining area, and we assumed they'd deal with it. Not at all accommodating to elderly or handicapped. Our party of six was placed by the kitchen and rear patio entrance, not the best location for two elderly handicapped persons. The menu focuses on attention-getting combinations and descriptions, and not so much on quality. (E.g., a burger with a glazed doughnut) The website menu has not been updated in a while; pity, they had some beers I would have liked to try. The actual beer selection was much smaller. Maine seems to be plagued with a proliferation of terrible restaurants. Don't even get me started about how much I hate the China Diner. To me the Proper Pig is a bar serving bar food , which is fine I suppose if you want a bar with bar food. The trouble I have with the place is that they are trying to convince me they are a restaurant and actually care about the food they turn out. The menu is boring. So much so I had to read it over trying to find something that wasn't an over priced burger or some pseudo trendy obnoxious dish with bacon. Bacon sprinkled fries? Ok, so I love bacon and pork products as much as the next guy but a celebration of the noble pig could certainly include more ambitious and creative entries then what is offered here. I was in no mood for anything coming from a cow or a pig on this night so I ordered the grilled salmon sandwich. That's another bitch, I really loathe menus that give their dishes cute names. If I wanted that crap I would go to Denny's for the moon over my Hammy. The sandwich was billed as a grilled salmon filet on grilled brioche. I think it had some wasabi mayonnaise on it , tomato , and the ever festive shredded lettuce. I didn't want the fries that it came with so I asked my server if I could substitute a little salad. She said of course , and my order was whisked away. Ten minutes later my plate arrived. The salad on one side of the plate and my sandwich on the other. How can I describe the feeling I get when someone overcooks a piece of salmon. Salmon to me is a glorious fish and despite what these fools seem to believe is best seated lightly until the meat takes on a soft solid pink color and flakes apart easily when poked gently with a fork. Your welcome, now you know how to cook salmon properly. This thing was closer to white than pink and would have been just as happy on a filet of fish sandwich as in my plate. Sorry , there fish at least isn't overlooked. The bun. I'm not sure what the technical definition of brioche is but I am pretty sure it is not a hamburger bun from Hannaford. The bun was stone cold , not grilled at all , which allowed all the slop , and only precious moisture remaining in this bleak act of fish abuse to escape as it sifted handily through the bun creating a soggy mess. I was forced of necessity to pick at the thing with a fork, whilst praying none of my fellow diners noticed my peculiar display. The salad was the one dab of shining acceptability in this otherwise tsunami of disappointment. The salad was a pleasing mix of spinach and arugula, which was really nice. I was delighted and surprised to see the arugula appear on the salad. I thought that showed a lot of bravery and confidence on the part of the chef. Well done sir. In conclusion, the service , atmosphere, and location of the Proper Pig are all very appealing and the food itself is not that bad , just like so many other restaurants I stumble into it could be so much better. Mediocrity is the kiss of death to a restaurant. I speak as one who owned a restaurant and knows what it takes to keep the door open. One more bitch and I'm through. When I was paying my tab I noticed a blank charge of $1.95. I enquirer with my server on this point and was told it was an up charge for abandoning the suggested fries that normally came with the sandwich. It seemed uncalled for and heavy handed to me. Tried for the first time last night. Four of us went, got seated properly even though they were busy. Lots of servers so getting waited on was quick and easy. I server was polite and knowledgeable about the menu. We were looking forward to getting a meals. We all ordered something different and when we left we all agreed that we would probably not be going back. The food was mediocre although the portions were plentiful. $12 for a Long Island iced tea was way too much! Especially since it wasn't very good. I got the Triple Double and was so horrifically upset. The bread was so hard it hurt my mouth, it crumbled into dust under my fingers, and the entire thing inside was soggy and tasted only of onion and grease. The patties were as dry as leather and the bacon was a sad mess. When I asked for it to be taken off the menu, the server claimed it was one of their best-sellers and that it may have been the "onion paste" they use, which is stated nowhere on the menu as an ingredient. I had to wait a FULL HOUR for this extremely upsetting food. When they gave me a complimentary bacon caramel cheesecake as an apology, the whole side of it was BURNT. The environment is too loud and obnoxious. The only good thing about this place would be the alcohol, and with the way the uproarious scene was, it wouldn't surprise me if that was the only reason people went there, since the food is not worth mentioning. A Proper Me I've been here three times and wanted to love the place every time. Service, however, remains notoriously inattentive, even when not busy. One Friday evening with a party of nine and hardly any people in the place the hostess took us to a long table outside of the glassed-in kitchen area, dropped a pile of seven (not nine) menus and seven rolled up napkins with silverware on the table and cooly walked away. Apparently, it is the patron's job to count out nine menus and silverware settings and to set the tables. When we were ready to order, we had to flag down one of three indifferent waitresses all of whom claimed that our table was someone else's responsibility. Only after insisting that one such dunce take our orders... "now" did one pause to do so. On to the grub. During my first visit, despite asking for a medium burger, I received an overcooked double-patty burger. Without time to send it back, I chalked it up to an out-to-lunch cook. I had a passable but dry pulled pork sandwich on a second visit. Recently the party of nine was seated just outside of the glassed-in kitchen where I had a great view of the entire kitchen. I specifically ordered "The Fitzy," an $11.95 "buttermilk bleu cheese burger with shredded lettuce, tomato, and horseradish mayo served on a grilled brioche bun" and asked that the meat be cooked medium. The waitress corrected me, "Medium-well." "No. I do not want a well-done anything. I want the burger medium with some pink on the meat: medium." Unbelievably she chirped, "Our cook doesn't like to do them that way." "What? Is he paying for my meal? If he is not I want it cooked medium," I insisted. "I'll try," was her bizarre response. She went to the nearby kitchen portal where wait staff communicates with the bald, middle-aged cook. I clearly heard her say, "He wants a medium burger." The cook responded with a smirk and shook his head, "No," as if this were the most outlandish request he'd ever heard. What pig universe have I entered and how is such surliness "proper"? I was delivered a very well done blue cheese burger. Everything on the plate was up to par except for the obviously pre-cooked, dry, well-done (not even medium-well) burger patties themselves. As I had no interest in diverting attention from my table's discussion to personally question the defiant cook, I ate the slop which would have been much better with a fresh single medium patty. Biting into the burger caused it to fall apart. I don't know who enjoys picking through a pile of crumpled burger parts on a plate with fork and knife but I don't. Eating it was a mess. The waitress made sure to avoid asking, "How is everything" likely fearing my "The food is crap" response. Another late-arriving member of my party witnessed this entire event but also wanted a blue cheese burger medium and made a deliberate second attempt to order the exact same burger in the same way. Despite our waitress's doubled efforts, the next burger was equally horrific. Others who ordered burgers had the same fate. Clearly, this was not an anomaly or a slight oversight by a cook having a bad night. This was a defiant cook unwilling to prepare food to order, someone, who thinks nothing of precooking burgers beyond the pale and who refuses to cook a fresh burger to order when asked. He apparently chides wait staff for unsuccessfully blocking customer requests. So why is this chowderhead behind the grill and what kind of owner tolerates such nonsense? If he is a co-owners, why bother coming into work? The Proper Pig needs to entirely rethink their burgers because this double well-done patty thing absolutely sucks and the rest of the food isn't much better. It's too bad because the place looks like it ought to have good food. It just doesn't... and there's no excuse for it. read more

I ordered buffalo wings and got thai wings. I ordered the haddock sandwich without bread and got salmon on rice. All the food was pretty tasty but left completely irritated. The establishment is very modern, clean and well kept. They have a very extensive beer list with many local brews on tap. But the food is not up to par. Everything is just so dry. The pulled pork sandwich.......dry, with some kind of oily, greasy sauce on it. Ribs were the same thing. Come to find out everything must be brought in and re-heated because they don't smoke on premises. We just left this fabulous little spot. There were 5 of us so we had a little wait. Very understandable on a Saturday evening. I ordered the cheeseburger soup as a meal. It was delicious and filling. The burgers that were ordered by our group were nicely presented on what looked like a pretzel bun. My daughter loved the poutine with sausage gravy and cheese curds. We definitely enjoyed our meal but the best part of the experience was our waiter, Zach. (Zack?). He was very pleasant and attentive. His customer service skills are excellent. Two of us went here for beers and a bite on a recent evening. It is a pretty cool setting but the prices were a bit high which would have been OK, but portions were skimpy. Neither of us was up for a full meal, so decided to split a couple of appetizers - Wings and Quesadillas. Wings were $10.95. I expect 10-12 wings in an order, but this one was only 7 (they brought 6, apologized and brought the 7th). Quesadillas were filled with chorizo, cheese and some peppers. Tasty, but they started out as 4 4" tortillas, filled and folded. Pretty small portion for $10.95.
