Be prepared for an occasional short wait on prime nights especially if there is a show in town. The louder pub atmosphere adds to experience. This is a great new place in town. I've been here twice, and both times I've left feeling quite content! They carry my favorite beer- Allagash White! Which is a perk! I've had the nachos here.... the cheese on the nachos is delicious! The ribs are very good as well; however, they only sell them as an apitizer. The cornbread is the best cornbread i've ever had!!! Sooooo good! Pig pen fen is the burger I had. It was very good! It has gouda cheese in the middle, which makes it oooohhhh so yummy! I've also had the Steel head Fred salmon sandwich which was also very good. Although the place is a bit small, they have great outdoor seating and the atmosphere is nice. read more

Great service and great food! We went on a busy night where a show was taking place nearby... so we did have a fairly substantial wait before being seated; however, once we were seated our waitress was spot on the entire time - she took our order quickly, stayed on top of refills, and made sure everything came out quickly and correctly. The pretzels and cheese were amazing - nice, bready pretzel with a rich cheese sauce that came out bubbling hot. I had a Bacon Strut with no tomato for my main meal, and that was excellent as well! The name said it all, had to go in and check it out. The vibe is casual, lots of gorgeous woodwork and very very clean...just the smell of bacon and luscious burgers. We started with the Beer Mustard Cher's Dip with Bavarian dough pretzel rods. Great pretzels, the cheese was slightly caramelized on top and a bit of a kick. Pork belly mini buns were very salty to my taste, yet they removed them from the tab immediately. Then onto the Chorizo Quesadillas, a little spicy, perfect blend of meet then cheese The staff and service is exemplary. read more

My favorite place in all of Waterville! They have The Glaze! It's a burger with bacon with the glazed donut as a bun. Even better ask the server for an egg on the sandwich! If you are on a diet this sandwich will blow it but OMG! Since the restaurant first opened and I started ordering the Glaze with an egg it's caught on! I hope someday they make it after me! Saw people checking in on facebook at the Proper Pig so we had to try it. Loved the atmosphere and style. Got there at 7pm on a friday night, 20 minute wait for a table. Immediately upon entering you are in the bar area. With the stools full of patrons it was very loud. The loudest of all was the bartender. She never stopped yelling, swearing and laughing. Unfortunately, we were seated next to the bar, in the corner. Not in the dining room. We were not drinking, had we been asked, we would have waited for a real table in the other room. For over an hour we could not hear each other, or the waitress. The food was good, burgers big, and prices decent. If we go back we will ask to sit in the dining room section. read more

Waterville is lucky to have this unique pub and restaurant. The owners have created a smartly designed interior with a great vibe. The menu is full of interesting items and the burger I had was really good. I like that there were two smaller burger patties rather than one large one. The burger to bun proportion was spot on! Overall, the food quality fell a little short of outstanding, but I think they struck a good balance between what local patrons will accept for price point versus food quality. I don't know if the burgers were frozen as some reviewers have pointed out. If they are, they are very flavorful and juicy frozen burgers, and that's OK with me. My burger and fries was only ten bucks. Belly up to the beautiful wood bar and order from one of the best draft beer selections in the area. Left Hand Milk Stout! I'll start by saying our server was delightful. She did a great job keeping glasses full and was perfectly attentive! However, the food and drinks left alot to be desired. Drinks were just ok and one actually curdled in the glass. Our server was fabulous about taking it way but it was a bit of a challenge to look at. We each ordered sandwiches and all had the consistency of having been cooked in a microwave. Brisket was chewy and dry and the pork belly the same. I typically don't leave bad reviews for places that I've visited, however, I was less than pleased with this place. My husband and I chose to have dinner here based on the location, the look of the restaurant and the reviews. When we arrived, there was a crowd at the bar and the restaurant was full. We enjoyed standing by the bar, enjoying a cocktail while we waited. The bar staff was friendly and efficient. We were seated at a high top table which overlooked the kitchen. I was excited to be able to see the kitchen in action, but was disappointed when i realized that nothing was being prepared fresh. It was basically a short order kitchen with fryers, a flat top grill and canisters that the cooks were ladling out of. I never witnessed any fresh food being prepared. We ordered wings and veggie chili for appetizers and decided to share a pulled pork sandwich for our entree. We waited about 20 minutes and our sandwich arrived before the appetizers. When the appetizers arrived, we had a mess of plates on our small high top table and were basically eating family style. The pork on the sandwich was dry. The menu states that it is smothered in barbecue sauce; it was drenched in broken, oily sauce. The vegetable chili was good and the wings were hot, flavorful and crunchy, albeit a bit salty. Our experience of being by the kitchen was uncomfortable as the two cooks were yelling condescendingly at certain servers about their lack of knowledge on menu items and mocking them as the servers walked away. Having been in the restaurant industry for many years, I have experienced many dynamics with the front and back of the house camaraderie, but I've always felt that when the front and the back of the house get along and work as a team, the restaurant thrives and the staff is happier. I don't know if this was a bad night for The Proper Pig, but I am not interested in visiting again to find out. read more

I came in for dinner with two of my close friends. It was my first time in Waterville and I was pleasantly surprised by the town. We ordered the poutine as an appetizer which was pretty good. The best corn bread, baby back ribs, New England clam chowder, and burger I've ever had. My partner and I are incredibly impressed by this establishment. The desserts are absolutely amazing as well. The combination of flavors were nothing like what I expected them to be. The flavors taunted and delighted my tastebuds with every decadent bite. The bar area is very nice but it's quite cramped between the bar and booths along the wall but it doesn't affect how great the food is and our drinks were done very well as well. Unfortunately, my first trip to the Proper Pig was not exemplary. A new person in the kitchen burned our order of salmon (an addition to a salad). This made for an extremely long wait for our food. We didn't find this out until my wife inquired about the long wait with our server. We were almost late for our appointment following our meal. The server should have let us know, and should have made some sort of amends for the incredibly long wait. At the very least, an offer of something to munch on during our 50 minute wait would have gone a long way. read more

I dined at the Proper Pig about a month after it opened. We were seated at a high top table by the kitchen which was a very small table. We ordered an appetizer which was fair at best. We then got our burgers which were not much better than you would get at any fast food restaurant. The buns were burned the burger was dry and overcooked. The prices were above average for what you got and you barely got any French fries.The waitress never came back to check on us and when she did she brought us out check and rushed us out the door. The place was busy and the manager asked for us to come back but after that bad experience, I have to say I'm less than thrilled to return. read more

Extremely disappointed in my experience here on a Saturday night during the 4th of July weekend. Both the food and service were poor. I got the Fitzy Burger, which had two paper thin tasteless patties, which in my opinion was way overpriced and does not live up to their cool gastro pub feel. My first impression was that these would be real handcrafted burgers with good quality beef, what I got was two frozen thin patties. Also, the service was mediocre at best, the waitresses had absolutely no personality and really didn't add the extra energy this place needs. Also, we sat on the patio that had a very disgusting sewer odor, which wouldn't go away. Overall, I was expecting so much more from this restaurant and it really fell sort of my expectations. read more

Overall, the food and service was not great. While sitting out in the patio, we continuously got whiffs of sewer smell, which was disgusting. Also, while sitting in the patio area, other potential patrons attempted to grab tables, however the waitresses redirected the guests to the front of the restaurant to wait to be seated. Many of the guests simply turned, and walked over to other surrounding businesses. As for food, I ordered the Brewster Rooster, which was a very small piece of fried chicken on toast with pineapple jam, which mostly tasted like cinnamon, something straight out of a jar. Others ordered the burgers, which were frozen, thin patties that had no flavor. Although the facade paints the restaurant and bar as something unique and different, the food proved to be nothing more than factory-style, tasteless food. When the manager cleared the plates from the table she asked if the food tasted alright. When we explained that the dish wasn't that good, she stated, "Well, maybe next time you can order something else." Well "Proper" Pig, there won't be a next time, and maybe she should have been more hospitable. read more

We ordered the pretzel with beer cheese sauce and an order of the bacon dusted French fries. The pretzels were good, but the cheese sauce was really good!
