Another rare 5 ...Been going here since they opened years ago, have had ZERO bad meals. Service and bartenders are extremely friendly and attentive. Decent ambiance good sized bar and ample seating in the rear of the place. The food is absolutely delicious, I don't know if they have some sort of southern cooking background but visiting Nashville, New Orleans and other southern states multiple times they definitely match just fine. Great on tap beer selection as well as good mixed drinks. Keep it up !

    Martini was amazing!!!

Hi Friends, Bebopped down to ole Waterville, ME to catch a show at the Opre House (Waterville Opera House). Got into town early, so I boot scooted across the green space and went to the Proper Pig for a late lunch. Their chowder is top notch, and despite the porcine themed name & logo, the waitress recommended the brisket sandwich. And said sandwich was a delight. With a near steampunk vibe in the interior, the place manages to feel both old school Maine and contemporary all at once I was not drinking, but they have a large selection of Maine based beers on their taps wall, including a cider So if you're gonna be in the Waterville area, it's well worth the stop. See y'all at the crossroads

Was in the area we stopped here on Saturday for an early dinner . Not from the area . Found it on google . The place was very dark and busy . Very crowded . We were lucky to get a booth . Most of the seating is high top . Checked out the menu before arriving . Was excited . Started with two apps . The pork belly pops . Not what we expected . I don't think they were cooked all the way . I had a hard time cutting with a fork , They were stringy not gelatinous and soft with 3 large tooth picks. The pork belly slabs were like 3-4 inches long. Could not eat them with a tooth pick , empanada were good . Guest had the Big Wig Pig which also had the stringy pork belly which they took off . I had the big chubs which was extremity greasy , could not pick up and eat as it fell apart . We ordered a coffee and a lemonade to drink . Both were good but charged full price for a refill . I got the caramel cheese cake to go . Please see picture attached . I think it was in house made as it was not sweet . Bacon was undercooked and soft . This pub food cost more than fine dining in my area . Not worth the price . Flavor was lacking . Waitress was too busy to be attentive . Also . Poor set up . People coming from the back door walking by all the people . And sweaty kitchen staff constantly running around the tables . Back and forth . Not sure what was going on. Definitely made it hard to have a peaceful , relaxing meal . While we were there there was a well behaved dog at a table near us . The workers were patting it . Be aware that dogs are allowed in case you are allergic . I did not see any signage regarding dogs .it was not marked as a service dog . People were sitting at a high top . It was on a leash .

We stopped to meet a group of friends and was pleasantly surprised how good the meal and service was. The table had four different delicious appetizers, fried cheese curds, crab cakes, poutine, and fried pickles. Keri and I shared a bbq platter that consisted of brisket (which was a little dry) the ribs and pulled pork both stole the show. They have a really good selection of local craft beers, some of which are rebranded with the name of Proper Pig. I think they are made by Waterville Brewing Co. The walls have whimsical pig signs. Our server was attentive, friendly and actually seemed to enjoy her job. We are definitely planning on returning.

Amazing. Loved it. Looking forward to my next trip in to try more savory items in the menu. Beer flight was good, great selection of beers! Food was delicious, salad and sandwich both came out quick and looking great. Service was fantastic, got plenty of attention up at the bar. Great elevated taproom and barbecue vibe. Definitely recommend!

Killer vibes, killer service. I got the burger, thing was gigantic and filled to the brim with beef and pulled pork, a butcher's dream. and my dream too. it was delicious, maybe could have had crispier fries and the ranch was a lil weird tasting but still good

Outrageously overpriced and the food is not that good. Poorly made sandwiches. Very rude staff. Will never go back!

The tables appeared to be cleaned with a gentle mist of wishful thinking, and I'm fairly certain the dust on the windows qualified for historical landmark status. As for management, I've seen more organization in a flock of startled pigeons. Every problem was met with the same expression: a blank stare that suggested they were hearing about the concept of customer service for the first time. The owners must be running a revolutionary new business model where profits are protected at all costs, including basic maintenance and paying employees enough to pretend they're happy to be there. The staff looked exhausted, underappreciated, and one server blinked "help me" in Morse code. Learning they've fired a server over a hearsay review confirmed my suspicions and compelled me to share my own experience in this unworthy establishment. The food arrived eventually. I'm assuming it took a long journey and stopped to see relatives along the way. On the bright side, I saved money on entertainment because the entire experience was a live-action comedy. Would not recommend unless you're conducting research on what happens when nobody is in charge.

But I had…read moreheard cushnoc was opening a cantina up the river and I've enjoyed their downriver establishment before, so I was excited enough to be slightly disappointed. It's still new, so there is still hope for them, but I don't think this place will last unless some things change. So here are my details... The prices are not very good, especially for the sizes. If they had counter service/seat yourself instead of table service, I might be able to get behind the prices, but with an added 20%+ expected tip, the experience didn't seem worth it. I can get better, bigger tacos for less money in cities that are typically more expensive like Portland. I can also get nice meals for reasonable prices right across the street here in Waterville. If I want to visit Cushnoc in particular, I would go to Augusta, where the establishment has a clear vibe, with better food, service, and prices. So realistically I don't see myself choosing Cushnoc Cantina again over other options. The atmosphere here was nice, decor was pleasant and clean, but didn't give an identity to the space. Cushnoc says this is NOT a Mexican restaurant, and I believe that after my visit. But then, what is it? But we were seated at a table placed directly where two benches came together, so I was seated on the lip of two benches, which was uncomfortable. It did not seem like the staff even realized things like this and other details about their space, their seating plan, etc. Our waitress was also clearly new to waitressing and was timid, which isn't a huge issue, but was indicative of a new establishment that has not found its groove. Now for the food, we had Cantina Tots, which was a favorite. The Tajin made them very salty, but the crisp tots with the fresh cotija cheese was great. I did notice cotija was not listed as an ingredient pf this item on the menu though, so not sure if this is what I would get each time. Next, we ordered the Esquites Caesar, which I was looking forward to because I have previously enjoyed the Caesar at Cushnoc in Augusta and I figured it would be a fun twist on that. Sadly, it was smaller for more $, the pork belly was chewy not crispy, it was dressed very lightly, and the flavor of the dressing was very light/bland. We also ordered several tacos. When I went to order fish tacos, the waitress apologized and said she forgot to let us know they were out of fish. They were able to make the taco with shrimp instead, which was nice, but we would have appreciated learning about this when seated rather than after selecting what we wanted to order. All the tacos were decent, though small. Many of the flavor profiles were innovative, with flavor profiles from cuisines other than typical Spanish/mexican influences. The carnitas was our favorite! We also liked the Beer-ia, but it was a bit cold. TLDR: they're new, haven't found their identity, and I'll be interested to see if they're able to last. I unfortunately am not planning to go back anytime soon.
