    Vegetarian entree with fried tofu, rice and vegetables.

    The Roost is located in the Queens Marketplace in Waikaloa Beach Resort. The Roost is a steakhouse and seafood restaurant. My husband ordered the seared ahi with rice and sauteed vegetables. I ordered the vegetarian entree with fried tofu, rice and vegetables. The seared ahi was good. The vegetarian entree was just okay but kudos for including a vegetarian entree. For dessert I had the carrot cake with a cream cheese icing à la mode. The cream cheese icing was too sweet for my taste but the ice cream was delicious. We were happy to be seated in a booth in the back room which was quieter than the front room. Service was good.

    We decided to get off the resort to try some of the local restaurants. The first issue we ran into is the address for the Roost on Google takes you to a residential neighborhood and more specifically someone's house! Luckily we had read this ahead of time, but still had to call the restaurant to figure out where they were (Queens Marketplace). The other issue was no one at the front desk or valet at the Hilton resort knew where it was which makes me think it's not well advertised or well connected. That said we got there early and found there were plenty of tables available. Our server was very nice. One of us ordered the lamb and the other the macadamia crusted Ono. The lamb was outstanding, perfectly done and seasoned just right. The Ono however was OK, the fish seemed to have been deep-fried or otherwise roasted at a high temperature and although the macadamia crust was tasty, it was rather dry, and the fish inside was also dry or perhaps overcooked. It wasn't terrible , but it certainly wasn't something to rave about or recommend. The per plate prices are quite expensive, so I would've hoped for a better experience with the Ono.

    I recently visited The Roost for Valentine's Day, eager to try this newly opened restaurant on the island. The ambiance was charming, but the lighting was excessively bright at first; it was only halfway through our meal that it was dramatically lowered to a more comfortable level. The kitchen was quite noisy, and we could hear the dishwashing in the background. They offered a prix fixe menu, with no à la carte options available. For starters, we had the stuffed mushrooms, which were small but decent. We chose the crab bisque and ahi tartare as our appetizers. The crab bisque was okay but lacked creaminess, while the ahi tartare had great textures and a nice chop; however, it was too dry and needed a sauce. For our entrées, we ordered the filet and airline chicken. Unfortunately, the filet, which I ordered medium rare, came out well done. The airline chicken was partially raw and pink, and very difficult to cut and eat. I would have sent the steak back, but the server didn't check on us during the meal. The truffle mashed potatoes served with the filet were flavorless and needed salt. Initially, I told the server I'd like a cocktail followed by a glass of wine with dinner. However, after our first cocktail, the server assumed I wanted another round without giving me the chance to order something different. In the end, with two cocktails each and the forced prix fixe menu, our bill exceeded $300 before tip. Given the price, I would have preferred many other restaurants along the coast. On a positive note, the cocktails were good, and I might consider returning to sit at the bar for a small bite.

    We stumbled upon this place and are so glad we did. The steak was fantastic and the star of the show. Will definitely be back!

Merriman's makes it easy. You get glad dishes of two options. My family loved and took full advantage of this option. My daughter got the island beef and the lamb chops. She preferred the lamb chops to the beef. My husband got the island beef and the catch of the day. I got the fish special that came with a spanakopita. It was delicious! I loved the flavors.

It's so good it makes you want a cigarette afterward--and I don't even smoke. I've come back many times just for that burger because nothing else I've tried on Hawaiʻi Island or Oʻahu comes close. Their tater tots have developed their own fan club, and the little bar with beer, wine, and cocktails makes it dangerously easy to linger. The staff is consistently warm and welcoming. After being away for six weeks because of a family emergency, one of my first stops after returning was this burger. It was still outstanding, but I did notice the beef patty seemed about a third to nearly half thinner than I remembered. At around $20, that's noticeable. I'm hoping it was just an off day because this place has earned enough goodwill for me to give it another shot. Don't overlook the butcher shop itself. The meat quality is miles beyond what you'll find in a grocery store. I bought their ground beef for a ragù alla Bolognese, and it was so spectacular that I went back specifically to buy more for homemade burgers. Bottom line: this is one of the hidden gems of the island. I found out that I enjoy the taste of fresh grass fed beef, while my family did not. They did not think the meat was fatty or tender enough. This is because grass fed cows are much leaner and don't have their feed come to them. Anyway, I enjoyed my dining experience here and if you're curious, you should definitely come and give it a try! If you're inclined and know how to cook a mean steak, and staying somewhere with a kitchen, grab your supplies here.
