If you drive around the big island you will see lots of cattle just out grazing. I really wanted to try local Hawaii grass fed beef while on the big island. Waimea Butcher Shop is a good place to try them, (it is also a restaurant)! You will be served with warm & friendly service. I found out that I enjoy the taste of fresh grass fed beef, while my family did not. They did not think the meat was fatty or tender enough. This is because grass fed cows are much leaner and don't have their feed come to them. Anyway, I enjoyed my dining experience here and if you're curious, you should definitely come and give it a try! Not only do they source local beef, they make a mean brisket and pulled pork, AND they make dog food! I'm so glad I come down to Waimea regularly for work that I can restock on food for my pup. He absolutely loved the raw dog food mix with beef and sweet potato. Oh! Don't forget that this isn't just a butcher shop, it's a take out and sit down restaurant with a nice bar selection! On certain nights they have live music too. Vibes are everything here. Service is so on point. Everyone is super nice and friendly. I learned a lot about Empress Gin (now my favorite choice for a cocktail). The food always comes out amazing. Pulled pork was moist and flavorful and the brisket, perfect! Did you say grass fed beef? They're not only a butcher, but also a restaurant. O had their ribeye and it was very tasty. The steak was a little tougher than I'd like., but it was still very tasty. Not sure if that was because the grass fed beef is leaner. You know it's fresh though. They also have dry aged beef, which I will have next time. I sampled the Bavette from my family and it was very good. Their chimmichuri was tasty and could go on any of their entrees. It's that good. The staff was very easy going. They have lots of parking. My wife and I had high hopes for a great lunch at a restaurant & butcher shop that sources local cattle and makes a 16-hour beef brisket. Unfortunately, the star of my beef brisket plate was three slices of beef brisket that was dry in the middle. For sides, I could have BBQ beans or rice. I took the rice. The plate also includes cole slaw, dill pickles, and very thinly sliced onions (which I loved). My wife had the sausage plate with the BBQ beans. We did not think the BBQ beans were anything special. The cole slaw was very tasty. We both tried her sausages and could not figure out what we were eating. It seemed like someone had stuffed a sausage casing with ground beef. We did not taste the bacon that is supposed to be in the sausage. These sausages were a disappointment. Upon arriving, we walked into the shop, were handed two menus, ordered at the register, gave my name, and then found our own table. When the food was ready (about 15 minutes later), they came to the dining area and called my name. I answered and both dishes were placed on our table. I hate leaving a negative review because I always hope for the best in a restaurant. But when I eat at a restaurant that I do not want to return to, I feel it is my responsibility to let others know. I almost feel like Waimea Butcher Shop is a butcher shop first and a restaurant second. Maybe their butchered meat is great for people who use them as a butcher shop. But, as a restaurant, I think they have a way to go to come close to other restaurants that sell beef brisket on the Big Island. Perhaps their dinner service is better than their lunch service, but I will never know since I will not be going there for dinner. Made a reservation for 5 people on Yelp for dinner at Waimea Butcher Shop and really glad I did. If you're on the hunt for BBQ made with local grass fed meats -- this is the spot. More than just high quality BBQ meats, the sauces here are next level. They have some real bold flavors including intense heat with their chili pepper water. We actually ended up buying two bottles of their chili pepper h20 to-go. Yeah it had a kick but boy was that burn addictive. Here's everything we ordered for starters: Smoked fish dip with a toasted baguette-- loved the addition of thinly shaved radish on top too. Laulau sausage with a "poi sauce" and a tomato lomi, this is the dish that came with the chili pepper h20! Super unique dish with the light poi sauce. Beef tataki -- NY strip with a ponzu sauce For mains we got: Combo plate with smoked brisket, pulled pork, and sausage which came with 2 sides-- we got the mashed potatoes and smoked carrots. Cheeseburger-- smashburger style with really fresh tomato and shredded lettuce. Only thing is that they don't serve fries with it :( Chopped beef sandwich-- didn't get to try this one but 2 people in our group ordered it and really liked it! Glad we stopped in, but not sure we'd return. Based on the website and other reviews, we were expecting a steakhouse. This is a cute spot in the corner of a strip mall with live music, which was nice. However, the ambiance is more "fast casual" than steakhouse vibe, which was surprising (at least to us) based on the menu and prices (high, even by Waimea standards). The lau lau sausage is the best thing on the menu at $21, served with poi, tomato pico de gallo, and chili water. Very creative and very tasty. We wish everything on the menu melded Hawaiian island and chophouse cuisine as well. The Dino beef rib was very highly recommended, which comes with two sides. As a rule, we order beef ribs wherever it's in the menu, so we were excited to give it a try. However, it was mostly bone and fat for the hefty $52 price tag. The sides were small and more greasy than flavorful. The smash burger was solid, which is a must for a restaurant that boasts a butcher shop (which we didn't see in premises). However, it does not include a side (eg, fries or salad would've been nice for the $20 price). Service was friendly, and free parking is plentiful. read more

Stopped by this butcher shop for a quick look and they had a lunch menu. We had to try it. They sold premium cuts of meat. From Dry Aged to prime Toahawks. I order The Beast. The service was quite slow. We waited at least 20 minutes for our food to be served. However, it was a massive piece of art. The meat was smoked tender. LUNCH REVIEW: Come here for lunch (10-4pm), get the cheeseburger ($19) and be a very happy person! There are no sides with the burger/sandwiches but you honestly don't need them. You order at the counter and they have a large communal table for sitting but it looks like they do a lot of take-away business. Very highly recommend! Very casual atmosphere. We had live music which was fantastic! I had the Filet in the Demi glaze with mashed potatoes. I'd highly recommend the Filet. Very tender and delicious. My hubby had the BBQ plate that was a trio of Shredded Pork, Brisket and Sausage with a side of smoked carrots and baked beans. They were out of sausage but more than made up for it with additional Brisket and Pork. The BBQ sauce was great and the meat was fantastic! Again, I'd highly recommend! My honey and I visit Waimea every January to spend time with an aunty and uncle and stumbled upon this gem 3 years ago. It has become a multiple times a trip stop for the best local beef products and sausage creations you could imagine. Their butcher, Mitch is actually a childhood peer from elementary school on Oahu, and he recognized my mother (probably 20 years since she'd last seen him) when we walked in for the first time because I had suffered a bee sting and was searching for ice. Even before assisting in my injury, his first words out were "hey, do I know you from Maryknoll?" What a meet cute. What a small island. And this is truly a testament to the beautiful family environment and welcoming feel of the butcher shop. A few months ago, they opened a brick and mortar restaurant, which we haven't yet been able to try. But every visit to the storefront is welcomed with big smiles from the staff, and an incredible knowledge of all things meat. Not to mention, they boast the largest whiskey selection on the island. Ate dinner here for the first time and food was really good and worth the price. Local live musician was also really great and service from the small yet efficient staff was really friendly and welcoming. It's a relatively small dining area but the ambiance is rustic with fun movie themed art and other artistic decorations. We shared a beet salad and the bbq mixed meat plate with side of smoked carrots and mac salad. Everything was perfectly seasoned and high quality. Quite good food. The steaks and burgers are first rate. They have a nice Caesar salad. The only reason I didn't give them five stars is that it seems they all too often run out of some of my favorite dishes. The staff, including Katie and Nate, are just wonderful. As good as the food and the staff are, the star of the show is the chance to watch and listen to Franz sing and play his magical acoustic guitar on Saturday nights. If I lived near here, I'd be in big trouble, because I'd drop a lot of change in here. It's a meat-lovers, low-carb diet heaven. Grass-fed beef. The meat all comes from a long list of local farmers. Fresh meat. Dry-aged. Cured. Frozen meat, chili, and fresh and frozen sauces. A little swag for sale. Three types of beef jerky and pipikaula. I stared longingly at the dry-aged ribeyes, wishing I could have stored some and brought them with me back to Oahu the next day. Instead I nabbed some pipikaula and a cheesesteak. There's a good selection of sandwiches. I would have loved to dig into one of their plates, such as the brisket or ribs, but I got the sandwich to go because I needed to get back to Kona. It's easy to miss. It's located in the lower level Waimea Buiness Center, a sage-green building kitty-corner to HPM. If the parking in front is full, there's more just a little ways up, but you'll need to walk a bit. There are two seating areas, one by the cases and counters, and more in another room. You need a key for the bathroom, which is outside and around the corner. Minor quibble: They have boxed water. Great for the environment, but the water doesn't taste good. Lots of other non-alcoholic and alcohol options available. Next time I'm on Hawaii I'll make sure I have time to go here again! read more

We stopped in before heading out on a hike. Had heard about this place and our son who lives on the island had never been. Tried their pastrami sandwich. It is very different than your typical pastrami sandwich as it is served on a roll rather than rye bread. Pastrami is fresh and very tasty. It is a quaint place. There is a big table in the middle room to sit, for dinner they open up the other side for more seating. Ordered at the register and they bring you your food. You leave your dishes and they will gather them for you. We ordered the chili bowl and a combo plate which comes with smoked brisket, pulled pork and sausage. Delicious steaks and sides. Was very curious about the Bavette because I've rarely seen it in a menu anywhere and it didn't disappoint. The Chimichuri was an excellent accompaniment. The dry aged NY strip was also perfect. You could taste how the aging process had tenderized the steak as well as that unique flavor of ever so slightly funk that only the aging process imparts. My only disappointment was that the dry aged ribeye was not for sale. They had them in the butcher shop as well as a few tomahawks but they weee saving them for the holidays according to the waitress unfortunately. The sides were also very well done. The cocktails were delicious and the wine by the glass was had enough variety for me. Service was prompt and friendly. Waimea Butcher Shop really hit the spot. I got the combo plate and it was seriously delicious. The brisket, pulled pork, and sausage all had a nice smoky flavor that was perfectly balanced. Nothing was too overpowering, just solid BBQ done right. The side of beans was tasty too and went really well with everything on the plate. What really stood out to me was the Lau Lau sausage. It was something different and super flavorful. There was a little bit of heat, but nothing crazy. Just enough to give it a kick without taking away from the taste. My coworker ordered the Cheese Steak sandwich and said it was amazing. Definitely something to come back for. The best thing I tried was the salad with the green goddess dressing. Their burgers are about the best I've ever had! 2 smash patties, cheese is melted, fresh bun. I've had a few of their lunch plates and the meat is predictably awesome. We entered at 4:30pm and were told dinner service would begin at 5:00pm. So, we ordered two appetizers from the Bar Menu: smoked fish dip and the chicken liver pate. Both were served with toasty bread slices. The smoked fish dip ($21) is more like fish salad with celery bits inside, garnished with slices of radish. While flavorful, the fish dip is more like what I'd expect in a fish or tuna sandwich. It wasn't the smoky spread we were expecting. The chicken liver pate was delicious but a bit salty. It had an olive tapenade on top. The receipt described the chicken liver pate as lamb pate - $26. We felt the appetizers were delicious but overly salted combined with the toasty, salted bread. For dinner, my husband ordered the fish special ($50) and I had the Spicy Lamb Ragu with pasta ($41). We each had a glass of the Cab Sauv ($16 per glass). When we first ordered the appetizers, he got a sampler of the beer on tap. Later, when the entrees came he asked for that beer and the wait staff explained that the dispenser had blown out. So, he ordered a glass of Cabernet Sauv. Later, when we left the restaurant, I noticed we were charged for three Cabernet Sauvignon's. I think the beer sampler was mistakenly charged as a Cabernet Sauvignon. I wish I could have brought this up before we left. We split the bill, with tip it came to $117 per person. We felt this was rather high. We sat at the end of a large communal table. Refrigerated meat and other locally sourced items (chocolate, coffee, t-shirts, mugs) surround the long table. The other room had more individual tables, but we weren't offered to sit there. It looked, and sounded like a gathering was happening in the other room. If you spend that much money on dinner for two, you want more personable service and ambience. We were eating in the retail area so that fine dining experience was not to be had.
