    Not only do they source local beef, they make a mean brisket and pulled pork, AND they make dog food! I'm so glad I come down to Waimea regularly for work that I can restock on food for my pup. He absolutely loved the raw dog food mix with beef and sweet potato. Oh! Don't forget that this isn't just a butcher shop, it's a take out and sit down restaurant with a nice bar selection! On certain nights they have live music too. Vibes are everything here. Service is so on point. Everyone is super nice and friendly. I learned a lot about Empress Gin (now my favorite choice for a cocktail). The food always comes out amazing. Pulled pork was moist and flavorful and the brisket, perfect! I truly recommend this to anyone driving through or staying in Waimea!

    * ** *** Atmosphere is terrific. Plenty of locals coming and going - with lots of fun banter. Clean and nice "authentic" feeling to interior or business. First Plate: Ordered a combination plate with Brisket, Pulled Pork, and Sausage. "Simply the best" Pulled Pork I've ever tasted ...12/10 ... superb !!! Second plate: Beef Brisket - incredibly fatty Brisket on second plate, which probably should "not have been served." Disappointing is how I'd describe the dish. Beans were a nice touch - uniquely prepared. The negatives are: - late 40's or 50's (owner?) Guy at the register and delivering plates was "less than welcoming" to say the least. Not a warm or prideful interaction ... felt like we were an imposition on him. $82 total

    Did you say grass fed beef? They're not only a butcher, but also a restaurant. O had their ribeye and it was very tasty. The steak was a little tougher than I'd like., but it was still very tasty. Not sure if that was because the grass fed beef is leaner. You know it's fresh though. They also have dry aged beef, which I will have next time. I sampled the Bavette from my family and it was very good. Their chimmichuri was tasty and could go on any of their entrees. It's that good. The staff was very easy going. They have lots of parking. Hope this helps. Alooooooha and happy eating.

    My wife and I had high hopes for a great lunch at a restaurant & butcher shop that sources local cattle and makes a 16-hour beef brisket. Unfortunately, the star of my beef brisket plate was three slices of beef brisket that was dry in the middle. For sides, I could have BBQ beans or rice. I took the rice. The plate also includes cole slaw, dill pickles, and very thinly sliced onions (which I loved). My wife had the sausage plate with the BBQ beans. We did not think the BBQ beans were anything special. The cole slaw was very tasty. We both tried her sausages and could not figure out what we were eating. It seemed like someone had stuffed a sausage casing with ground beef. We did not taste the bacon that is supposed to be in the sausage. These sausages were a disappointment. Upon arriving, we walked into the shop, were handed two menus, ordered at the register, gave my name, and then found our own table. When the food was ready (about 15 minutes later), they came to the dining area and called my name. I answered and both dishes were placed on our table. I hate leaving a negative review because I always hope for the best in a restaurant. But when I eat at a restaurant that I do not want to return to, I feel it is my responsibility to let others know. I almost feel like Waimea Butcher Shop is a butcher shop first and a restaurant second. Maybe their butchered meat is great for people who use them as a butcher shop. But, as a restaurant, I think they have a way to go to come close to other restaurants that sell beef brisket on the Big Island. Perhaps their dinner service is better than their lunch service, but I will never know since I will not be going there for dinner. I truly wish them success in the future and if my comments in this review help them, great.

    Dino beef rib ... looks great, smells delicious, but you're paying for 70% fat and bone.

    Glad we stopped in, but not sure we'd return. Based on the website and other reviews, we were expecting a steakhouse. This is a cute spot in the corner of a strip mall with live music, which was nice. However, the ambiance is more "fast casual" than steakhouse vibe, which was surprising (at least to us) based on the menu and prices (high, even by Waimea standards). The lau lau sausage is the best thing on the menu at $21, served with poi, tomato pico de gallo, and chili water. Very creative and very tasty. We wish everything on the menu melded Hawaiian island and chophouse cuisine as well. The Dino beef rib was very highly recommended, which comes with two sides. As a rule, we order beef ribs wherever it's in the menu, so we were excited to give it a try. However, it was mostly bone and fat for the hefty $52 price tag. The sides were small and more greasy than flavorful. The smash burger was solid, which is a must for a restaurant that boasts a butcher shop (which we didn't see in premises). However, it does not include a side (eg, fries or salad would've been nice for the $20 price). Service was friendly, and free parking is plentiful.

    Stopped by this butcher shop for a quick look and they had a lunch menu. We had to try it. They sold premium cuts of meat. From Dry Aged to prime Toahawks. I order The Beast. The service was quite slow. We waited at least 20 minutes for our food to be served. However, it was a massive piece of art. The meat was smoked tender. I didn't taste the sausage as the BBQ tang took over. Over, a nice place to so for lunch.

    So disappointed we did not get to try the brisket! They were sold out for the day. Great ambiance. Quick service. Absolutely delicious sandwiches! We got the pulled pork and bahn mi sandwiches and shared half and half. The flavor of the bahn mi was on point! Everything was so good.

    LUNCH REVIEW: Come here for lunch (10-4pm), get the cheeseburger ($19) and be a very happy person! There are no sides with the burger/sandwiches but you honestly don't need them. You order at the counter and they have a large communal table for sitting but it looks like they do a lot of take-away business. I can't speak for the butcher shop itself but they had very full meat cases of what looked like quality steaks and sausages...etc. I will definitely be back to try dinner!     My honey and I visit Waimea every January to spend time with an aunty and uncle and stumbled upon this gem 3 years ago. It has become a multiple times a trip stop for the best local beef products and sausage creations you could imagine. Their butcher, Mitch is actually a childhood peer from elementary school on Oahu, and he recognized my mother (probably 20 years since she'd last seen him) when we walked in for the first time because I had suffered a bee sting and was searching for ice. Even before assisting in my injury, his first words out were "hey, do I know you from Maryknoll?" What a meet cute. What a small island. And this is truly a testament to the beautiful family environment and welcoming feel of the butcher shop. A few months ago, they opened a brick and mortar restaurant, which we haven't yet been able to try. But every visit to the storefront is welcomed with big smiles from the staff, and an incredible knowledge of all things meat. Not to mention, they boast the largest whiskey selection on the island. If you're a lover of all things food, and an adventurous eater, please go give them a visit!

    Great service, good amount of space, and the food had good flavor! There was live music (I went on a Saturday night). Lunch time is order and sit, dinner time is more of a restaurant server style.

    Quite good food. The steaks and burgers are first rate. They have a nice Caesar salad. The only reason I didn't give them five stars is that it seems they all too often run out of some of my favorite dishes. The staff, including Katie and Nate, are just wonderful. As good as the food and the staff are, the star of the show is the chance to watch and listen to Franz sing and play his magical acoustic guitar on Saturday nights. He is worth driving from the other side of the island to enjoy!

They were very kind and did not have a second thought on making the poke to make sure I had a taste of their poke. They ended up slicing a whole new fish for me and If that doesn't show you their hospitality, then you need to see it yourself. Their fish was so fresh (ahi tuna), and the lomi lomi salmon was super refreshing. My girlfriend had the same meal but what they already had chopped up and she said it was just as fresh as the one they made for me. Definitely one of my favorite spots on the Kona side for poki and for their hospitality. 11/10 would come again!

The fish was cut poorly with small uneven chunks throughout and while the marinades were flavorful they fish quality was not great. The sides of kimchi and spicy crab were pretty tasty but given it's a fish market we were pretty disappointed. Maybe it's because we came around 1:30pm but the lack of fish options and the portion was pretty paltry. $20 for a plate really isn't bad but the scoops were so sad looking. You can see from the picture alone how small the scoops of poke were and the uneven small end pieces of fish.

Loved the flavor of the spicy salmon which tasted like a gochujang seasoning. I'm not a huge fan of mayo in poke so this was great for something spicy without the creaminess of mayo. Ahi was great as well, the Hawaiian flavor is on the lighter side but it did taste very fresh. It's on the pricer side for supermarket sushi but it's definitely better than what I usually see in the states.

I couldn't figure out why and husband said it did not seem fresh. That's it. The texture or flavor was not what it usually is. It was ok but they have served better. I have been craving this poke for weeks too. It was so bad that I just didn't feel like stopping by another day. Maybe, next time we visit, the poke will be fresh. Keep in mind, this is one of the only grocery stores around this area so be prepared for some very high prices on water and snacks. Convenient items needed are very pricey as well. Excellent customer service will make up for all those things though. I'm sure I will be back. Oh, and I cannot forget my butter mochi. Another craving I get in Hawaii. I will wait to hit the grocery stores for this and it never disappoints.
