We love this place! Great for a good steak dinner date night. We often sit at the bar.

The meat pile, some of the best beef with bone broth and chimichurri over the top and then some fantastic dinner rolls

If you haven't been to this popular restaurant in Fort Collins Colorado you need to go pretty soon. It is just an amazing place just to walk in and have a drink or something. Let alone have one of their phenomenal entrées or appetizers like this is the meat pile we had for Valentine's Day and we had to go back about 10 days later for another one.. services hours near perfect so I have nothing else that I would need from a restaurant! Of course the restaurant is fairly nice so don't wear sweats and a T-shirt like I did.

Ribeye Steak, absolutely tender & delicious, best steak ANYWHERE, with twice-fried breaded fries. OMG, outstanding!!!

When a steakhouse expects me to pay $50 for a steak not much bigger than an iPhone, my rule is - - it better be perfect! And, IT WAS at The Still Whiskey Steaks in Ft. Collins! Matter of fact, our entire dining experience was totally amazing when we stopped in for lunch. First of all, service was OUTSTANDING -- fast, friendly, and informative with a casual vibe. I had the Ribeye medium well, my wife had the New York Strip medium. BOTH were cooked to PERFECTION, juicy, tender, flavorful and exceptionally delicious! I'd pay $50 for this steak anytime -- makes me cry how many times I've paid even more for steaks that delivered far less. Also had the Rocky Mountain Oysters for an appetizer -- OMG, the best we've had in Colorado or Wyoming for over 30 years! Tender and tasty without too much breading and the perfect cocktail sauce, just excellent! And of course, the libations are insane, with dozens of choices of top shelf whiskeys, liquors and cocktails to wet any whistle. Bottom line, The Still Whiskey Steaks is worth more than an hour's drive from anywhere if you're looking for the perfect steakhouse! We will DEFINITELY be back for a long time to come.

3.5 rounded to 4. The ambience is nice! The decorations were nice, and the lighting gave a good vibe. We came here for the Rocky Mountain oysters, which were chewy and fried nicely. They tasted great with the sauce. I got the New York strip steak with jalapeno cream corn on the side. Honestly, I felt like the steak was just okay... would not get it again. The sea salt caramel lava cake was really nice! I enjoyed it a lot, and it was plated beautifully.

I really enjoyed dinner at this restaurant. We started with dinner rolls served with a beef tallow candle made in house. The presentation was pretty cool and had a wonderful, bold taste. The steak was cooked the way I asked and had good flavor. The mac and cheese as ok. I tasted a sample of the Brussel sprouts and wish I would have ordered those. The waitress was super nice and the restaurant was quaint. I would absolutely recommend for a great dinner experience.

Pork grilled cheese sandwich was on point soooo good.

This was my favorite restaurant hands down while visiting Fort Collins. The staff was amazing also.

Good steakhouse right in the heart of FoCo. Our group was looking for a good late-night option for dinner and we landed on The Still Whiskey Steaks for a 9:30pm reservation (Saturday). Great ambiance inside with exposed wood and plenty of space. Nice bar selection with a ton of variety especially for whiskey/bourbon spirits and cocktails. We got a round of drinks and everyone enjoyed theirs. I forget what I ordered but it was a gin cocktail and I liked it. My husband got the Old Fashioned flight over nitro and he liked them all. We started with the warm buns with honey butter and opted to get the melting tallow candle with it. Delicious. The bread was warm and served in a skillet and the butter and tallow were really the stars of the show. Super yummy. We shared an order of wings and they were fine. I like mine a little crispier, but still very enjoyable. My husband and I split the 12oz ribeye topped with bourbon caramelized onions and a side of mashed potatoes and veggie succotash. The sides were all great, especially the mashed potatoes. We asked for medium rare and the steak came out more on the rare side. It was an ok steak. A little grisly but tender and fatty. My ribeye looked a lot different than my friend's whose was leaner and less fatty. I'd consider ordering again because the flavor and seasoning was good. But I also love they have variety especially for sandwiches and burgers. Service was really good and they seemed to all be working as a team. Overall, a good spot to enjoy dinner.

The special surf and turf of Hanger Steak and Colossal Shrimp.

Having eaten here a few times, we brought a friend to The Still Whiskey Steaks for dinner confident that it would be a great experience and as expected, the food, the service, and the ambiance was excellent. We showed up for our reservation (which is highly recommended since this place is very popular), and were promptly seated upstairs as we requested. Our server Devin came by shortly and was just delightful. She told us about the special which was a surf and turf of Hanger Steak and seriously huge colossal shrimp so our guest and I ordered the special. My wife ordered the ribs. When the food came, the presentation was wonderful. The steak was medium rare with the right amount of pink in the middle making it buttery tender. The shrimp were plump and juicy and had the perfect amount of char. We are from Texas and we know BBQ, but my wife said the ribs were better than any BBQ we've had in Texas. Thanks to Devin our server for the great service and the backend team for delicious food, we had another great evening at The Still Whiskey Steaks.

The ambience is really nice inside. It has solid decor and nice tables/lighting. The Rocky Mountain oysters were a good amount of chew and it tasted really good with the sauce. It was seasoned really well too. I got the pork schnitzel and it was really tasty. It was crispy with some mushroom sauce over it. The portions were good and I felt really full at the end. It had mashed potatoes and Brussels sprouts, which I wish was a bit sweeter and caramalized. Overall a solid meal

My sister has Alpha Gal and Tony our server went over & above to make sure she had a delicious meal!

They trimmed the bone end and pushed all the meat to the top. This made them less fatty and stringy, more crispy and delicious. Their short rib croquettes were also amazing. I'd never had a short ribs prepared this way stuffed inside a tasty pastry with potato and cheese. They are my new favorites. I was so full on appetizers that I went straight to dessert next and I have to say that their cookie dough creme brûlée. It wasn't too sugary and the cookie dough flavoring was not overpowering. Simply fantastic way to end a meal. I even took home their brownie and ice cream for my housemate. They said it was the best brownie they've ever had.

On the first trip I discovered Choice City Butcher and the best damn hamburgers I have ever had, anywhere, bar none. I returned for a burger pilgrimage at least once on every trip since. The vibe was casual (order at the counter/bar) and the beer selection was outstanding. This last year I went back for my yearly trip and was excited to introduce one of my colleagues to this place. As soon as I walked in, it all seemed different. The beer taps were gone, a waiter (!!) greeted us and seated us in a foofy feeling booth. I inquired about the changes and found that the ownership had changed recently. The menu was much more upscale feeling (though prices were relatively reasonable) and lacked the signature burgers I was looking forward to. Our order started with the brussels sprouts appetizer. Solid app. Very tasty and nicely roasted with a yummy aioli. My old fashioned was fine, but nothing special (I make a better one at home with $20 bottle bourbon). My main was their Horsetooth Burger (Chili Relleno burger) which was pretty disappointing. The patty itself looked and felt like it was frozen, not hand formed like the old ones. The Poblano was nearly tasteless and way too big for the bun. Overall the burger was very average and not very flavorful. In the long run, I was pretty disappointed in the food. Service, was great. Very attentive and friendly. Despite that, this will probably be my last visit to Choice City. I will mourn the loss of those amazing burgers for the rest of my life...

We started with a beer for my husband and a mocktail for me. The mocktail (blueberry lemonade) was simply not worth the $7 price tag. Mostly ice - filled to the literal rim of the glass. So full when I took one of my first sips, ice fell to the floor. There was just a splash of ginger beer; it could've used more but, alas, no room with all that ice! When I mentioned it to the server, she explained that's how they make them. She offered to bring me another, but it seemed clear she meant I'd be paying for it. No thank you. Next, my food. I tried the salmon burger (new to the menu, I'm told) which is actually a salmon croquette on a bun with some lettuce and vinaigrette. It's HUGE and not in a good way. The first few bites were okay, and I thought the heavily breaded effect was due to biting into the edge. As I continued eating, though, most bites felt like a mouthful of bread. I can only hope there was minced salmon in it, but the ratio was so heavy on breadcrumbs that I couldn't detect it. Not the slightest hint of pink on the inside either. I ate about 1/2, my hungry hub finished it. The flaws of the salmon burger didn't seem worth pointing out to the server after the response I got with the drink. Later, as we walked around downtown, I felt like I had a lead sandwich in my stomach. My husband had a better experience than I. His bison burger came out great. No complaints. Unfortunately for me, I think I'll just have to order very specific things when coming here now. Austin's has sentimental value for me - it's the first place we dined after moving here 27 years ago. Because of that, I keep giving them second chances after they fall short. I just wish they'd return to the days of "you can't go wrong", everything is awesome.
