Unknown is one of those places where you stop because of the art... and end up staying for the atmosphere. The Damien Hirst shark immediately grabs your attention. Whether you love modern art or think it's completely ridiculous, it's impossible not to stop and look. It makes for one of the more memorable bars in Las Vegas. Beyond the shark, it's just a really comfortable place to spend some time. Good cocktails (NA Beer choices good), attentive bartenders, and a great spot to take a break from the sensory overload of the casino floor. I also appreciated that it doesn't try too hard. It isn't a nightclub, it isn't pretending to be a speakeasy, and it isn't chasing Instagram trends. It's simply a well-executed casino lounge with an unmistakable centerpiece. If you're at the Palms, it's worth stopping in even if it's just for one drink and a few minutes admiring the shark. Vegas has plenty of bars. Had a group meeting us for drinks, ready for a good time... and instead we got a waitress who made it very clear she was not thrilled with our group size. She let multiple people know she was upset -- not just annoyed, but full-on airing her grievances -- because we couldn't put all our drinks on one bill. Then came the "concerns" about how she'd be tipped. So the night took a weird turn. Instead of laughing and sipping cocktails, some of us were consoling her and tipping extra out of guilt. If it was a ploy to squeeze out pity tips, well... mission accomplished. But as far as getting us back in the bar? Not likely. Which is a shame! I've been to this bar several times before (both this trip and previous ones) and always had a great time. The bartenders are stellar -- friendly, fast, and know their stuff. It's just unfortunate one person can change the whole vibe. The space itself? Still cool. There's a giant, deconstructed shark looming over the bar like some kind of Vegas art installation meets Jaws. It's probably seen better days (don't make eye contact), but it adds character. The bar's location is great too -- right at the entrance of the Palms, with all the buzz of table games and slot machines around. Drinks are solid. Big downside for me: no real egg whites in their cocktails. A whiskey sour without that frothy top is like Vegas without neon -- technically still works, but it's just not the same. All in all, one bad interaction kind of took the sparkle out of what should've been a great night. Hubby had just suffered a (minor) loss at a roulette table so I took him to the nearby bar to buy him a drink. Our bartender was friendly and sympathetic toward Hubby's roulette loss. She made us a cocktail that caught our attention, Smoke N Mirrors made with tequila, mezcal, orgeat, and lime juice. This was the kind of drink that made us say "wow" upon first sips. Maybe it's the big dissected Tiger shark above the bar or just it it's location but either way last night after Scotch 80 prime we ended up here for a night cap. What a difference a year makes! My friends and I had a very poor experience here after a concert last year. I stopped in today as a friend and I were waiting for an out of town guest to arrive . Being this bar is quite visible when you come in, this is an easy place for someone to find. A very friendly bartender names Cameron let us know that there was not a cocktail server , as they usually have, but said he would make sure we got whatever we needed. I told him we would be happy to come up to the bar for our drinks. He came and put napkins in the table, knowing we were waiting for one more. Our friend was late so I went and ordered at the bar. I ordered a cosmopolitan, and very specifically said I don't like them too sweet... My friend ordered a lemon drop. Both drinks were delicious. Cameron came over to the table and made sure we were happy. Our friend finally arrived and ordered a chocolate martini, which Cameron brought over to her and stood by while she tasted it. She loved it. Cameron was very attentive making sure he signaled us from the bar to ask if we needed anything or needed another round. I loved this bar. Everyone in the building, including the performers at the event we were at, called it "The Shark Bar". But I now see that it is actually called Unknown. So our destination was Unknown on this particular evening. :D The decor and design of the oval-shaped bar and space are beautiful. Colored dots and lots of use of white, give it an art gallery feel. And of course, the shark which is in three sections above the bar is the centerpiece of the room, which is shocking. It's in preservative fluid and it is a real shark. That is unique. And unusual. And probably a bummer for the shark. The bartenders are on their game and make excellent drinks. There is no food here. There was a DJ the night we were here, and I believe there is live music on certain evenings. If I had any negatives, the service through the overworked servers was slow. We never got service, despite being promised "I'll be right with you". Going to the bar seemed to be the better move, although even that was a long wait. I chalk that up to the overload of people here. When it's busy, the dynamics of trying to walk around the bar, find a seat, or even get out of the way make all three of those goals impossible. They could use a little more space, or moving the furniture out of the way of transit. I would definitely come back here again. read more

I've passed this bar a few times before, always loved how beautiful it is. Located at the heart of Palms Resort Casino, I came here on a Tuesday evening. It was not busy, a chill evening with live music. They played some really great music with live singing. The waitresses and bartenders were attentive, greeted me upon arrival and offered a menu right away. The first drink I ordered was the Sapphire Drop, recommended by the bartender, it was good, a bit sweet for me. This is a pretty standard casino center bar. Our waitress/hostess was absolutely lovely and super attentive. We opted for a table on a Sunday evening after dinner and were able to get in easily with no wait, and open tables all around us, but you can also sit at the bar. I decided to get the Butterfly Effect cocktail, which is really just a gin & (elderflower) tonic with a squeeze of lime. I like gin, but found this to be a little bitter for my liking. Also, it's a very simple drink, but it still took about 12-15 minutes to get it after ordering. Others in my party ordered the Rose Germain and an Old Fashioned. The Rose Germain was delicious, but they use a big beautiful orchid as a garnish. It looks great, but smelled terrible! The Old Fashioned tasted good, but they made it with crushed ice so it waters down faster than it should. I believe each drink was about $16. Overall, this is a pretty standard center bar experience, but great for people watching or a lowkey place to hang out inside a beautiful casino. read more

Service here was great and so was the drink I ordered. I normally don't drink alcohol so I was not sure what I wanted when I came here. I know that some bars do not have menus as they expect the customers to know what they want. With this bar, I did ask for a menu and the drinks were priced at $16. So this is a really cool bar. You can't really miss it because there's a huge shark in the middle of the bar setting itself. As soon as you come into the palms hotel this is what you're going to see. They have TVs around and plenty of seats. The bartender was super friendly and nice, nothing wrong with the service so far. The drinks are not super eccentric but they have a lot of things that you wouldn't necessarily expect go together. I tried the pomegranate whiskey drink because that's the only whiskey drink that they had. During happy hour they have a special to where you get half off of the specialty drinks and half off of the wine, or it's $8 or so. The drinks are absolutely delicious -- I recommend "Keep the Party Going", the one with Red Bull used as a key ingredient that I can only imagine is intended for folks who drank Four Loko ten years ago, but now have expense accounts to match their Brooks Brothers outfits -- but are also $18 each, with name-brand beers going for the low, low price of $9. Glitzy remodeling jobs don't pay for themselves! Still, Unknown is undeniably cool and service is courteous and delightful. The Unknown is the new center bar of the Palms. The location makes it a great meeting/staging place for your friends. White and/or marble ceiling, walls, counter, furniture, etc dominate the decor theme. Colorful polka dots adorn some walls on one side of the bar. You get a very classy South Beach kind of vibe which includes the 3 piece Shark art exhibit showcased in the center of the bar. The clean design of the Unknown also makes it very social media friendly for the influencers out there. There's gaming at the bar and they carry top shelf booze. The bartenders were very pleasant and professional throughout our drinking session. Vegas Bars: Beers $10+ and Cocktails $15+...this is the city norm for trendy bars which includes the Unkown. After that, ambiance, service and mixology will determine your overall experience. The Unknown has their system down and I'd definitely consider swinging by again next time I'm at the Palms. Just meh. The bar does have gaming, and there were drink menus available at tables. Prices are on the menu, and among the $17 cocktails are the Buzzworthy and Slightly Off Course. For $18, some choices are the Old Fashion Old Fashioned and Hit The Road Jack. I can't say I'm a fan of the centerpiece shark in tank, I think it's a bit much for the Palms. This remodel just screams, we want younger customers, I'm looking at you, present customers! It's a complete remodel of the former whiskey bar Social, and before that, the tropical themed center bar. When the Palms opened, casino bars didn't really have names, hence center bar. After I saw the bartenders at Unknown, I knew they'd have no interest in hearing me talk about the former center bar. I'll have to save that for another time! This bar is the best place to people watch, as the view from the center of the casino is great! read more

It has been on the list to go see the Giant Tiger Shark that is sliced into thirds at the new Palms attraction. Today I made that happen this bar titled the Unknown Bar sits right in the middle of the Palms Hotel. The hostess informed me that the bar was open but if I wanted a table to let her know. I opted to sit at the bar and there was two bartenders and a few cocktail servers working. Security and hotel personal also make the rounds on the perimeter to keep us all fuzzy and safe. Nowadays one can not be too sure of anyone sometimes. The bar is made from marble and is so sleek and smooth. It did take awhile for the bartender to come over but she was serving three other customers just on my side. Wow, she is very talented and oh so sweet! The drink menu is located on the tables around the bar and one can order from their list or the house favorites. I came all the way just to see this new place that I was trying something new. I decided on the G & T which has a high end Gin, Aperol, and Grapefruit Tonic. It was fantastic too! It was worth coming out for. The drink was so smooth and even had a real slice of grapefruit on the top. The second G & T which I believe stands for Gin and Tonic with Aperol was even more spectacular. The ambiance of the bar makes one want to drink the chairs at the bar are so comfortable and their beautiful couches are even more inviting. They do offer a bar treats type of menu but had eaten Mexican food prior to visiting the Unknown. I was so stoked to find a lounge in Vegas that offers drinks with Aperol. This is a fresh spin on the infamous "Circle Bar" concept that exists on Las Vegas casino floors. With the new owners of the Palms, they are clearly embracing the idea of "out with the old & in with the super cool and new," and Unknown falls into this category with their extensive renovations at the Palms. In the end, it is a bar in the heart of the casino and it serves adult beverages. High priced, well made, servers are buxom and leggy. So what makes this "Circle Bar" any different than the others in Las Vegas? It's all about the art. "Unknown (Explored, Explained, Exploded) is the title of the giant Damien Hirst 1999 formaldehyde shark that sits in the middle of this art and ahh inspiring lounge. The hotel bought the work from the artist for this site specific location. This is also Damien Hirst's first bar design, having designed all of the bar's accouterments, from the cocktail stirrers to the cute little napkins. In addition, nine of his famous spot paintings adorn the walls of the bar itself. Now many people would not give a bar a 5 star on Yelp because of art work hanging on the walls, but this is where I think you would be wrong. You can have an overpriced martini anywhere in this town, but these new owners actually are interested in exposing you to really spectacular contemporary art (and most people would never even pause to know or appreciate it!). This art work is the real deal original stuff you could only find in a private collection or a museum, but you have the opportunity to knock back a cocktail all while visually enhancing your senses as well. The entire property appears to be showcasing great original pieces of artwork, in addition to the Unknown bar. Bright white decor, high ceilings, open concept, lots of seating for couples or for groups. It's polished, yet casual. It is upscale, yet warmly welcoming. A really great space for the Palms and a very special bar in the fabric of the Las Vegas strip bar scene. read more

The Unknown is the infamous bar we've been seeing on the TV adverts of the newly refurbished casino, with the shark (real, apparently) cut into 3 and preserved in boxes of gel for us all to look at. I'm not sure how I feel about that exactly, but I do know that the area itself is light, bright, inviting and staff there are friendly and accommodating. They have a varied wine, beer and cocktail list, where you can choose from local or imported drinks and you can enjoy them either at the bar seating or in the great amount of seats surrounding the bar, out of the way of those walking through the casino. I liked the fact that even though the Palms is understandably busy, this area is so calm and chilled where you feel you are cut off a little in a more private setting than the main casino floor. The official name of the new lobby bar at The Palms is The Unknown, but sure it will come to be known as The Shark Bar, due to the Giant Tiger Shark Looming above the bar. Clean, white and modern, yet still welcoming and comfortable, thanks to a staff that genuinely seems to like their new surroundings and their customers. Drinks are on the pricey side, but they are high quality, inventive and tasty. My favorite was a simple combination of Japanese Whiskey, Citrus and Seltzer.
