Excellent food and service. We were celebrating a birthday and did not feel rushed to leave.

Beautiful little wine bar that has fantastic prices! An absolute must! Good wine, great charcuterie and cheese, great prices, and best of all wonderful service. This place is small and was fairly empty when we first showed up around 2 on a Saturday, it did get a little busier by the time we left but still not crowded. There were only two gentlemen working that day, and even though we sometimes didn't see our waiter for a little while the service we received from him was superb. We started with two flights of wine and I think it was called their "popular platter" consisting of cheeses, meat, bread, apples, and almonds. We then ordered 3 bottles of wine (there were 6 of us in total), and a much larger cheese and charcuterie board as well as bread and olive oil. All of it was phenomenal. The most astonishing part was the price. Our total bill ended up being around $120 for 6 of us. I'm from California and can tell you first hand that this is one of the best wine bars I've been to. read more

Went there a few days ago. I loved it. Excellent service. We picked 3-4 cheeses and a couple of meats for our board. We made good selections, shooting in the dark some -all of it was good. We got the chorizo which was wonderful. A real surprise. Order the bread which was very nice. Got a small plate of a smoked egg yoke and mushrooms. It was sophisticated and excellent. We had a great time thoroughly enjoyed the atmosphere which I would call casually elegant. Probably the best wine and cheese place I've every gone to and I have been to about 6. Moderately priced. Cozy up to the chefs counter with someone you enjoy snuggling with, call up the girls, or take yourself out for a 'treat yourself' night (that's what I did). What a beautiful venue. The charm of this restaurant is unbelievable, with a fantastic vibe. We stopped by for lunch on my birthday and had the most wonderful cheese plate. We tried 6 cheese and 2 salamis, with bread and olive oil on the side. The cheeses we ordered were all $2-3 each, so our bill wasn't that big. Everything we ordered was delicious! I was completely satisfied and cannot wait to return. I absolutely loved the decor and ambience of this place. The server was super friendly and helpful as well. Hostess was a bit standoffish upon arrival but she ended-up as our server, and the service was good. We ordered the sampler platter, enough for two. We stopped here Easter weekend to try it out after seeing something on Facebook about it. We were very impressed with the cheese and wine selections. We ended up ordering 2nd and 3rd rounds of cheese. We actually found the Welsh Rarebit plate to be a bit over powering with mustard flavor and not melty enough with the cheese. Different than what we're used to. We probably should have only ordered a few of those to try it out. However, some of us liked it and don't let it stop you from trying it too - just know it will be powerful! read more

The Welsh Rabbit takes my attempts to go vegan, puts them in a full nelson, and leaves them bruised and battered in an alley. The smiling succubus behind the counter sizes me up, proffers a sample of aged cheddar or bleu, and tramples over my self control. The cheese selection speaks for itself, but the staff is what makes this place special. They know their product, and will always recommend similar cheeses to what you already like, helping you find new favorites. Of course, they also know what you've already bought, so they can help reunite you with "wait, that one cheese, with the stuff..." Also, I appreciate that they label each cheese with what type of rennet was used. It's a nice touch from a great store. I'll be back soon. read more

Lovely addition to Fort Collins. A place that has a passion for exposing people that stop in to new cheeses and wines. This place offers cheese in one ounce servings (4-5 bites of cheese), and has at least 40 kinds to choose from. Moreover, they offer a few meats and various wines (mostly imported) to make for a great wine/cheese happy hour experience in a pleasant setting. The people there could not be more friendly, and while the place is small (seating can be at a premium), it's worth hawking over a table. I'd love to see them call out more local cheese products on their menu, perhaps offer a bit more variety in wine, and somehow figure out how to scale up just a bit more to handle a post-work crowd. When I first think of the term "Cheese Shop" I do not automatically think of Fort Collins. I think of bigger cities. Perhaps they are on a coast and definitely more cultured. I was very excited when I heard that Fort Collins had a new cheese shop! The place always seems busy yet it is not loud like so many other restaurants in town. I was planning to eat there. They have cheese flights where you can pick as many cheeses that you want to try. Each cheese selection is two dollars a piece. You can also order bread and oil and sausages to accompany the cheese. When you first walk in it is a little confusing because you are not sure if you should pick a table or wait at the counter for the person ahead of you. For the record if you want to eat there you take a table and if you want slices of cheese to go then you go to the counter. Now on to the cheese! Like I said with flights you can pick as many different kinds of cheese that you may want and they have about fifty different ones to pick from! If you are eating in to pick your cheese flight you look at the menu to see what different kinds of cheese taste like and where they come from in this great big world of ours! You then check off what cheese you want to have on a slip, just like when you order sushi! I ordered four different cheeses. I got the Drunken Goat from Spain, TeaHive from the U.S. , Smoked Farmhouse Cheese from Ireland and finally the Kirkhams Lancashire from England. All of the cheese except for the English cheese was arranged from mildest to strongest in taste. How did I like the cheese? First of all I will say that all of the cheese that I ordered was fantastic! I did have some favorites from my order though! My favorite was the TeaHive. It had kind of a tea taste to it with hints of citrus. Delicious! My second favorite was the Kirkhams Lancashire. That cheese had a wonderful smokey flavor to it! Aside from the cheese the service was great and everyone was bubbly and friendly! I couldn't ask for better! I think it is safe to say that this my new favorite business in the Oldtown area! Literally, a beacon in the night. After going to a couple of specialty/microbrew beer places, I was totally "beer'd" out. I mean, I love microbrews, but my Yelper heart wanted something more...I was seeking...and walking...and suddenly... BAM! There was the tiny and easy to miss Welsh Rabbit. Like a wish come true. We walked into this tiny, tiny little place filled with cheese and wine from around the world. We did a tasting of about 5 cheeses including from England, France, Spain. We choose a tasting menu of wines to accompany and well-ah...my Yelper heart is going pitter-patter. The staff at the Welsh Rabbit couldn't have been more warm and accommodating. they answered our questions, and made us feel as though we were just sitting in their living room enjoying their company. I hope the rest of Fort Collins loves the Welsh Rabbit as much as I, because next year it's on my list FIRST. This was the perfect place for our mid afternoon stop while shopping. The place is adorable and in a great location. The selection of cheeses is amazing! The portions and prices where good and the bread was out of this world. We chose a salami from CA that was to die for and a prosciutto that paired perfectly with the manchego. I didn't get to put wine with our snack, which was my oun fault, as that would have completed this. All presented wonderfully with thinly sliced green apples on a piece of slate. Really wanted to write a review for the new Welsh Rabbit Bistro, but couldn't find a site specific to them on Yelp yet. So my comments are specific to the Bistro on Walnut Street. My girlfriend and I had dinner here, and we treaty enjoyed the experience! The house bottle of wine is always a good bet, and the price is very fair--I think we paid $18 for the bottle of French wine from the Rhone region that we enjoyed with our meal. The small plates, or "Peasant Fare," are quite tasty and reasonably priced. We enjoyed the shrimp and polenta along with the quail. The cheese selection is the best in town, and we greatly appreciate the time the staff takes to talk about each cheese we ordered, and checks back to make sure we enjoyed it. One suggestion is that either a Speck or Prosciutto would be nice to have on the menu to accompany some of the cheeses. The selection of cured sausages is nice, but I'd enjoy some cured hams as well. We stopped by the Welsh Rabbit Cheese Bistro for a late lunch on a quiet weekday (a few months ago). The staff was very polite, the decor pleasing, and overall the food and wine was delicious. They have a large selection of unique and tasty cheeses (also available in their little cheese shop). We weren't a fan of the "sushi-style" order sheets and bic pen, but I quickly overlooked that when I excitedly saw Mimolette on the menu. Along with a pasta dish that never arrived, we ordered bread, salami, and chose a smattering of cheeses: soft chèvre, camembert, mimolette, and some kind of semi-hard cheese. These all paired perfectly with a very good glass of red wine -- the name of which we wish we'd written down (it was made with Slovenian grapes)! We also tried a glass of the house red, which was tolerable until we tried it with the camembert. A huge mistake -- it left the most awful taste in your mouth! Other than this moment, and the disappointing paper napkins (if you're going to great lengths to be a classy restaurant, use cloth napkins!), we were very pleased with our experience. read more

The wine was great and the cheese was amazing. It was a fun location for a double date and despite being a small location and full on a Friday night we were still able to chat and catch up with family. My husband decided to be adventurous and try the fromage aux fourmis which is not for the faint of heat.
