The Welsh Rabbit is one of those places that's hard to categorize--in the best way. It's not a traditional restaurant, it's a thoughtfully curated cheese and wine shop that happens to offer an incredible experience. We stopped in and ended up staying longer than planned. The staff was genuinely welcoming, knowledgeable, and clearly passionate about what they're doing. They don't just serve you--they guide you through it, whether it's cheese selections, pairings, or wine. The charcuterie and cheese were excellent, the wine selection was spot on, and the whole atmosphere felt relaxed, intimate, and authentic. It's the kind of place you go to slow down and actually enjoy what you're eating and drinking. This is a gem in Fort Collins. Two baguettes I purchased were raw and doughy in the middle. Before purchasing, the baguettes were described as fresh, but they tasted like thawed baguettes not freshly made in your shop. We had to bake each for 15 minutes at home to get a proper crispy crust. Additionally we purchased one MouCo cheese for $10. The following day, I purchased same cheese from MouCo's Larimer County Farmer's Market stand for a low price of three cheeses for $10. It wasn't until I asked for my check because I was ready to leave that she suddenly asked if I was planning to eat. That level of inattentiveness is frustrating and completely avoidable. It's especially disappointing because the location is fantastic, the vibe is great, the food is consistently excellent, and every other bartender and staff member I've interacted with, including the manager, has been amazing. There are some truly great bartenders there who provide attentive, friendly service and make the experience enjoyable. But if I walk in and see her behind the bar, I will not stay. She has completely turned me off from being there when she is working. I hope management takes this feedback seriously, because the rest of the team and the overall experience deserve better than this one recurring issue.
