We had a great time here! Everyone loved their food and beignets. We had two shrimp poyboys , a crawfish poyboy, a muffaletta, and some gumbo. The breading on the seafood they use is light and seasoned really well! the muffaletta was really good and the gumbo was super flavorful! Here, you order at the front and get a number to take to your table and sit and wait for the food. This place is usually pretty crowded so seating may be difficult to find. We ended up having to clean off a table ourselves in order for us to sit down. Not knocking the staff for this at all though because they were super busy running food out and taking care of other guests, we didn't mind doing it ourselves! Overall, a really great place to check out in the factory and it adds some new food/ flavors to the area of franklin! I don't know if there's another restaurant like this is the area so I would recommend stopping by! read more

We thoroughly enjoyed our first experience and everything we ordered from the place so far. The food came out fast, the place is clean and the staff are prompt. What threw us off is you have to order by the door like a fast food. Theres no waitstaff so to speak, there's a couple of amazing ladies running food and doing busboy duties so we're kind of at a loss and honestly feel awkward ordering additional drinks. You have to walk up to the bar and start a tab? Needs work on this front. Another thing they can provide are wet wipes. Most of the foods are handheld and can be messy, there's no bathroom within the restaurant (there's one in the mall) and for convenience I think it would be great if management considers this. I like this place. I have to say that if it was in New Orleans I'd rate it a lot lower but for Cajun food in Tennessee it's really quite good. I could be picky and point out all the things that don't measure up plus the fact that it's a bit pricey but we enjoyed our food and the service was really good. No, you can only sit there if you order there. Which we had asked about at the front but okay. No problem. We sat at a table. We ordered: Boudin balls: flavor was good. Aioli was very good. Texture was off. Oyster Po Boy made of an oyster patty or something instead of individually fried oysters. Gave them an odd texture. Was served with Mayo instead of aioli and so much lettuce and a fat tomato. My whole sandwich was soggy before I was halfway done so I could not finish it. We had seen the lines and heard the word on the street so we finally checked it out ourselves. We arrived at opening on a weekday and there was no line, just friendly service. This is one of those order up front and then find a table places. They do have a full bar in the restaurant. Nice seating area which opens up as you move into the place. We decided to split the large shrimp Po boy and a cup of gumbo. Both were excellent. Shrimp was well cooked and there was plenty. The bread was perfect. Slightly Crunchy exterior with a soft interior. The Po boy is really not a complicated sandwich (hence the name) but getting the bread right is one of the keys to a good one. Gumbo was also spot on. We got here around 6pm on a Friday evening and waited 30 minutes in line to order. We discovered later that you can order food and drink at the bar. There is no table service at this restaurant though the food did come out super quick. For our next visit we plan on going on a non-weekend night and sit at the bar. The restaurant itself has a good vibe. We ordered Jambalaya, wedge salad with blackened shrimp and fried green tomatoes. The food was excellent and very New Orleans (ish). A full sized sandwich will run you around $30 so buyer beware and my pint of beer was $10. 4 Stars for higher prices and no table service as opposed to ordering at the counter. They were delicious, but slightly disappointing because the debris did not include a brown gravy such as I typically expect in NOLA. i asked forba side of gravy and my server accommodated with a cup of broth, while while very good, was still not gravy. i wont take a point for that - the food was delicious even if not what I had hoped for. Point is because ordering is discombobulated. food and soft drinks are ordered at the front counter. But if you desire alcohol, you'll need to purchase that at the bar. However, if you'll eat at the bar, you can order your food there. But, if you want a soft drink that still has to be ordered at the front counter. So we ended up with three purchases. First we purchased our food at the counter. Thinking we would both want a cocktail, we proceeded to the bar. In the end, my wife still wanted a soft drink, which is not available at the bar, so she had to go back to the front counter for a Coke. Only 7 people in line when they opened on Sunday! You order first in the front then find a table. I was excited to start off with some Gumbo, it was very good, just enough spice, and the bread on top was amazing. Main coarse was the Catfish Platter. The Catfish was fried, breading was light and the fish was amazing! The hushpuppies were very good, but I would make them a little smaller. The fries were good, but I ordered a side of Debris to put on them and that was Amazing. My wife got the shrimp Po Boy, wow the regular was huge. The shrimp was lightly bread and tasted very good, but the bread, well the bread was light and was amazing! And for dessert you must order some beignets! Sooo good!
