    Oyster was winner here

Usually looking for flawless in these type of pricey restaurants but I'll give the 5 stars here for allowing me to slide in even though there were no open reservations. Thankful they did it was memorable. Only a couple of things not up to par. The squab was hard to cut and not to desired temperature, the silver wear for most dishes was tricky to hold(weighted weird and round which spun in the hand)and the chocolate crème filled dish was just not my taste. All the other courses were fantastic. No point in describing as the menu will be different most likely. My stand out for this time was the squab consommé. That was so savory delicious like a foie gras almost. I would have loved a whole pie :) it was more of a tease amount. The service was definitely knowledgeable and friendly. Rocco did a superb job of picking a wine I'd enjoy. What I love about here is they have a whole non alcoholic pairing menu which you don't see at others. I didn't do it but the one cider from Haykin I did get was amazing! Will buy a bottle. It was nice to have a great meal after a week of not. Thanks will be back.

The food was great, the service was great! The ambiance was cute we got our own tent outside for our group of 6. Had a heater and cute lighting. It was such a great experience with the manager and Jake!

2nd course: caviar, creme fraiche on thin, soft masa crackers paired with their Vesper

What an incredible experience! Wolf's Tailor, the only 2 Michelin Star and Michelin Green Star awarded restaurant in Denver, known for its zero-waste efforts, impressive culinary techniques and outstanding service. In the spring 2025, they partnered with local farmers to plant underrepresented varieties of corn to create this winter menu and thoughtfully curated an 8-course gastronomical experience from sea, land and soil. We added 1 mixed beverage pairing which entailed a rosé blend, Vesper cocktail, a corn sour, a white blend wine, Ndute corn lager brewed locally and a sweet mead to go with the dessert. Each drink was so unique and carefully crafted with the individual course in mind. The first few courses were from the sea and they were absolutely exquisite and vibrant. I especially liked the scallop in a bright green corn miso custard, reminding me of a chilled chawanmushi. The remaining parts of seafood used in the first course were utilized in the second and third courses, emphasizing sustainability and circle of life. Spreading caviar, creme fraiche on thin, soft masa crackers and cracking into a honey comb made of huitlacoche over a perfectly pan-seared scallop in winter squash were novelties I had fun exploring. I've also never had squab prepared over a small, scrumptious sope, topped with roulade and xinepec to wash down with a comforting, Thai-like consommé. The turmeric and lemongrass sauce with roe gave the lobster and ravioli life and the soft, Sonoran piada bread with masa-miso-honey butter was to die for. For the main course, the most tender bison strip loin I've ever sunk my teeth into and trying their twist of corn gochujang and banchan with each bite was yet another tantalizing and sensory experience. Dessert was more like 3 courses with candied squash, masa seca, and brown rice mousse served on corn cones first, followed by a chocolate birthday cake (early bday gift for me!), and ending with their delightful chocolate bars with roasted corn. Aaron, our server, was so kind, personable, passionate and knowledgeable about the craft. So was Rocco, the sommelier! Jake tended to us in between and I absolutely loved his playlist of chill hip hop beats. Emily, the host and Tushard, who explained the local beer and dessert wine, were even really cool and down to earth. In fact, the service from beginning to end when they sent me off with a small bundle of dried flowers was flawless and impeccable. 100/100 - It's no wonder Wolf's Tailor has earned its awards.

The best Michelin restaurant we've been to in Colorado and one you shouldn't miss out on if you're in the area. Each dish felt unique and thoughtful. The staff were welcoming and knowledgeable giving each course its own story. A great place to celebrate or talk about big life events as it never felt overly loud or less intimate even with several other diners.

A friend recommended this place to me years ago. I shouldn't have waited so long. We were looking for a special place to celebrate our anniversary and found a 5pm opening a few weeks out. I made the reservation before their 2nd Michelin star was announced so I was pretty pleased we were ahead of well deserved press. We entered through the garden and were welcomed warmly who recognized our anniversary right away. We were seated in one of the outdoor tents with the inviting fireplace, blankets, and cozy atmosphere. So unique and memorable. Highly recommend! We met so many of the staff that I wish we could remember them all. Morgan guided us very well and was very sweet and we enjoyed talking with the sommelier. Food. Amazing. The flavor journey we experienced was just delightful. Starting with the small bento course, light and teasing. Then we progressed into stronger satisfying flavors with hints of spicy, citrus, freshness. I loved almost every course but the watermelon and tomato one was my favorite. I could drank that sauce by the gallon. And the Tom yum course was well done too. And so was the butter and bread. And why shouldn't you have two desserts?! Really, this was one of our all time favorite meals we've had. Thank you Wolf's Tailor for an incredible experience and memorable evening we were grateful to share with you.

What a great experience! We were a little hesitant at first on how much we would like it but the whole concept behind their courses was so unique that we had to try it. Service was top-notch. All the courses had very unique flavors combinations and seems to have some vietnamese/asian fusion in their menu right now. The bison they had served was delicious, it just melts in your mouth. I personally liked their non-alcoholics pairings more as I found them to be more creative. We had a more intimate experience in their outside tents which was pleasantly kept warm. Parking -- small lot but street parking is far easier. Plentiful for Friday afternoon.

Had a lot of fun coming here with friends for a birthday celebration. The food is very well thought out, and very creative. The service is top notch. I loved all the appetizers, the mains and dessert, I thought were just ok ( flavors were too bold for my palate) - but still was fun to come once!

Wow. Amazing food, service & experience. Visited with friends- we are visiting from out of town & wanted to check out a Michelin star restaurant. This place delivered. The staff was friendly, knowledgeable & made great recommendations for drinks to pair with the dinner. This is an experience. We were there for 3hours & savored every bite. It is pricey but you know that going into the dinner. The table we had was at a window in front of the kitchen & we could see the chefs putting everything together. The patio looked quite nice, a great place to enjoy all the flowers & herbs growing in the planters.

The service, staff, food and atmosphere was phenomenal. From a 2 star michelin restaurant you should expect nothing less. Every dish came with a story and they made sure not to waste parts of the food. The meal was about 2.5 hours long and consisted of 8 small courses. I did leave hungry, but my party seemed satisfied with the amount of food. For 4 people, 3 drink pairings we paid about $1,600. The meal is not about portions, but the quality and flavors and I enjoyed all the flavors and the experience that came with it. Cheers!

Holy culinary experience!!! After this meal I wondered why I have given other restaurants 5 stars. Now this 5 star feels so inadequate. 10 stars please. To be fair, the price is crazy but for a major milestone (like our anniversary) or "I just sold my $1B company" celebration (not me), I'd say you should look no farther than The Wolf's Tailor. The sweet/sour/salty/spicy/savory/and a touch of heaven was navigated brilliantly through each course. We also bought into their sustainability ethos and support for their local vendors. Service was exemplary. And we got the outdoor tent that was very special. I wonder if that is what a 5-star (I mean 10-star) safari would feel like :)

The Wolf's Tailors' focuses on farm fresh sustainable delicious meals. Again they have provided a memorable experience. The restaurant celebrates Colorado's fresh meat and produce. This is prix fixe 8 course meal with an optional reserve wine pairing. Pricey - yes worth it for a special occasion. The summer menu featured the freshest ingredients and started with "Circular" "Whitefish, tomato and chicken" Then the next three courses were a play on those three. Each course was mouthwatering, delicious, beautifully presented and fun to eat. There was a bread dish, Piata, with flour milled locally for the restaurant. The ultimately spreadable butter melted in my mouthy. A savory Bison tenderloin followed, perfectly cooked. (They were out of the optional Wagyu steak.) All this followed by some goat's milk and a chocolate dessert. I highly recommend the optional wine pairing. The sommelier showcased wines that perfectly paired with each course and his descriptions of organically sourced and sustainable vineyards added to the experience. We had impeccable service from a whole team who were always there, explaining in far greater detail than I can write here, how each dish was prepared and what was in it. Each server wore a dark suit, no tie, but smartly dressed. Inside, the restaurant is roomy. My main complaint is the noise which blared so loudly through the overhead speakers. It was not music imho, it was just loud and annoying non-melodic noise - it overshadowed the overall experience. Since the food, wine and service was so good, I can let the crappy music slide, I guess. Maybe go outside next time, but it was summer and hot, still it might be preferable.

What an amazing experience at The Wolf's Tailor! We decided to visit during our trip after hearing all the great reviews, and I'm so glad we did. We opted for a table in the tent, which was surprisingly warm despite the cold weather outside. The staff members are extremely nice and funny, which made the experience that much more delightful! The food was all delicious, and all prepared so meticulously. The standouts were the Dungeness crab, the squab, and the pasta. The palisade peach dessert was also such a core memory dish!

@thewolfstailor One of the beta meals I've ever had! Every single@bite was exceptional. It was on of those meals that continually exceeded expectations! Best Wagyu I've ever had! The thing you NEED to get in the non-alcoholic drink pairing! It is pricey but worth every penny! It made each course even better! Wow. I still dont know which dish was my favorite but the stars of the night were the Wagyu, bison, chicken ravioli, and salad. We'd come here for the non alcoholic drinks alone. The baristas are phenomenal.

What does the cost look like? Do I need to save for a year?

Our server Jackie did an amazing job timing and pairing courses in a way that never felt rushed or overbearing. She has a wonderful personality and is incredibly knowledgeable.
