Great cappuccino and the first drink i have had out during covid times that was served in a proper cup. Street parking, clean bathroom, and about 8 outdoor tables. Staff wore masks and were pretty good with wearing them properly, not perfect. Bacon cheese croissant was very good as well. read more

I found this coffee shop on my pit stop in Redding. I didn't order coffee, but I did order a bunch of pastries. All I can say, the croissants... DELICIOUS! Flaky, buttery, warm. It was extremely rich and worth it. I, also, got the banana bread and cinnamon bun. The banana bread, MY GOODNESS WAS IT EVERYTHING I DREAMED OF/EXPECTED in a banana bread. Please don't change the recipe on this one, unless you want to add peanut butter chops. Lastly, I am a sucker for a cinnamon roll and honestly, it was ok. Amazing! Period. This was our first stop on our trip to Oregon on 10/17/2020! Wait time: 5-10min in line (1 min from purchase to receiving our drinks). I was super surprised of how fast their service was even though we still had to wait in line! Covid Info 2020: There was a line outside the door (wish there was some kind of sign on the floor that said "wait here") and the social distancing line began inside past the front door where they offered masks and a handsantizing pump (how thoughtful!). There were markers on the floor to create social distancing. All the workers wore masks. It was a large space with indoor seating! Ordered: Cortado Vanilla Latte The vanilla latte was unbelievable! I'm a huge fan of vanilla latte. I get it at every coffee shop I visit. This has to be the best of the best! It was rich and creamy with a perfect temperature! I add almond milk to my latte and I was surprised I can taste that it's mixed well overall! Aaron's cortado hit the spot it was the perfect drink to start the morning! May 23, 2018 (Wednesday) @ 8AM. I heard a lot of great things about Theory, so I decided to try it out. I was meeting a friend who just finished three years of school and we wanted to connect before he left. First Impression: Great location - about 1/2 mile from my house. There's plenty of street parking and easily accessible. There is outdoor seating (curbside) as well as in the back. They have a large table that can probably accommodate over 12 people. There's plenty of seating so the place is designed for larger groups or small groups (2) people. Food & Coffee What can I say, I have travelled around to places that are known for their coffee and this place ranks amongst the top (my personal opinion). I didn't get any of the "foo-foo" drinks, so it was just black coffee (house blend). It was bold, rich and does not need creme or sweetener to enhance its taste. I also got the breakfast bagel, which was seasoned really well. Though the portion is a bit small, it tasted really good! Service: This is where I didn't have the best experience. As mentioned above, I have been to at least 100 coffee shops just within California and the person I interacted with ranks within the bottom 10 for customer service. He wasn't friendly, didn't smile, didn't make eye-contact, just simply asked, "what can I get you?" I asked for coffee and for their menu. His response was "it's up there" referring to the wall behind him. I looked and didn't see any menu posted so I pointed it out to him there was nothing there (mind you when he said, "it's up there" he never even looked at me). After realizing the menu was not displayed on the big screen TV, he solicited the help of a few (yes, a few people) to get it turned on. After about five minutes of fiddling around they finally got their menu on display. After eating my breakfast bagel, I went up to the counter to ask for a refill but this time the worker was a young lady. She was incredibly friendly! She smiled, asked how I was doing and seemed like she was enjoying her job. Overall PERSONAL opinion: Great place for a large group to meet where you can get great coffee and good food! However, this place was EXTREMELY LOUD!!! The floor is concrete so the acoustic is not conducive for a "one-on-one" or something intimate. If you're meeting to just say "hi" and not talk about anything deep, then it's a good spot to go to. What I ordered was a little over priced (almost $9 for what I ordered, which didn't include the tip I gave ). It seemed very "clicky" and everyone seems to know everyone (they also wore the thing...skinny jeans, white T-shirt, and a satchel...hmmm, I wonder where they are from...LOL). On a serious note, this is NOT the way to reach out to your community with excellence but what a great concept! (Though not new since there are other coffee shops in town). Not sure if I will be back since there are other choices that I can make, but one suggestion I would make to the owners is to "train" their workers on CUSTOMER SERVICE. Incredible! What a find on our way back to Santa Rosa from the Shasta-Trinity area!! First of all, this place has a great aesthetic! The cool minimal modern look that makes it feel relaxing. And they have a good COVID process in place with markings for the line to keep spaced and amply spread out tables inside and outside. But the FOOD! My husband has celiac and I am also gluten free and they had SO many gf baked goods!!! It came down to the chocolate chip banana bread (BIG slice, with lots of choc chunks, also dairy free!!) or the cinnamon roll. They had a few other gf options as well. My husband got the bread and he said it was amazing; I got the cinnamon roll and OMG- one of the best I've ever had! So moist and flavorful!!! I was in heaven with every bite. Sorry- no photos, too yummy to stop. Also got iced almond milk lattes that paired perfectly with the baked good. 100% coming back when we're driving anywhere close to here!! Flew in to visit a friend, and had to find a place to work remotely all-day. Found this coffee-shop, and I am glad that I did. The atmosphere and environment was perfectly suitable for me to work throughout the day and focus. The coffee was delicious and fairly priced. The breakfast sandwich, while on the expensive side, was well worth it and sustained me. #fatjared say...not just an absolutel slam dunk of a coffee shop in Redding, but one of my favorite in terms of layout and flavor of all time. This was a very pleasant surprise. I am very strict in my grading. I never give 5 stars if I have any complaints whatsoever. I mean I have had issues with napkins before and bumped down a star. Theory absolutely blew me away! Right when you walk in, it is a very cool layout, super modern, lots of natural light, and super friendly people who go above and beyond to just be nice and make your day! They have all kinds of awesome options on their menu that change seasonally. The head barista is also the roaster, and does all his own roasting in the side area right by the entrance. He does things on purpose, and knows what he is saying and doing, because the flavors were on POINT! I always judge a place on their cold brew. I think it brings out the flavor in the beans the best, and lets you know how good that roast was. The cold brew I had not only had the nitro option, but it also had the option of adding horchada in it, which was the special. I didn't even have to ask for a sample, and he brought it over to me to try just in case I wanted it. I ended up picking the regular cold brew, which automatically comes with an orange slice. The little citrus in it is a great add on, the brew is smooth, really distinct notes in the flavor, and it was gone in about 30 seconds. I couldn't stop drinking it. One of my top coffee shops I have been to all time, and that says a lot since my wife and I do a new one each week. I have no issues at all with anything here. I'm one who likes to get a black coffee and a snack and study. It has a great ambiance and that is the best thing it has going for it. Also, I enjoyed the coffee quite a bit. It tastes slight more acidic than you get elsewhere but it does seem to pack more flavor. My biggest problem is that they told me they only serve 12oz cups of coffee. I'm not sure why this is, and why they charge 3.50 for 12ozs. If you want a refill it's another 2$. For someone who often orders 16-20oz coffees this is a problem. My last qualm is the snack options. Like many cafes it seems like the only snack options are sugar/fat bombs. Having said all that, if they offered bigger drinks I would probably go more often. read more

Ginger Beer Espresso. It's fizzy. It's weird. It's...savory. And all in the most pleasant ways possible. I don't think I was able to decide until I was nearly done with the drink that I actually really liked this. It's literally ginger beer (like - really strong ginger beer) with a shot of espresso poured over it. The baristas told me to just allow the espresso to sink and not to stir it in. I sipped slowly and my taste buds were awakened. I honestly don't know if I can, even now, put words to what I drank, but let me just say...I'd get it again. And again. And again. You know. just try the weird drink. Cuz it's REALLY good. Aside from all that jazz, this is a really beautiful location - super hipster with a couple of different rooms. I think it'd be nice if they put more stuff on the walls to absorb the sound bouncing everywhere so that people (*ahem* I) could hear what someone across the table is saying. But it's beautiful, really. Service was also super friendly and hospitable. The baristas know there stuff and very kindly and gently encourage you to try new stuff...and they also make coffees like pros (probably because they are...). My friends also tried the americano, almond milk latte, granola and yogurt, and breakfast sandwich. Raving reviews from them for their goodies. I'm a huge coffee lover and this place was very very good. One of my top coffee shops I would say. And I'm from Portland Oregon, so coffee shops are a huge thing in Portland. I had the 12oz latte with regular milk (Wish they had bigger sizes). Also had the breakfast croissant and it was amazing. All in all great service and great coffee. And this review goes to the downtown location. I know there are 2 locations and I can't vouch for the other one because I haven't been there. I'm sure both locations are equally as good! Came here last week because I was in town for a road trip, and I really enjoyed their coffee! Also tried one of their pastries, a S'mores cruffin. The staff were very friendly and the service was pretty quick even with the long line! There is plenty of seating that is in the space near the coffee bar, along with an outdoor seating area which you have to go down a hallway that leads straight from the entrance door. We have been to The Theory a couple of times. First time our son ordered a coffee and went to sit down only to be told the shop was closing in minutes after purchasing the coffee. The coffee was so hot he threw it out because he could not carry it. The second time we took our other son who is autistic. The person serving us was getting irritated and impatient while we asked questions about the menu. I would call the exchange passive aggressive. I ordered a cold brew with almond milk and a breakfast sandwich with avocado. Cold brew is smooth and not acidic, ice cubes are nice cubes, and I love that they use Califia barista blend almond milk. The breakfast sandwich has a lemon aioli which tastes amazing. The egg is runny but not messy, as the sweet roll absorbs it before it can drip everywhere. Baristas here are friendly for the most part. Service was pretty quick! Unfortunately no bags for taking out my food.
