I'm from out of town. Stopped by for coffee. Outside there's a sign that says masks as required until seated. Absolutely no one on line was wearing masks and there were probably eight in line. The seats are all stacked together, no distancing. No one at the tables had masks. Probably 30 people creating their own little coffee flavored super spreader event. It's sad too because it looked like a cool little place. But I walked. Went two blocks down and Dutch Brothers showed they cared about customer health. Masks all around. read more

Second, the staff is super friendly and hospitable, which is typically a hit-or-miss aspect of coffee shops so kudos to Theory for finding cool people to operate their storefront. Third, the product is top-notch, which is to be expected since they roast their beans just across the hall from the coffee shop. Fourth, there is plenty of sitting room in their building. I thoroughly enjoyed my visit to Theory Collaborative. Upon entering, I espied three young women who resembled Lorde meticulously framing pictures of a piece of toast. I subsequently turned my attention to a white goat mounted on a brick wall who began inspecting my clothes. Shaking his head in disgust, he told me that my outfit was unacceptable for a java boutique of this caliber. He snapped a hoof like human fingers somehow, and I heard two Macbook Pros slam shut. Suddenly, two bearded males tackled me and carried me outside the shop. I was taken underground via a sewer manhole whose cover descended like an elevator into a subterranean closet stocked with men's clothes and accessories. One of the bearded men pointed to stacks of skinny jeans and told me to choose. I asked what was wrong with my slim-fit jeans. He slapped me across the face. Next, my shirt and cardigan deficiencies were addressed. The other bearded man then tossed me a satchel. He told me it was genuine vegan leather. I told him that makes no sense. He slapped me across the face. He said I probably don't go to Bethel. I told him he was correct, but that I work there. He said he loves me, but that I'm a filthy heathen. They pushed me along, and we ascended to street level. We entered the store and the white goat nodded in approval after reassessing my sartorial situation. The two bearded men returned to their table and opened up their Macbook Pros to attend to Twitter business. The three Lordes were almost finished framing pictures of a piece of toast. I ordered a coffee. The baristas were courteous and professional, and my coffee was delightfully piquant and smooth. I highly recommend this establishment. read more

If you're not looking top notch, the friendly staff's gaze will turn cold, but their smile will still be plastered on their untarnished faces--so young, so full of life. As for the coffee, nobody really comes here for that anyway. They come to climb social ladders and make a name for themselves among our sovereign leaders. Overall, this place cool I guess. My wife and I are new to Redding, and our first order of business upon arriving was scout out the local shops. I can truly say that Theory fires on all cylinders. Good coffee good ambience good food good people The coffee is exceptional. My wife's go to is a vanilla latte, which of course you can get anywhere, but the quality of Theory's espresso and syrups exceed most other shops. Their Ethiopia pour over is bright and delicious, but if you're down for trying new drinks, their soda + espresso is the way to go. I would recommend trying it with their root beer. Not only does this place have amazing coffee, delicious food, and kind baristas, but they also have a wide selection of beers on tap as well. All in all, this place is a MUST. read more

Nice open cafe space and a tasty cappuccino. I got some single origin beans that seem as tasty as the description on the bag promised! I stopped by on a Saturday afternoon as I was passing through Redding and was surprised to find the cafe packed inside with mostly maskless patrons, plus that one of the baristas was also unmasked as she served customers. Once the pandemic is past, I think I'll make this a regular stop as I head north or south on the interstate, but at least on Saturday, it felt like a crap shoot for my health. The prices can be a bit higher than traditional commercial coffee places but considering that it's a local business I'm all for it! Theory is one of the best local coffee roasters and bars. Their roasts are consistently good, and the menu is fairly typical for a small local cafe. The ups: the bar area is well-maintained and well-staffed by baristas who know what they're doing. Some know more than others when it comes to getting pro tips for brewing whichever beans they're currently selling, but none of them will pour you a bad drink. I usually drink straight espresso (sometimes with unsweetened whipped cream--which Theory doesn't have). Theory consistently pulls well balanced shots that express the full depth of the bean they're using. I've never had an overly-sour or overly-bitter shot. Theory's machine is well-calibrated and their grind is always dialed-in perfectly. I eat a keto diet, but my party raved about their Bear Claws. She was less enthusiastic about the "quiche" which was more of a frittata (no crust, but probably keto friendly)--it was sold as having "bacon" but was really just ham. Possibly mislabeled. The interior design is a bit more modern than I like, but it's a pleasant space. It's always crowded and table space is at a premium. Come early or during a slow time to get the best spots. Theory Collaborative is easily the best cafe & roastery in downtown Redding for both coffee and snacks. read more

Sorry...but when I wait 26 minutes for a breakfast sandwich, which ends up being delivered cold and not "to go" like ordered, and wait another 3 minutes for a box to carry it out with...you get no love. I've been in a couple of times, and the service at the counter is usually great, this time...not so much. As I waited my nearly half-hour for my food, I not only finished my drink, but when I asked if they had put the order in the reply was "yeah...the kitchen is a little behind again", indicating that this is a regular problem that someone should address and fix. Wow. We needed coffee before leaving the area for home. Googled this nearest our hotel and quite glad we did. It was about 830 on a Monday, the line was short. We ordered 2 lattes and had the option of half and half. After ordering your drinks, walk to the cash register and order your pastries and/or sandwiches. The cashier gave us our kouign amann (butter and sugar layered pastry) and we waited about 8 minutes for our breakfast sandwich (croissant, egg and bacon). The lattes were great as well as our pastries and sandwiches, crispy and that egg, yum. The breads are baked locally, the coffee was roasted in-house. A great treat in the morning. read more
