Thuy's is delicious!!! Their broth for their Pho is so flavorful. The bahn mi sandwiches are delicious too!!! I got the lemongrass tofu and wow! One of the best bahn mi's I've ever had. Decided to give this restaurant a try despite me living in south of the airport. I was intrigued by their oxtail pho because it is the only place that has oxtail pho. Due to Covid concerns, I ordered takeout. The soup was in a plastic container and noodles, oxtail, basil, jalapeno's, bean sprouts, etc. were neatly packaged in a recyclable brown paper container with waxed lining. A plus since many other pho places use styrofoam. The Good: Amazingly, despite sitting for over 20 minutes to get home, the soup was extremely hot. So much so I had to use a few folded napkins to handle it while taking off the lid. . . Bar none, the soup stock was probably the best pho broth I have ever tried, and I have tried pho in Honolulu, Seattle, Tacoma, Olympia and other cities. Not So Good: The oxtail was underdone. I have made Chinese oxtail soup, oxtail stew, and the meat should fall off the bone. Here, the nice meat on the oxtail was tough. One had to really work at trying to pull the meat off the bone. When one does, it was very chewy, almost like jerky. Could Be Better: Only 2 slices of jalapenos, a bit light on the sprouts and there was very little basil which was wilted. I wish had a bit more noodles. Bottomline: Do not spend the extra money for oxtail. I will definitely be back to try other versions of their beef pho since the soup was to die for. I will also request more of the sprouts, basil, noodles. read more

Is near my home so I was looking forward to good pho. Went when it first opened up but they had so few choices, I decided to give them some time, like over a year. Went last week to get my favorite, chicken pho. The broth was weak and tasted like it came out of a box. I could swear the meat was leftover turkey. My teenage son could make it better at home. Great fresh rolls and bahn mi! I keep getting the pork belly bahn mi and fresh rolls and they're great. Fresh ingredients and consistently good tasting. We attended their soft opening. Menu is still limited for now, but nonetheless a good amount of choices. They greeted us with free spring rolls and they were awesome. Most places overcook and these were perfect! We ordered steak, brisket, and seafood pho. All 3 were fabulous. I cannot say enough about ut their level of service. Everyone was so kind, helpful, and checked on us often but not so much you felt uncomfortable. Our new go to when we are on the west side for sure! read more

I came in for lunch during the soft opening. I ordered the Chicken Spring Roll vermicelli noodles and was offered to have the roll fresh or fried. I chose fresh. There was only one other customer in the restaurant. She was very nice and brought me a fried spring roll to try while I waited. The cost for my order with tax was over $11. I don't go out for lunch often and when I do, save half for dinner. My order was tiny. The container was a standard size takeout container with only one section filled with food, which was rice noodles. There were three tiny spring rolls, fried, not fresh, on top, a lettuce leaf, and a couple of matchstick carrots, along with a container of dressing. It was delicious. It wasn't what I ordered and I couldn't find any chicken in the spring rolls. I will try the pho on a return visit, but won't try this dish again due to the cost and small size, plus no protein as advertised. read more

Tried this place for the first time and did take out. This was the worst Vietnamese food I've had! We ordered pho and the broth was tasteless. We also ordered the caramel used pork noodle bowl and the dressing was so watered down and had no flavor. Their portions are very small and they are waaaay over priced. I've eaten Pho a few times other places, not impressed. Went in to thuys pho during soft opening and the pho was delicious. They are very friendly and helpful with the menu. I LOVE their pho broth. I'm hooked on it. Their regular pho bowl is huge and came with a load of noodles and meat/chicken. I'll be back! I'm now a Pho fan :) read more

Me and my family eat at this restaurant for lunch and our experience was superb. Even though they are short staffed at the time of writing this review our service was fast and polite. In my opinion most Vietnamese restaurants tend to look the same however Thuy's looks very nice it has its own sence of style that gives it have a very royal feeling that I enjoyed. My family said they enjoyed their meals immensely, I had the Pork Belly Bahn Mi Sandwich and an order of Cajun Fries which was incredible good. The fries were very good and they aren't like any other kind of Cajun Fries I ever had, They had a great kick to them I do wish they had a bit more time to cook but that's a small problem. The Pork Banh Mi however? Was perfect. The pork was crunchy and juicy, The carrots & lettuce added a crunch to it that was very satisfying, The bread was soft and held the thing together and the sauce added a sweetness to it that brought the whole thing together. I had an amazing time here and I can recommend it to anyone who is looking for some great Vietnamese food in the West Olimpia area. I made a Yelp account just to gush about this place it is awesome. I stopped in Saturday to try it out. Order at counter because that is how they remodeled it, pay, sit, and they bring food. Very simple. I stopped in today, now you go to counter, pick up menu, sit, wait for them to take your order, wait for your food, then back to counter to pay. Very confusing, especially how they remodeled the place. Now, for the food and stuff. Broth, probably top 3 in Oly, I think. Brisket tasty, but too thick of pieces. The selection is less than i am used to. No fatty flank, tripe, tendon. Have oxtail, big plus in my book. Prices are good but menu a little confusing. Some pho says "regular size", some "large". Does that mean you can't get a large of the other? No chili oil, bummer. Soda machine broke already. Employees are very nice and attentive. Atmosphere nice. I will go back and try other menu items. Good selection of banh mi. Food was slow to get compared to other photo restaurants. I think staff is trying to hard to accomodate to look good and it makes them look lost and confused, instead they should stick with there original plan, order are counter. read more
