I have had Water Tank Bakery in Burlington bookmarked for awhile and admit being late to the party, so to speak. But this time coming back south from Edison, Bow, Bellingham and Sedro Wooley, I made it a point to visit on 3/28/26. It is located by the Port of Skagit County, with the regional airport, other commercial businesses, and serendipitously next door to Cairnspring Mills. Look for the Fresh Bread signage starting at Higgins Airport Way that shortly leads you to the retail window. The daily offerings are listed on the business website, as well as, the magnet board located below the retail window. After a brief wait, it was my turn and enjoyed my brief conversation with the founder, owner, and head artisan baker, Rachael Grace Sobczak. She mentioned that majority of the baked goods are from a sourdough bread starter and uses local flours from Cairnspring Mills (next door) and Chimacum Valley Grainery (Olympic Peninsula). From the website, it was great to learn that she baked for a decade at Breadfarm in Edison. She was also involved in her graduate studies as a dietician and concurrently with other community projects. A pandemic pivot started the journey to create the successful Water Tank Bakery. I purchased a four pack of roasted garlic parmesan rolls, a four pack of coffee toffee chocolate sandwich cookies, and two lemon raspberry cream cheese polish buns. All of these were outstanding! Water Tank Bakery baked goods are also available via other retailers (listed on website) and at the year round University District Farmers Market in Seattle on Saturdays 9am to 2pm. I was told, however, there's better availability and variety visiting the retail window in Burlington. Worthy detour!

Many locations popped up and I decided to stop by to try it. They have a rotating weekly selection of cookies and I decided to get the classic or basic chocolate chip cookie. I ordered two and they came in individual boxes. That was great as I intended to give one to a friend. I tried one and was surprised to find the cookie slightly warm. It was soft and easy to pinch off a corner and the chocolate chip was melty! I loved it! I had the remainder the next day. I reheated in the microwave for 20 seconds and it recreated the melty warm chocolate chip. Awesome! Now I know I'll have to pop in here next time I'm in the area. Huge parking lot out front. Right by I-5, making it easy to just stop and grab and go.

There's someone who looks like the manager possibly who doesn't have her hair up at all and she looks to be in a bad mood. The workers have no sense of urgency. I am not pressed for time at all. But I just find it a little strange how there was a lot of people but everyone was acting nonchalant and again with 0 sense of urgency. There was this one girl rolling dough and she looked so tired and was taking so long to just roll dough. It was frustrating how slow she was moving. I don't know the energy was not there.
