I savor my Skagit - Whatcom counties road trips year round where I visit my faves, as well as, explore and add other local businesses. I have had Water Tank Bakery in Burlington bookmarked for awhile and admit being late to the party, so to speak. But this time coming back south from Edison, Bow, Bellingham and Sedro Wooley, I made it a point to visit on 3/28/26. It is located by the Port of Skagit County, with the regional airport, other commercial businesses, and serendipitously next door to Cairnspring Mills. Look for the Fresh Bread signage starting at Higgins Airport Way that shortly leads you to the retail window. The daily offerings are listed on the business website, as well as, the magnet board located below the retail window. After a brief wait, it was my turn and enjoyed my brief conversation with the founder, owner, and head artisan baker, Rachael Grace Sobczak. She mentioned that majority of the baked goods are from a sourdough bread starter and uses local flours from Cairnspring Mills (next door) and Chimacum Valley Grainery (Olympic Peninsula). From the website, it was great to learn that she baked for a decade at Breadfarm in Edison. She was also involved in her graduate studies as a dietician and concurrently with other community projects. A pandemic pivot started the journey to create the successful Water Tank Bakery. I purchased a four pack of roasted garlic parmesan rolls, a four pack of coffee toffee chocolate sandwich cookies, and two lemon raspberry cream cheese polish buns. All of these were outstanding! Water Tank Bakery baked goods are also available via other retailers (listed on website) and at the year round University District Farmers Market in Seattle on Saturdays 9am to 2pm. I was told, however, there's better availability and variety visiting the retail window in Burlington. Worthy detour! read more

A bit off the beaten path, but nice fresh bakery goods. No donuts to speak of. Order from the window, just a couple of racks of breads, rolls, a few cookies, and very few pastries. Nice lady working there. Close to the airport. read more

friendly staff. A bit on the spendy side, but very much on the very good side. wish the raisin/walnut bread had a bit more raisins and walnuts in it, but still a very good Bread. The rye bread is dense and delicious, ginger molasses spice cookies are very good if not a bit small for the price. I'll be back for special occasions. read more

I just love businesses like this. Bootstrappy, hard-working entrepreneurs working out of commercial spaces, making what they love, sharing their talent and passion, and selling local on the strength of their reputation. They sell their breads, cookies, pastries and other items (they do croutons for holiday stuffings and salads, for instance) out of a service window at their factory storefront. Yes, this means you stand in a line outside and wait your turn, and there is usually a line, rain or shine. My wife and I joke about it, referencing Jack Nicholson's line from the film "As Good As It Gets": "...we're not crazy. We're just people that like warm rolls..." And it's worth it. Fresh, sometimes still-warm (get there early) breads and confections, perfect shortbreads, brioche cinnamon buns, and those don't-miss "Bee-Sting Bars" - a layered bar of shortbread, honey, almond and coconut, perfect with coffee and very cravable. As with so many goods and services these days, the prices may raise an eyebrow or two...but it makes all the difference when the product is head-and-shoulders superior to anything one can get at a grocery. Buying from Water Tank Bakery exemplifies why being a locavore is so satisfying; finding purveyors of superior quality, within my community, and knowing my money stays local... just makes this exceptional food taste even better! Buying and eating local foods keeps small-town, rural areas from slipping into that fast-food strip-mall anonymity we see so often; a slow, bland, banal cancer that eats away at vibrant, creative, wholesome and vital communities like Skagit Valley. some of my favorite baked goods and bread in the skagit valley! and if you live south of there, pro tip is that they come to the u district farmers markets on saturdays in seattle so you can get your fix if your schedule doesn't allow for a drive up to water tank road. the roasted onion loaf is one of my favorites but i honestly don't think you can go wrong with any of their products. if i lived closer i'd probably get some things for the thanksgiving table and i'd certainly be buying from here with more regularity. as it is, i try to buy their stuff as often as possible. their walk up window near the skagit regional airport in burlington is easy enough if you're anywhere in the vicinity and the skagit coop also stocks their breads. today i was swayed by a piece of almond coffee cake as my impulse purchase along with the bread i went there for. it didn't disappoint and i saved half for tmrw since it was pretty rich. if you want to buy local and support a small business this is a great one in my opinion! read more

Purchased two loaves while they were selling baked goods at Gordon Skagit Pumpkin Farm. Bought the Honey Oat and Roasted Onion loaves. Both of them were super tasty even days later. We savored each slice. My favorite was the Roasted Onion heated up with some plain cream cheese- DELISH!! We enjoy supporting local small businesses and will gladly purchase from here again. Each loaf was $10 and different shape for each. There's nothing like biting into a fluffy fresh loaf of bread. We stored ours on the paper bags then placed them in plastic bags in our fridge to help maintain freshness...and boy did they stay fresh!! I couldn't get pictures before everyone dug in to the loaves. read more

Stumbled upon this place and I am very glad I did! They have an amazing brioche cinnamon roll that I will likely go back every weekend for, it was that good. We also enjoyed their fresh sliced honey oat loaf and roasted garlic parmesan rolls. The staff is also kind and knowledgeable and they get their flour from a local mill. I have picked up bread here from time to time at the Farmers Market in Seattle's University District. It is always delicious and I love how nerdy the baker's husband is about their wares "this one has a really tight crumb." Yesterday I tried to pick up a loaf of their Skagit Wheat at the farmers market but only had my phone on me and their tap to pay equipment wasn't working. They gave me a loaf anyway and told me to pay next time. In a strange coincidence I saw them the very next day at Gordon's Skagit Farm in Mount Vernon. This time I had my credit card and he wouldn't accept payment for the loaf he had given me yesterday, but would allow me to buy something else which I happily did and they have a customer for life now. read more

Watertank Bakery is a staple in my household. The bread is so fresh and perfect with a fried egg on top. My favorite is the Onion loaf. The staff is very knowledgeable and friendly. They sure know their stuff! There are many trails around the bakery that I have gotten lost on at least 3 times now. read more
