Jason, the Manager, understood my concerns and accommodated my requests without hesitation. The last thing any customer wants is to splurge on a prime piece of seafood only to receive an unscaled, ammonia smelly disappointment. Sadly, I've had that unpleasant experience while dining at a high end restaurant. For Shame! Another unpleasantry, encountering a fish monger at a supermarket who states they're not allowed to scale fish. Oh really?! Sounds more like lazy to me. Back to the positives. Though busy, Jason took the time to go to the back and pull out half a body of freshly delivered Chilean Sea Bass and masterfully scaled and portioned out my request with ease. Fast forward a couple of weeks later, I prepared this still fresh, buttery, umami filled Sea Bass, fulfilling our desire for an ideal meal.
