When I've ordered from El Chiapas Tacos in the past, it was an orange colored food truck. This time around, it was a blue colored one with a focus on seafood. I've grown to really like the carnitas tacos at El Chiapas and fortunately this blue colored truck still sold those. I got a plate of three carnitas tacos with beans and rice. I topped them with cilantro and onions, which you get at their self serve station. The tacos were delicious. The service was nice and quick as usual. I was a little disappointed with my experience this time around. They didn't have the pina agua fresca that I usually order with my food. Also, the truck was parked right in front of the car wash (it used to be parked in front of the gas station). The car wash was so noisy that it was difficult to order the food. That being said, I'll continue to come back to this place when I get a craving for good carnitas tacos. Where they can park is probably out of their control.

Their al pastor is hella good, sliced off of a trompo. Carne asada are grilled to perfection and not "steamed" from the massive amount of meat on the flat grill. Their burritos and alambre are huge. I'm a big fan of birria and I was torn between trying out their birria ramen or their quesabirrias. The guy who was working the truck said they were both great but it was the quesabirrias that is their best seller. With each taco being only $4, it seemed quite the deal! I chose to go with the quesabirrias and I am really glad I did. These tacos were made fresh upon order. They came out hot and crisp! I loved the melted cheese and the tender beef inside. I found that they were actually quite generous with the beef. It was very fulfilling and I was quite happy! I definitely want to also get the Birria ramen one day. Their Garnachas is also something I'd like to try!

On top of that, when I went to pick up the food, I couldn't help but notice that the cooking area looked unsanitary. The space between the glass and the grill was visibly dirty, which made me uncomfortable about how the food was being handled and prepared. Overall, the experience left a bad impression. Between the cleanliness concerns and how we felt afterward, I would not be coming back again.
