Food is very good. They give you beans with your chips and salsa which we love. Service is hit or miss so be patient. Prices are reasonable.

Usually pretty decent to good. But some dishes aren't great. I've been five or six times, as some of the food there is great. The pros: Service is usually pretty good and attentive. Anything with the shredded beef is delicious (taco salad, burrito, chimichanga) and the rellenos are great too. The cons: the flour tortillas aren't great, and I don't believe they're homemade, which is surprising, they have that store bought shelf stable taste to them. The beef fajitas are awful. The meat looked and tasted like it was steamed or boiled. Had absolutely no grill or color to it. The seasoning on them wasn't great either. Overall not a bad place to grab a bite. read more

Worse service! We were seated, but the waitress just ignored us and would not come to our table for service. She passed us 3 times and would not even acknowledge that we were there, we have never been treated in such a manner. I will never return there again! The floors were dirty, plus we were seated at a table and the seated were soiled and not cleaned ! They really don't deserve one star, but they did give us stale chips, what's disappointment. I was impressed with the very clean modern atmosphere with great service and food! They have this super hot salsa that's so good you have to ask for it though. Food was very flavorful and seasoned real nice. Lots of room in here with a large bar off to the side with beautiful views of the mountains. I got the shrimp fajitas and the shrimp were SO overcooked. The rest was pretty good but overcooked shrimp kind of ruins it.

Tried to eat lunch here today with my wife. Once walked to our table we were hit with an unbearable sewer smell. Either they have a serious plumbing issue or one of the guest was extremely sick. Well....... I had very high hopes for this place. I went for girls night drinks and since I don't care for margaritas anymore I ordered some other cocktails. Big sigh! I ended up sending both back. The "sex on the beach" was not nice at all. The raspberry liquor and the midori melon do not compliment each other. And the drink itself is a dirty sand color. Not bright but dull. And then I ordered the "zombie". Rum and orange juice. Sounds good, right? Wrong! Slightly too strong with not care for sweet or smooth mouth feel at all. So I ended up drinking water because their beer selection in not extensive. I did not try any menu items but by the mere looks of the plates, it looked very good. I did partake in the chips and salsa and that was very good! Wonderful flavor with a mild kick of spice. Our waitress was very sweet but she was very busy with her tables so was not attentive. As you can see, there are mixed emotions I have with this restaurant. I would go back for a second chance and not get anything to drink. We placed a take out order. We ordered shredded beef enchiladas, Chile Relleno, and flan. When I got home I realized they didn't give us the flan and had to go back. The enchiladas and relleno were excellent. But the flan had whipped cream and a strawberry sauce on it. It was not edible. I drove back to the restaurant a second time to get it because I had paid for it. I wouldn't have bothered if I had known how bad it was. read more

Our new favorite Mexican restaurant! The location is great for Northern Springs folks. The restaurant is bright and clean with friendly servers. The menu is extensive. It took us a long time to decide what to try because there is so many options. We've gone several times and everything is always good. Try the skirt steak with bacon wrapped shrimp plate. How is this place not packed right now? This is some of the very best Mexican food I have eaten since moving to Colorado. I am having the chicken a la crema and it is spectacular - the chicken is moist and tender, the mushrooms perfectly done, and the cream sauce is decadent! I also am having the Cadillac Margarita, blended, and it's both refreshing and perfectly potent. The food we ordered came out quickly and served by some of the most attentive and genuinely kind staff! They have a great menu with lots to choose from. The food is good. The staff are super friendly and accommodating, but I prefer Pueblo Viejo. They're food is much better to me. I think Vaqueros is more contemporary and appealing if you live in that area. Vaqueros is also larger and newer, but if you want more authentic, and don't mind driving a little south I'd go to Pueblo Viejo. read more

I've been to Vaqueros four times, with me ordering the fajita burrito twice (my favorite so far). The food is fine to me. Me and my family go on Sunday evenings, which are busy but with fast service. There is always music playing with happy chatter to make it a festive atmosphere. read more
