The Curry Laksa arrived first, a bright yellow curry filled with broccoli, cauliflower, bok choy, vegan shrimp, kale noodles, mushrooms, and coconut milk. On a wet night, it looked like exactly the kind of bowl you want waiting for you. The broth offered a mild, familiar comfort, although it leaned watery and left the dish feeling more like soup with noodles than a proper laksa. The broccoli and cauliflower had that unmistakable frozen texture, taking away some of the freshness you hope for from such a vegetable heavy bowl. It wasn't bad, but it felt muted. A dish that seemed to promise plenty of character on arrival never quite found its spark. The smoked eggplant, however, was another story. An entire eggplant arrived beautifully tender, smoky and rich, almost like a prized cigar translated into food. It came with Impossible meat, peanuts, salino, and dried shallot, creating a combination of textures that kept each bite interesting. The menu mentioned a pineapple sauce, but if it was there, it had mastered the art of disappearing. Whatever was on the plate, the eggplant itself was the star. Then came the Hestia Saffron Curry, and suddenly the evening found its rhythm. Thick, fragrant, and unapologetically flavourful, this was the kind of curry that doesn't simply fill your stomach. It settles somewhere deeper. The saffron shavings melted into the golden sauce, lending it a warm, aromatic sweetness, while the sticky rice arrived in its own tiny pot, almost ceremonially.
