Pro: I've been to this location of What The Pho several times. The food is good. Broth is ok - not the best pho place in town but they have a huge variety of selections on the menu. Plus they are more than happy to customize your meal if it isn't on the already extensive menu. I love that they have taro fries but sometimes come out a bit greasy. Con: I called these guys to place a takeout order and it was 30 minutes before the doors closed. They claimed their cook had already gone home and they couldn't take my order. I've worked in a restaurant before and while I get that after a long day you want to go home, if your hours say you're open until 10PM, you should stay open until 10PM - otherwise, post a closing time of 9:30PM. What the Pho? This is what I have been wondering myself! We were in the area visiting Mud Bay for some animal spoilings and decided to stop in to see what all the fuss was about. I was surprised when we walked in to find such modern decor but it was a comfortable ambiance. Plus they had a full bar and served Mac N Jacks! They were in the process of cleaning up a booth so sat us at a table until it was completed of which I thought was a nice. Once we were seated in our very comfortable booth, we paroused through the menu and tried to make sense of the choices. Our very sweet and patient server took the time to explain what was really more simple than it seemed. Upon her suggestion, we started with the marinated pork spring rolls and peanut sauce-can we say party in the mouth?! So fresh and yummy with a spike of fresh basil. Then we shared the Chicken Pho and a Beef, Basil, Chili Wok Stir Fry. Amazing! Now I understand! I love food that includes accoutrimants such as bean sprouts, fresh basil, lime and jalapenos. It's so empowering to be able to build a meal to your own taste! The broth was simple and savory, the noodles were clean and not sticky, the chicken was obviously shredded right off the bone. The Stir Fry was equally good, tender thin slices of beef, tons of fresh vegetables and basil speckled with lovely red spicy bits. The best part, $36, including tip, spent after all was said and done! I realize in my Pho ignorance, this may be more than what some places charge, however the ambiance and bar options that I apparently also paid for made for a great first date with my new friend, Pho! read more

I will NEVER come to the Bothell location again after today! My friends and I used to frequently eat here but over the past few months the service and quality has gone WAY down hill. The food has always been mediocre at best, and the service fine. But within the past 6 months I found a fly in my Pho bowl showed the staff (including the manager) and they just told me sorry. Today, my friend found a GIANT PIECE OF PAPER (see photo I posted) in her Pho bowl. It was insane, we told the staff who barely acknowledged the gross factor. Never apologized once to her nor did they remove the bowl from the table. We had to ask if they still planned on charging her, which he said yes "There is nothing I can do because my manager is not here right now." We asked him when his manager is coming in and he said (I kid you not) "I couldn't tell you". WHAT?! We waited about 5 more minutes then my other friend walked up to another waitress with pretty eyes (who was the only one who seemed like she cared) and told her that she can take my friends check off the bill because she is not paying. And how we couldn't wait for the manager anymore. She then let us know that the older woman behind the bar WAS the manager. So she was there the entire time!!! I just cannot get over how badly my friend was treated in this whole experience. I am never coming back here ever again and unless you want to find things in your food I suggest you dine elsewhere as well. read more

So YAY for What the Pho? filling a large, bowl-shaped void. The interior is sleek and they have a bar. I'm not entirely sure what to make of that, but for those of you who've ever thought "I totally want a rum and coke with my pho", this might be the spot for you to try out. We were seated quickly and we ordered spring rolls and two bowls of round eye steak pho. Our waitress was less than enthused to be there. (At least fake it.) The spring rolls were good and once we'd finished, hilariously, the waitress came by and said "how were the spring rolls?" and she grabbed the plate and zipped away before we could answer. So the service is totally lacking. (Though she was all smiles and friendly when the check was brought to us...) The pho itself is a solid bowl of pho - it's nothing special. The steak is a bit thicker than I prefer, but that's a personal preference. Maybe I stereotype Vietnamese restaurants too much... because when I walked in, I thought I was warped to a small Thai restaurant, instead. There's a full bar, which is the first thing you see, getting in, though I didn't see anybody taking advantage of this. (Really, though, I can't imagine ordering any alcohol to go with my pho. Can you imagine eating pho while drinking a martini? Which, by the way, is on the menu, opposite page to the pho.) The service was pretty quick, and it seems as if they usually take a good survey of all their customers. They almost forgot one of our orders, but it was fixed in a timely manner. Although Bothell's newest Pho place cooks up a pretty tasty bowl of soup, I can't justify spending that much money on something that I'm used to paying a mere 5 bucks for. Ug - first of all the decor is way too sleek to be a Pho house. And DARK. I wondered what they didn't want me to see. . .then quickly found out. My basil was slimy and bruised. When we asked for a replacement, the waitress (who was way too white to serve pho, seriously, I'm half Asian so I'm only partly being funny) just looked at us blankly until we held up the limp offending basil and she said "oh" like she was confused as to what was wrong. The replacement basil was better, but hardly fresh. She also didn't know what fish sauce was when I asked if they had it. Okay, so maybe she doesn't work there anymore, but I'm hardly charmed. The pho was okay - I wish I could have seen it better. . .my husband liked it better than I did, but I introduced him to pho in the first place so what does he know? Ha ha! The bar, while very nice, was enormous and distracting and seemed to provide what little light there was in there. I agree that it's a bit weird to think of drinking while eating pho. Even more disturbing was the lack of Asian people eating there. I'll repeat the adage for those who don't know - the sign of any good Asian food restaurant can be measured by how many Asian people are actually eating there. And I was the most Asian person there at the time. Seems perhaps that they too prefer Than Brothers or Bamboo House pho. . . To top it off, the bowls were much smaller than expected for the price. I absolutely love What the Pho! in Bothell. I haven't been to the Bellevue location, so I don't know how it compares. My boyfriend and I visited What the Pho! multiple times when we first moved due to renovations. My boyfriend is not a fan of Asian food, unless it is fried and covered in a sweet sauce and sitting in the Safeway or Top Foods prepared food area. I was surprised after our first visit....I thought it would be another restaurant that I would only be able to visit with my girlfriends. But...HE LOVED IT! The bar is excellent, the food is fresh and tasty, and the staff is super friendly. What the Pho! participated in the MOViN 92.5 "Half Price Offers" program, so I was able to get a couple $20 gift certificates for 1/2 price. I'll post when they do this promotion again. read more

Ordered out here on a Sunday evening with some friends. The pho was fine. It was also overpriced. What WASN'T fine, was the order correctness. We ordered over the phone for pick-up, and every time we said an item the person on the other end kept trying to give us our total, and the order wasn't done. Then we made sure to have her read it back to us, which she did and it was correct. When we got the food back to our house, an entire order of pho was missing and there was another entree substituted for it. When we called them up to tell them, they told us to come back to get the pho. My buddy went back to get it and they charged him for the pho that they messed up! What's more the lady said "Oh the old owner didn't change the website, so the numbers are different. Don't order from the website." And she gave him a paper menu. I'm sorry, but YOUR website is YOUR issue. WE didn't mess anything up. Here's a little business 101: 1. If you mess up, don't blame the customer. 2. Everything is on the web now. Make sure your web presence reflects your business accurately. 3. If you mess up, you don't charge the customer for your mistake! Especially if they had to make two trips because you messed up! If you want to cultivate a customer base which wants to come back, take responsibility and cover the cost. Everyone makes mistakes, it's a part of life. I come from Houston, home to a huge Vietnamese population and some of the best pho anywhere. As my first pho experience in the Seattle area, What the Pho was utterly disappointing. The main problem is that the food is just not authentic. The pho broth was much too cloyingly sweet, as was the peanut sauce for the spring roll appetizers. The rolls themselves were missing ingredients like basil and mint, making them under seasoned and not flavorful. The soup came out lukewarm, and the noodles were overcooked and soggy. The service was fine, seated and ordered without much fuss. The waitstaff can't be blamed for the failings of the kitchen. I hope downtown Seattle will have better offerings than this Americanized, dreadful place. I feel like the negative reviewers must be eating at a different restaurant! I am so glad What the Pho is down the hill from me. Maybe they have a Westernized name, and maybe they're a chain restaurant, but they have the best pho I've had, and I used to live in the Central District. People keep talking about Pho Thanh, but I was really underwhelmed and never went back once I found a large slice of plastic in my pho. That being said, I honestly believe these guys make the best pho. The broth is flavorful, the meat always tender (I get the brisket, soft tendon and meat balls), and the bean sprouts, basil and limes always fresh. Great Vietnamese casual family restaurant. The service is great and friendly. Dishes offer are the ones you find in the typical pho house. Pho is always excellent. "What the pho?" is exactly what I thought after eating here. We walked in on a Sunday around lunch time after church, on a typical PNW rainy day. You'd expect more than one server on staff, right? Nope. Poor girl (who was a great server and the only reason I even give this place 2 stars) had to serve and bus the entire place by herself. We waited at the front door to be seated and the rest of the staff (bartender, back kitchen) all looked our way, but did nothing to step in and help the lone server. Been coming here for Pho and Banh mis since the place opened, and never once been disappointed. The Pho broth always tastes just right, the meat fresh and in generous portions, and the noodles, just a little more than enough. I can never have more than a bowl of Pho, because it is really filling. I am slowly trying out one by one call their Phos and still haven't come across one I didn't like! My husband and kids love their Banh Mi sandwiches, especially the one with pork belly filling, and the Bubble Teas. I really recommend the Cantaloupe Bubble tea with jelly (as opposed the the rather chewy tapioca pearls). Their sandwiches come with Taro Fries, fresh and hot. The only thing I wish they would change is maybe hire more staff because we have twice seen that there is just one server running around and doing her best to serve everyone eating there. The service could be a lot better with more staff attending to the customers. Other than that, great place, good food, good ambience and a well stocked bar. Recommended! read more

I entered the facility a little after 1 pm. The place had a few customers, but it looked like the waitress was still trying to recover from the lunch rush. We quickly ordered 2 Pho's and waited patiently. A small bowl of Pho is $6.35 and a large is $7.35.The waitress promptly brought our waters approximately 47 seconds after our order. Our Pho was served approximately 4 minutes and 27 seconds later. The rice noodles were fresh and were not sticky within my broth. Which was a pleasant surprise. The fragrance from my broth was a little stronger than your average Pho, however we ate with no complaints. The waitress came back and asked if everything was ok and left us with a warm smile. The food was average, the waitress had a great smile, and the facility was nice. Considering that this is Canyon Park, the place isn't too bad. It's a toss up between Bamboo Pho and What the Pho? The ambience of the place is a little weird - like it's sort of trying to be swanky/club-ish even though it's in a Bothell strip mall. Me and my boyfriend decided on pho so we didn't have to cook anything. Long story short the food was really good. So thumbs up on that. I got a number 15 with meatballs. And they fill it with noodles and meat so no complaints there. Although I'd have to say I didn't quit like waiting at the front door for 5 mins they looked over a couple times and finally someone came to help me . Horrible service the waiters were rushing everything since there was only two working. Not to mention when I got my order they forgot the sprouts and mint that comes with the pho. You can go across the street to Bonefish and pay the same price for some of their entrees, which is nuts, because again, this is a pho place. Usually chains make food more bland, and also cheaper in the process. This place only does the former. The night my fiancé and I dined at this location, it was an hour before closing, yet it was empty. The girls working there blasted the music and made it obvious that they wanted to get out of there. After giving them some "credit" over this past weekend (with 3 stars) when my family went there for a "quick" lunch despite having to WAIT a while for someone to come to us to take our order, and then WAIT again for them to correct the order by adding 2 more #20's, when we had originally ordered 3 of them (since the waitress apparently didn't have her ears open to hear what we were saying....) **ADVICE!!! check your bank statements, which I did. Apparently this place needs to "charge" more for the tip, even though I had put a decent tip amount on the receipt bill when we paid our bill that day, regardless of the fact that I wanted to give less, but I used to work in the restaurant industry and do understand....HOWEVER, I don't appreciate how this place actually "added" more on "their" final bill. Apparently they think they need the "extra" money to pay for slow service and non-common sense servers??? The jury seems to be out on this place. My experience: "...definitely targeted toward the Caucasian sector." This reviewer is accurate- this is not a typical Pho place. The place looks nice, with a full bar, a good amount of seating, and I found it to be very clean (albeit, it was dark, inside and outside). We were seated promptly. I ordered the briscuit and steak bowl and my ladyfriend got meatballs. I was quite the hungry bear, so we got some spring rolls, too. We only waited a little while (10 mins?) for our appetizer (mindset: we had absolutely nothing else to do at 10 o' clock and only wanted to eat) but for some reason, our server and a guy (manager?) kept coming over to apologize, reminding us our food would be right out. I was like "Alright? No big deal..you're okay". The appetizer came and it was fine. However, our waitress told us it would be a freebie due to (their) perceived delay in getting it to us. Awesome! Our Pho soon followed and it hit the spot. I thought it was pretty good (though I am a Caucasoid). I finished my partner's bowl too, also good. I felt the prices for both were fair. We were informed shortly thereafter that they had no bananas but that they would have someone go fetch some (from the Alberston's, no doubt) and- it would be on the house! The actual Pho is pretty good, but it's much less enjoyable when it is served at lukewarm temperature. We waited much longer than we're used to for our Pho, which is often served to us immediately at competing chains due to the fact that it's already made and sitting in the back. The broth tastes excellent, but the eye round steak is much larger than normal and in my opinion is too difficult to eat with standard bites. Our waitress was friendly, but forgot our forks when we asked for them, allowing our already lukewarm Pho to get even colder. Additionally, without a fork, we weren't able to split apart our meat, leaving it uncooked and reddish. :( Overall, due to relatively poor service and less than satisfactory Pho, I will not return. Not quite up to the standard of a lot of Pho places in town. Mostly, I was disappointed with the size of the "regular" size. It should be labeled "small". I finished it off very quickly.
