I want to preface this review by saying I understand the challenges of starting a new business. ANYONE who is able to start a locally-owned business should be applauded and supported. That said, my friends and I were really disappointed with our first experience at Wire Mill BBQ last night. First, the business does not have a website, but a Facebook presence. Unless you spell out "Wire Mill Saloon and Barbeque" exactly in the Facebook search, you won't find them. I did so by doing a Google search. This is a Facebook issue more than theirs, but maybe they should make it easier to find information about them online (as most consumers expect these days).
Now, about our experience. We showed up a little after 7PM on a Saturday night (party of four), and were greeted enthusiastically by several employees. We waited for approximately 15 minutes or so for a booth. The place is pretty small -- two high top tables near the bar, four booths, and a couple of smaller tables near the wall.
Up to that point, the service was friendly and accommodating. We ordered drinks and it took more than 10 minutes for one friend to get his beer from the bar. We were told right away that they had run out of brisket and sausage. Three of us ordered the pulled pork platter and the other got chicken and pork. It took a very, very long time to get the entrees (at least a half hour). In that time, our drinks were empty and even though all of the servers walked past our table multiple times, no offer for refills was made. Also, the nail in the coffin was the basket of cornbread and biscuits everyone receives. I was raised in the south and am continually disappointed in what constitutes both of these time-honored breads here in the north. What came to our table was quite honestly the worst cornbread and biscuits I've ever had in 34 years of my life. The cornbread was razor thin and burnt to a crisp and the "biscuit" was actually an extremely dry "muffin" with a piece of bacon & cheese on the top. No butter is served with the bread, and it was just NOT edible. When our food finally came, the experience was already tainted. The pork was decent, but needed lots of sauce. The sides were not that great (among the group, we had baked beans, coleslaw, mac & cheese, and curly fries). One friend mentioned the fries had ZERO flavor...nothing. She kept talking about it over and over, and I tasted one, and agreed. Not even salt helped.
One of the servers asked how everything was doing and I just had to be honest. It was that lackluster. She just smiled and asked if she could get anything else for us. A few minutes later, a woman who I assume was one of the owners, came by and asked the same. I gave her the candid feedback and she looked pretty crushed, commenting that we were the only customers who had anything negative to say in a week and a half of business. We were polite and never nasty in any way -- just being honest because I would think a new business owner would want to know these things.
She told us the entire check would be comped because they wanted us "to be happy and come back and give them another try." That is a CLASS ACT attempt at customer service, and even though our entire party insisted we pay for our entire meal (food and drinks), they refused, just asking we tip the server. We tried at least 2-3 times to pay, and were rebuffed. The original server asked that we come back during a week night or when they weren't as busy, but to please give them another chance. Honestly, not sure how that would change the taste of the food, but we all very much appreciated the "olive branch" given. We tipped her and then left.
Again, I know it's hard for a new "mom & pop" business, and I'm sure they'll get kinks worked out. It wasn't a good experience for us, but I do realize that we're in the minority according to the comments on their Facebook page. read more
