The prime rib was medium and I think it was a little brined, but the crust showed no signs of a rock salt encrusted bake so the outside was not browned. My friend had the scallops, they seemed to be poached or boiled in the butter garlic sauce and I think they were frozen scallops because of all the liquid in the dish, certainly the scallops never saw a flat top at all.
