    Do not buy bottles. We bought some, stored them properly in a cellar for 2 months, then were disappointed to find them rancid. Contacted the brewery, and got no response. Will just stick with on tap from now on. On tap beer is always wonderful, so we were quite upset the bottles were spoiled, and even more so by the lack of customer service when we tried to inform them.

    Just moved to Weaverville from Dallas and Zebulon has become a new fave. Intimate brewery space with a calm and neighborhood vibe. The Tokyo Style Gose is incredible. Dog friendly as well if you want to bring your pups.

    So I've been trying to visit Zebulon for about two years and the timing has never worked out until now. Sooo worth the wait and sooo worth the visit. Zebulon is a bit off the beaten path outside of Asheville in Weaverville. You'll find it on a back street/ alleyway just off Main Street. Plus their hours are 1-6 PM Saturday and Sunday only. Planning is involved. Zebulon is a nano brewery that focuses on Belgian and French Style Farmhouse Beers but they do have a little bit of everything. During Covid you can mostly get small and large tasters. What I tried: Mandarin Grisette, Mango Sour, Petite Framboze, Hazy Jane IPA - all of them were amazing. I also had a Pilsner (full pour for $5) that was so smooth and crushable - like a silky, golden liquid bale of hay. I bought a couple of cans of their I Heart Asheville Series Irish Stout which also was just fantastically executed - probably the best stout I've tried in years. One of the owners was bartending and explained that their hours are so short because most of the time they're using the tasting space for brewing. Makes total sense. Oh and their shirts and other swag are just killer artistic. Love, love, love this place!

    Located of main street along the alley behind Wel-Bred bakery there is not much parking near the entrance. Nothing is marked, so you just kind of find a place. The main parking would be in a lot about a half block away. Handicapped access is possible, but not necessarily easy. Inside has seating for maybe 20 around upended bourbon barrels and a few at the bar. It's inside what may have been a repair facility as they have high bay doors and an industrial decor. The brewing and storage equipment is readily visible. In fact, the aging kegs are right next to the seating area. While all this is fine, you go here for the beer. You will find styles from history and a vivid imagination. If you have any interest in the history of beer and how the styles have evolved, this is your place. They use locally sourced ingredients, including items foraged from the forest. What is on tap changes often, and many recipes are made in limited amounts, so you need to be quick to get a taste. Their hours are limited, so check the site before you head over. It's always worth the trip.

    Before I ever made my first trip to Asheville, I had heard about this brewery. I had heard through word of mouth of a brewery outside of the downtown Asheville contingent in a small, little town -- I discovered later was in Weaverville. And this brewery had a taproom only opened two days a week from 1 PM to 6 PM. And if you were able to find and patronize this brewery at the given time, you would have beers that few have had before that would tickle your mind and behind. Zebulon Artisan Ales lives up to the hype; a nano brewery that produces killer Belgian-style and farmhouse ales. If you have a car, or willing to Uber it, you can make your way up I-26 north until you reach the exit for Weaverville; making your way east to the small downtown area where behind the downtown strip next to a laundromat is an old firehouse building -- the home of glorious Zebulon. Unlike most breweries in the area, Zebulon serves primarily as a production facility to brew and bottle, with only using Fridays and Saturdays to open their little bar area to the public. Being only available to frequent on these does create a demand that is worth every penny. The brewery offers small pours and flights in addition to larger pours for the sake of human goodness. Of course, they offer bottles to take home. The inventory available is limited, so if you're looking to grab something specifically, you need to follow their website and/or Facebook page. On this given day, I enjoyed a lager flight, which was quite magical, as well as some small pours -- such as their Ameuze three-year-old sour ale and Me and the Devil #2 Russian Imperial Stout. This brought me a sense of purity and pride from which I knew there would be no return from a state of banality. I sometimes wonder why I don't quit my job and open up a food stand in Weaverville so I can enjoy these beers constantly. Naturally, as my only stop there on that given weekend, I required bottles to bring back to my home in South Florida. So I bought two bottles of their L'Internationale Biere de Garde, one of their Ameuze, and one of their tart cherry Ameuze, which hadn't been announced for public purchase yet. My visit to the glorious Zebulon was magical on many levels. Therefore, as a beer connoisseur, I implore you to take time to visit this spot if you're in the area on the weekend. Only about ten minutes from downtown Asheville, visit Zebulon then walk around to the downtown strip and eat something. Hell, if you're hiking around Mount Mitchell or joyriding along the Blue Ridge Parkway, stop here. This place is a slice of fried gold... or a glass of golden goddesses guiding you to glory.

    If you consider yourself a beer connoisseur then Zebulon is the best brewery in Asheville (which is also not *in* Asheville). So, if you are planning your visit ('cause if you're a local you don't need to be told about Zebulon) and have a car then this is a must-visit. They are a small business just to the north of Asheville in downtown Weaverville brewing world-class beer with a focus on quality and unique of the core ingredients with an eye towards traditional recipes mostly lost to the masses. A quick look at Zebulon's most recent releases should paint a pretty vivid picture of just how wide a range of classic, yet creative styles are typically available: a crazy-drinkable Japanese citrus gose, a biscuit-malty imperial red ale, a grisette brewed with spruce tips, a few traditional Imperial Stouts with chocolate notes from roasted grain and not actual chocolate, a pair of blueberry sours right up their with the likes of anything out of Brussels, or you might be lucky enough to catch a keg from one of the six historic IPA recreations from their recent 'Evolution of IPA' series. But don't fret if someone in your party isn't into a farmhouse saison as they often will have one of their "stupid hazy IPA" releases on draft. And when they do decide to add a touch of adjuncts to a beer, like cocoa powder and local espresso beans you'll find the best Mocha Stout you've ever run across. So, if you are just chasing some hop burn in the latest DDHDIPA, a fruit puree smoothie sour, or wanting to drink an entire Halloween bag's worth of candy in a stout, then South Slope is where you want to be. But if you fancy tasting actual beer instead of adjuncts then you now know where to go. (And if you can't make it out of Asheville you can always find a few bottles of Zebulon's latest releases in a few of the local bottle shops.)

    For a new brewery (opened I believe for 2 weeks) Zebulon offers a solid up as one of the areas newest brewery. The owner and head brewer is formally of Green Man and has left to open a brewery of more experimental beers. They have no tables and chairs but a small bar area where you can sample each of their offerings for $2 a pour. I split a slight with a friend and while the smoked option did not wet my whistle there was not a bad brew in the remaining bunch. Personal favorites include the batch 2 (a farmhouse saison) and the Hoppy Farmhouse Saison (a complex but tasty combo of saison and ipa flavors). From talking with the owner, he had some interesting creations up his sleeve and will be a welcome addition to the local craft beer scene.

    Small space, smiling faces, and wild ales. Part of what I love about craft beer is the variety of beverages and experiences. Zebulon is the complete opposite end of the spectrum and other side of the Asheville area from Sierra Nevada. Intimate taproom with limited nearby street parking, Zebulon isn't geared for big crowds, but that is what makes it such a special find. Their ever-changing portfolio of wild ales offers something for everyone from blueberry sours to a light Mexican lager with a hint of heat. Zebulon was on my list to visit with trips out from Asheville for a while, but I hadn't been able to make it happen. At 4pm on a summer Friday we were entertained by two dogs gently rolling around the floor with each other and relaxed on the Adirondack chairs inside. $3 for a 6 oz pour is perfect to experience a few different pours, but the $1 for 2 oz pour option is nice for those wanting to do a more traditional sampler. I left wishing we had time to stay for a full pint of their porter. Do yourself a favor and make the 15 minute drive out of downtown Asheville next time you want a unique brewery experience. Well-behaved kids are certainly welcome and we made a stop at nearby Lake Louise Park before leaving Weaverville.
